Apple Pancakes With Syrup

This has been a favorite since my children were todders many years ago. I think the original recipe came from an add for B.C. apples but I have modified it several times over the years. The original recipe called for white flour, brown sugar, and peeled apples; but I now use whole wheat flour, have reduced the amount of sugar by substituting half of it with Splenda, and leave the peel on the apples. You could use any variety of apples but we like the tartness of Granny Smith. -- posted by Dr Phil fan

Bc Ferries Manhattan Clam Chowder

This is from a free recipe card that they used to give out on the BC ferries. It is a tomato based chowder and is very good. The recipe calls for clam nectar but the recipe zaar software changes it to clam juice. I'm pretty sure it's the same but you never know. -- posted by Bridge Street Cafe

Canned Chicken Breast (For a Variety of Uses)

Canned chicken in broth is so handy to have around, I use it often for a variety of different things. I drain the chicken and freeze the broth for future use. I use the chicken for salad mix for sandwiches and for chicken salad with greens etc, chicken fritatta and any number of other recipes; For almost any recipe that calls for cooked chicken; I have even dumped the whole can, chicken and broth into a pot, add veggies, noodles and it makes a great soup. -- posted by Derf

Mom's Savoury Beef Stew

Just the right dish for a cold day. This stew is very easy to make, but needs 4-5 hours cooking time. All of the measurements for the seasoning are approximate, and should be seasoned to taste. Only 400 calories and one serving is very filling. For a beefier flavour, try adding 2 little packets of beef oxo, and omitting 1/2 tsp salt. This stew freezes very well; when heating it after it has been frozen, add a little water and it will bring it right back to life. -- posted by Jen Clary

Teriyaki Salmon Skewers

The sweet dark flavour of teriyaki is an ideal match for salmon. This is an easy appetizer, perfect to pick up and enjoy with a glass of sparkling wine. By using a centre cut of salmon your skewers will be equal in size and cook evenly. Let your wooden skewers soak in water for about 20 minutes to prevent flare-ups in the oven.

Spinach Chicken Breast

This is a quick and easy meal for lunch or supper. Its healthy and tasty! I made it up one night for supper for me and my sister. It was really quick, tasty and not too filling, but just right. It is healthy and spinach actually has more nutrients than any other food! If you want it even healthier, try whole wheat noodles rather than white. I am not too fond of measurements so these are close but approximates, so feel free to adjust as necessary.
Brain Puffs

This may not sound good, but it is quite tasty. It is fiddly, but a kid pleaser. I made it up in the Philippines where we have fresh pineapple all the time. It is not acidic there so we could eat 10 pineapples a week, every week for 4 months! So this was delicious with fresh pinapple, but canned would be ok too.
Build Your Own Canadian Cranberry and Herb Turkey Burgers!

Build your own burger - the recipe here is for a low-fat cranberry and herb turkey burger, with LOTS of options! Plump semi-dried Canadian cranberries and fresh chopped herbs are added to lean, low-fat turkey mince for a moist and flavourful burger, and without the guilt! I have offered the bacon, cheese, assorted condiments and the burger bun as an option; if you are REALLY watching your calories and fat intake, just go with the plain burger and a lovely crispy mixed salad on the side. Turkey mince can be a little bland, so the addition of the herbs and cranberries adds a real flavour injection. Try to use freshly chopped herbs for the best flavour, if you do use dried herbs, reduce the quantities by half, as dried herbs are more pungent than fresh. If you prefer a slightly sweeter taste, use Craisins, the sweetened dried cranberries that are available in North America and Canada; this recipe has been posted as a thank you to a Canadian friend on Recipezaar, who kindly sent me some Craisins, along with lots of other Canadian goodies! Merci beaucoup! -- posted by French Tart

Bc Ferries Manhattan Clam Chowder for First Class Passengers

In British Columbia, Canada, the Ferries that travel the beautiful trip between the Mainland and Vancouver Island, are famous for their "Manhattan" styled Clam Chowder. In the small village by Horseshoe Bay terminal, one of the little bistro's has it's own kicked up version. This is my copycat version of their version!
NOTE - this is on the spicy/hot side so if you aren't a fan of that, don't add the red pepper flakes.
Serve up with a crusty white artisan bread and a crisp, dry white wine. May I recommend BC's Sonoma Ranch Pinot Grigio. -- posted by Beautiful BC

Fallen Red Cedar

This cocktail is served at the Sylvia Hotel in Vancouver, British Columbia. This fine old hotel built in 1912 is perched on the edge of Stanley Park and it was home to Vancouver's very first cocktail lounge which opened in 1954. The lounge is an excellent place to take in English Bay sunsets. Drinks at the Sylvia are inspired by the hotel's surroundings. This particular drink is named to commemorate a landmark tree nearby that was uprooted in the windstorms of late 2006. Enjoy. -- posted by Chef Regina V. Smith

Chanterelle Mushroom Tartlets

We picked some wild mushrooms and I wanted to use them in an appetizer. Not finding what I was looking for, I looked at some recipes for other types of mushrooms. This recipe "borrows" heavily from Bergy's recipe 16123. Since chanterelles are more strongly flavoured than button mushrooms, I added some other stronger flavours to match (and to be honest I used what I had on hand!)
Rustic Apple Tart

This recipe hails from British Columbia, Canada. It is from the website if the B.C. Tree Fruits Limited company. "Who doesn't love baked apples and cinnamon? They are an irresistible combination especially when served warm with a scoop of vanilla ice cream. This rustic apple tart is simpler to make than a pie. You don't have to be neat and fussy with the crust, just simply fold it up over the apples however you please leaving the centre open. The chopped pecans toast while the tart is baking which gives them a buttery taste and help to make the tart look very rustic." http://www.bctree.com/recipes/archive/apple-rustic-tart.php -- posted by Jess4Freedom

Meat N' Veggie Pie

I developed this recipe because I love frozen meat pies so much and wanted to make my own. I used the Moms Souper Easy Pie Recipe from this site for the pasty. You can use whatever veggies you like or mix it up and make different kinds of meat pies. It is a very simple to make, freezes well and is a great meal for a brunch or a cold winters night. -- posted by AnitaLynn

The Best All Purpose Deep Fry Batter

We dont deep-fry a lot but when we do..we do a WHACK of stuff. I've tried numerous recipes and this by far is the cheapest, tastiest and works with everything. Fish and onion rings are phenomenol. Spices are to your own taste and can be adjusted to whatever taste you want. Believe me...I've added everything from curry to southwestern tastes, this 'basic' recipe is just a guideline to the spices and taste you are looking for. ENJOY, it's awesome. -- posted by Corilayn

I was making Tortilla Pizza for supper, had some ground turkey defrosted in the fridge for it. Had the whole wheat tortillas on the cookie sheet and put the sauce on, then the spinach, grated carrots, diced red pepper and diced tomatoes , topped them with the grated cheese and popped it in the oven. There we were eating and DH says, my gowd this is good but I can't see the turkey on mine HA HA!!!
