Nanaimo Bars

Named after the city of Nanaimo in British Columbia, the first time this square was published under that name was in the early 1950's in the Vancouver Sun newspaper! This version of the original bar is from Company's Coming - 150 Delicious Squares! Later versions change the vanilla custard layer to mint or peanut butter but the original is my favourite.
You can make this a day ahead of a special occasion or keep it in the freezer. I used to freeze half because I'm very weak & I would eat the whole thing myself BUT I soon discovered that it tastes good even when its frozen! -- posted by CountryLady

Easy Veggie & Cream Crock Pot Chicken

This recipe is a mixture of a few. It's extremely versatile, choosing your own tastes from the veggies to the soup to the cream cheese. It's similar to other "cream chicken" recipes but I think this one has much more taste. Use any cut of chicken you like. Works well with turkey breasts! If you want to make the meal whole without any extra work, it also works great with sliced or chopped potatoes under the chicken. -- posted by Corilayn

Thimble Cookies

This is the basic recipe for 1 dozen cookies….you will want to make waaay more than that though. Obviously you can use any kind of jam you like, but after years of experimenting I have found these to be the absolute best. I listed 2 kinds because when you are making lots it looks pretty to have the different colours. I also recommend that if you have a dainty tea service spoon to use that for filling with jam…it’s much neater. -- posted by Daehder

Apple Pancakes With Syrup

This has been a favorite since my children were todders many years ago. I think the original recipe came from an add for B.C. apples but I have modified it several times over the years. The original recipe called for white flour, brown sugar, and peeled apples; but I now use whole wheat flour, have reduced the amount of sugar by substituting half of it with Splenda, and leave the peel on the apples. You could use any variety of apples but we like the tartness of Granny Smith. -- posted by Dr Phil fan

Brain Puffs

This may not sound good, but it is quite tasty. It is fiddly, but a kid pleaser. I made it up in the Philippines where we have fresh pineapple all the time. It is not acidic there so we could eat 10 pineapples a week, every week for 4 months! So this was delicious with fresh pinapple, but canned would be ok too.
Build Your Own Canadian Cranberry and Herb Turkey Burgers!

Build your own burger - the recipe here is for a low-fat cranberry and herb turkey burger, with LOTS of options! Plump semi-dried Canadian cranberries and fresh chopped herbs are added to lean, low-fat turkey mince for a moist and flavourful burger, and without the guilt! I have offered the bacon, cheese, assorted condiments and the burger bun as an option; if you are REALLY watching your calories and fat intake, just go with the plain burger and a lovely crispy mixed salad on the side. Turkey mince can be a little bland, so the addition of the herbs and cranberries adds a real flavour injection. Try to use freshly chopped herbs for the best flavour, if you do use dried herbs, reduce the quantities by half, as dried herbs are more pungent than fresh. If you prefer a slightly sweeter taste, use Craisins, the sweetened dried cranberries that are available in North America and Canada; this recipe has been posted as a thank you to a Canadian friend on Recipezaar, who kindly sent me some Craisins, along with lots of other Canadian goodies! Merci beaucoup! -- posted by French Tart

Cherry Almond Nanaimo Bars

Tomato Pineapple Jam

A soft jell, requiring about a week to fully set. It does not hold a firm shape when decanted. It is surprisingly flavorful, my children's favorite on toast, Popovers, English Muffins, or lightly spread on waffles. I usually keep mine in a spare refrigerator once the jars have sealed.
Rustic Apple Tart

This recipe hails from British Columbia, Canada. It is from the website if the B.C. Tree Fruits Limited company. "Who doesn't love baked apples and cinnamon? They are an irresistible combination especially when served warm with a scoop of vanilla ice cream. This rustic apple tart is simpler to make than a pie. You don't have to be neat and fussy with the crust, just simply fold it up over the apples however you please leaving the centre open. The chopped pecans toast while the tart is baking which gives them a buttery taste and help to make the tart look very rustic." http://www.bctree.com/recipes/archive/apple-rustic-tart.php -- posted by Jess4Freedom
