			<description>On my quest to &amp;quot;Get Ready for Summer&amp;quot;, this is a recipe I created for a healthy but yummy lunch soup.  This can easily be converted to vegetarian by using vegetable broth in place of chicken broth.  
I use Recipe #302477 for my chicken stock, so there is already a hint of parsley, garlic, pepper, bay leaves, etc. in the broth. On reading  White Rose Child's review, I checked the source for this recipe and Kurma Dasa definitely specified 3 tablespoons of cumin.  Several of the ingredients in this recipe are way too hot for my taste preferences.  I often use cumin in recipes but nothing like 3 teaspoons let alone 3 tablespoons. The DH loves it and it's great to make on cold days and fine for big portions. SPECIAL NOTE: This soup can easily be modified. If you add more veggies and need more water to boil them, use 2 bouillon cubes to every cup of water you add and 2 Tablespoons of Flour to every cup of milk to thicken it up. 			<description>This recipe is so easy! Five ingredients!
*I haven't perfected it yet but here are a few things I've done so far:
*After adding the half-and-half, I add a little water mixed with skim milk in the empty half-and-half container and pour into the soup and then heat it. Or you can add a pint of water if you wish. This just dilutes the soup so that it isn't soo rich when using just the half-and-half.
*I use almost all of a 16 oz. jar of Cheese Whiz instead of 8 oz.
*Just a hint when grocery shopping, I found that Hormel's bacon bits no longer come in a glass jar but they now come in package form. 			<description>A few things to chop, but well worth the taste.  Fresh flavors, rich, but no cream. Herbs and fresh vegetables give this all it needs. The cheese and potatoes gives it a little creamy texture and then I love to finish it topped with a roasted tomato in bread crumbs.  It just seems to make it perfect.
A nice slice of fresh bread, any kind you have.  Some good bread sticks would be wonderful.
Now I like to make my own, but honestly I don't always have time.  A nice short cut ... Pillsbury bread sticks, but make a mix of melted butter, garlic, dried Italian seasoning and brush after you twist them up.  Then sprinkle on Parmesan cheese.  If you bake these on parchment paper or foil sprayed with Pam ... no clean up. 			<description>Thai Tom Yum soup is a delicious and aromatic Thai soup. I crave this soup ALL of the time. I have brought this to parties and people always rave about it.  Now friends always ask me to make it whenever we're getting together.  I made it completely from scratch for years.  A few years ago, I started using the paste and prefer it.  I find it to be more flavorful.
Tom Yum is distinctly known for it's hot and sour flavor.  My version maintains the distinct hotness and sourness of the traditional soup but it also is slightly sweet and spicy.  I make a side of jasmine rice and serve it with the soup.  
I noted the ingredients and amounts I use however, I encourage additions, deletions and alterations. I don't care for the mushrooms and I love broccoli which may come as a surprise to some. Broccoli is not a traditional component of this recipe but it's healthy and I find that it goes nicely with the broth.
