Broccoli Slaw Salad

This is a fantastic recipe that you will enjoy as well as your family and guests! This is perfect for a get together, pot lucks, and for no resson at all!
And...you don't have to tell them it's made with reduced fat mayonnaise!
If you can't find Craisins(dried cranberries) you can use regular raisins or the sweet golden raisins. Just soak them in warm water for a few minutes, so that they plump up. If you can't find the broccoli slaw already prepared and packaged up, you can shred chop /shred your own broccoli. This came from the inter-net, author unknown. -- posted by FLUFFSTER

Asian Broccoli Slaw

I like the packages of broccoli slaw to make lunch salads for the week. Looking for an Asian theme, this is a combination of a few recipes I found.
Broccoli Casserole

Here's a somewhat lightened-up version of a favorite. Since I prefer fresh veggies, I usually make this with fresh broccoli (1 large bunch-cut in small pieces and blanched). I often add a dash of garlic powder or vegetable seasoning to the mix for added flavour. NOTE: Prep time does not include thawing time for frozen broccoli or blanching time for fresh. -- posted by Sweet PQ?

Brown Bean and Broccoli Soup

From "Complete Candida Yeast Guidebook" by Jeanne Marie Martin. I have not made this yet, but am planning to soon. According to the book, this soup is easy to digest and high in calcium and protein. Preparation time does not include the 6-8 hours to soak the beans. The vegetable bouillon cubes and vegetable broth powder are recipes in the same book. I will post them eventually, but may try the recipe without them as first. They look labor and time intensive. -- posted by Jetta

Vegetable Lasagna

Use a mandolin slicer to get all the veggies paper thin; that way they'll melt into one another, and this whole mixture will become homogenized goodness.

Don't let the bechamel intimidate you. This French Mother Sauce is an alchemy of very simple ingredients that become a tremendous sauce through the proper application of heat. Just don't blast either the flour mixture, or the milk, with heat higher than medium, and you should be good. TAKE YOUR TIME, and don't pump up the heat to speed it up. Your patience will be rewarded with a luscious velvety sauce. -- posted by Adam Hayek - Chef #1348906

Chicken and Broccoli Stir-Fry (With Variations)

The recipe might look wordy and long but it is quite easy to follow and puts together rather quickly. You can use turkey breast in this if you like, or even shrimp. Just be aware the shrimp cooks faster than poultry and pull it off the heat just as it begins to curl. Tightly curled shrimp are really kind of tough and stringy. -- posted by Sue L

Broccoli Chicken Pizza

This was inspired by a broccoli cheese stuffed potato recipe I found, but it seemed to be a little labor intensive, so I decided it would work better as pizza. This is an original "sbera007" creation! We were serving 6 so we let our dough rise so it would spread into a jelly roll pan. If using a store bought dough, I would double the dough. Feel free to half the topping for 4 people and use a single store bought dough. Halving the recipe will alter the cooking time a little bit. (NOTE: I included the time for the dough the rise in the recipe time. This will be different if you use a different pizza crust). -- posted by sbera007

This quick, yummy, fairly healthy recipe came from the internet (can't remember the site) and I modified it to our families taste. My Italian hubby grew up on this (although I make it a tad differently). We eat it as a main dish, although you could easily eat it as a side for any kind of meat or fish. Adjust the broth to your preferences, my husband likes it soupy, so this version has a lot of broth. -- posted by hmtheLords

Spicy Peanut Thai Vegetable Salad

This is a very easy, amazingly tasty vegetable salad that takes minutes to make. The combination of all the greens, reds, orange and yellows in the vegetables make a wonderful presentation. It's the vinaigrette that brings all the veggies together. You can use any veggies you happen to have on hand; I think it would be great with tomatoes and lightly cooked asparagus. I made it at the last minute for a picnic with the veggies I had in my vegetable bin - everyone raved. I made it the next day for a work luncheon and had the same reviews. -- posted by Eight West

Vegetarian Delight (Stir-Fry)

this recipe comes from a cookbook i purchased while living in thailand, as recommended by a native. the key is cooking time for the vegetables. be sure they are not overcooked and too soft. always use fresh vegetables, as frozen always turn out soggy. this is a great side for any dish, not just thai food. to make a great spread, i cook this along with my cashew chicken and sweet & sour pork/chicken. -- posted by gnet

