Seasonings are to your taste.  I change them all the time depending on what I add to these.  The more servings you need, you can add extra of any of the ingredients.  This is also a budget stretcher.
Cooking time does not include adding more than ingredients listed.

			<description>After yoga this morning I was craving a hearty breakfast and wanted restaurant style breakfast potatoes.  I couldn't find a good recipe online for breakfast potatoes so I came up with my own.  My boyfriend loved them and said they were really good served in combination with eggs over easy, turkey bacon, sliced apples and toast.  I enjoyed mine with good-old ketchup and he had his with salsa.  Try playing with the spices in your cupboard if you don't have the basics that I had stocked.  Next time I might try a sprinkle of cayenne pepper to spice it up a bit. He made it for Christmas and Thanksgiving for as long as I can remember, as the dumplings are absolutely wonderful in au jus gravy and provide a wonderful addition to any roasted meat and a good companion to sauerkraut. It is from Charlotte Givens and was originally in The Delaware Heritage Cookbook.  The recipe didn't look that exciting to me, but it I was pleasantly surprised at how yummy it was!  I let the potatoes cook in the pan and didn't cook them in advance.  I threw in some red onion (more like a cup--not 2 tablespoons) and green and yellow peppers for color/flavor (probably a cup as well).  I used a cup of cheddar cheese and threw the bacon in right before I melted the cheese.  It's probably the bacon grease that makes it so tasty. 			<description>Get your breakfast all in one casserole! Typically, I make this casserole for dinner and the leftovers (if there are any) are breakfast the next day. This casserole works great as an after-holiday breakfast. It will put some of that yummy leftover ham to good use. Otherwise, I just find my favorite deli ham and tear up several slices. This casserole reheats well. We have one in the fridge, ready to be reheated, at the start of every week. Dad likes to take this casserole a step further and put a scoop of it on his favorite morning bread with a slather of black raspberry jelly for a yummy (though slightly messy) breakfast sandwich. There are several other ingredients that you could add or substitute into this casserole. Think of it as an omelette and go nuts! Mushrooms, tomatoes, spinach, salsa, etc.  If you have a big family to feed, this recipe can easily be expanded to serve 12 by using a 3-quart casserole dish and doubling all the ingredients. This assumes that you have leftover baked potatoes and are using them this way. Raw or boiled potatoes will not work. This makes 1 large serving, if you plan on making enough for your family pre-bake more potatoes.
