			<description>My husband and I eat this every morning M-F.  The oatmeal is low sodium, low sugar, high fiber.  The apricots are high Vit A (beta carotene), the walnuts are high Vit E.  Without honey, it's quite bland. This is an altered recipe I came up with on the fly... not too different from the recipe on the package, but easier to make in bulk. 
These ones are also a lot fluffier in my roommate's and my opinion.

			<description>My friends and family are always getting on me to publish my recipes; I don't really use them, nor do I regularly remember even what I put into my dishes. I took this dish to a vegan potluck last night, and it disappeared in seconds. This morning I was awoken at gun point (exaggerated for dramatic effect) to post this recipe.... So, I thought it wise of me to comply. This recipe takes me about an hour of prep time, and about an hour to cook. There are shortcuts one may take to cut down on the prep time, but the first time, I suggest leaving ample time to prepare. I have used a variety of nuts for this recipe, all working out well (this last time I ran out of sesame seeds, so I used 2 tbsp of my tamari roasted pumpkin seeds, and 1 tbsp of raw pecans). I also like to make my dishes gluten free for potlucks, so I used &amp;frac12; cup of blue corn meal, and &amp;frac12; garbanzo flour in place of the whole wheat pastry flour, the taste was amazing, but a little more crumbly then whole wheat pastry flower. 			<description>Oh my gosh these are AWESOME!  This can of pineapple on the counter was calling to me, and my husband can't eat wheat, so if I make pancakes they're gonna have oats in them.  Plus, the Tahitian Pancakes came up on Heroes in the past week or so, so that's on my mind.
I combined two different recipes that I found online, one for pineapple pancakes and one for oatmeal pancakes.  Neither one is like this new version though.  SO AWESOME!  
One last thing, I used coconut milk instead of cow milk, since my husband is also on this non-dairy kick.

If you plan ahead on making home fries for breakfast, then you can pre-bake potatoes for this. Please note that cooking time does not account for baking the potatoes! This assumes that you have leftover baked potatoes and are using them this way. Raw or boiled potatoes will not work. This makes 1 large serving, if you plan on making enough for your family pre-bake more potatoes. This is not only healthy, but it is SO festive and colourful - my photo shows the one I made this Boxing Day (26th December), I usually add kiwi fruit too, but we had run out of them.......oooops! My quantities listed here make enough for 6 to 8 people, but this can be increased as well as reduced to suit personal requirements. I normally serve this with cr&amp;egrave;me fraiche or vanilla yoghurt, but its also wonderful when served naked, the salad that is, not me! Double the recipe for an 8x8 pan, quadruple it for a 9x13 pan&amp;quot;. 

Unless you double the batch and use a bigger pan, in which case, it's a great breakfast topping for oatmeal!  Enjoy!

			<description>I've made these twice now and I have to say I just love the taste!  I made my own corn flour from the Hopi Corn we grew in our garden.  I think the fact that it was fresh really added to the delicious taste of these pancakes. I got the original recipe from the Quinoa Flour bag, but changed some of the ingredients to make it Vegan. I guesstimated it took about 2-3 minutes per side of pancake, but you will know when the bubbles form and the pancake has risen that it's time to flip it.  You can always peek under the pancake to see if it's golden brown, then it's time to flip it.