Sarasota's Broccoli, Zucchini and Potato Soup

A few things to chop, but well worth the taste. Fresh flavors, rich, but no cream. Herbs and fresh vegetables give this all it needs. The cheese and potatoes gives it a little creamy texture and then I love to finish it topped with a roasted tomato in bread crumbs. It just seems to make it perfect.
A nice slice of fresh bread, any kind you have. Some good bread sticks would be wonderful.
Now I like to make my own, but honestly I don't always have time. A nice short cut ... Pillsbury bread sticks, but make a mix of melted butter, garlic, dried Italian seasoning and brush after you twist them up. Then sprinkle on Parmesan cheese. If you bake these on parchment paper or foil sprayed with Pam ... no clean up. They are easy quick and simple. -- posted by SarasotaCook

Cabbage Salad

This cabbage salad is very flexible, and very tasty! It's one of those salads where you can't stay out of it! You can add just about any vegetable you'd like. There are many variations of this recipe. I got this version from a coworker. This recipe is vegetarian, but be sure you read the ingredients on your Ramen Noodles. Not all oriental-flavored noodles are vegetarian. For non-vegetarians, I've heard of adding chicken instead of the tofu.
This is the best veggie pizza I have ever had, and I do not like veggies but I will eat them just for this recipe. It is a two step process making your sauce and then cutting up all of your veggies for toppings.
Open Sesame Roast Chicken and Veggies

I came up with this recipe after reading about some different brines and basting liquids for turkey breast. The brine in this recipe makes the chicken super tender and the sesame oil mixture gives the meat and vegetables an absolutely mouthwatering flavor! It's amazing the flavor that the chicken, potatoes, onions and broccoli are able to absorb. The star of this dish may be the broccoli, though, which roasts just beautifully. -- posted by stonecoldcrazy

When I ran across Chef #55221's recipe for Recipe #155375, I thought it sounded like something my family would love. Being on a "lower fat" diet, there was no way I could make it as written though. I was really pleased with how well the recipe modified to meet my dietary needs.
This is a creation of mine that was created with the intention of adding some nutritional value to a very fattening recipe. The calories will change depending on what you add or take away from this recipe. It is a template for your own needs. I set the recipe up as something you can make for one; however, you can make a lot of potato wedges at once for more servings.

My Kids Finally Ate Broccoli!

Roasted broccoli with a few familiar ingredients is what it took, but they ate it, liked it, and asked for more. I wish the same success for all you moms out there; that's why I'm posting. Good luck! Note: You could certainly use fresh broccoli if you have it, but I usually have a frozen bag on hand and it works great. I usually prepare these and bake at same time something else is cooking (like roast chicken). This is basically an oven fries recipe using broccoli instead. We also do this with sweet potatoes. -- posted by kc in la

Delicious Broccoli & Cheese Crunchy Bake!!!

This is an uunbelievably simple side dish recipe which was taught to me by an American friend of mine who moved over here. We decided to celebrate Thanksgiving with her to help her feel less homesick and she made this for us. I thought it was delicious, demanded the recipe which she gave me there and then and now it is a firm family favourite.

Give it a chance, it sounds bizarre and yes, it is FULL of calories but it is perfect for a family dinner, or holiday celebration like Christmas or Thanksgiving or even Easter.

I've tried this with normal cheese but it just doesn't have that same fix for me!

This is my first recipe listing so here goes nothing ha ha!!! Please rate!!! I'd love any advice on changing or improving this! -- posted by Surflou

Tom Yum Soup With Vegetables

Thai Tom Yum soup is a delicious and aromatic Thai soup. I crave this soup ALL of the time. I have brought this to parties and people always rave about it. Now friends always ask me to make it whenever we're getting together. I made it completely from scratch for years. A few years ago, I started using the paste and prefer it. I find it to be more flavorful.
Tom Yum is distinctly known for it's hot and sour flavor. My version maintains the distinct hotness and sourness of the traditional soup but it also is slightly sweet and spicy. I make a side of jasmine rice and serve it with the soup.
I noted the ingredients and amounts I use however, I encourage additions, deletions and alterations. I don't care for the mushrooms and I love broccoli which may come as a surprise to some. Broccoli is not a traditional component of this recipe but it's healthy and I find that it goes nicely with the broth. Play and have fun! -- posted by Proserpine79
