			<description>I have been making oven pancakes for years in my iron skillets, but just recently purchased a special oven pancake pan (it looks like a flat wok).  This recipe was adapted from the recipes that came with the pan.  We serve it with sour or whipped cream, honey, maple syrup, etc.  It's good with any of the topping choices.  It's relatively low in sugar, so my diabetic mother can enjoy it. Although you are supposed to let the batter rest at least 30 minutes, I have gone ahead and baked it (I do usually let it rest though).  I have also made the batter the night before and refrigerated it overnight; then I let it come to room temperature before I bake it.  That works okay when I know I'll be in a hurry the next morning, but I still prefer the original version. Add or subtract ingredients according to your taste - you can use less sugar if you like, increase the amount of wheat germ, add flax seeds, sesame seeds, pumpkin seeds, other dried fruit or nuts - it's perfect for experimenting.

Next, slices of other large fruits- pineapple, peeled cantaloupe, banana, plum, orange, pear, red skinned apple-are arranged in interestin balance of colors and shapes. Small fruits-raspberries, halved strawberries, figs, green and purple grapes-fill in the spaces. Two slices of Nut bread are tucked in at the upper edge. A large Vanda orchid is the finishing touch with Marshmallow Sauce on the side.

			<description>Oh my gosh these are AWESOME!  This can of pineapple on the counter was calling to me, and my husband can't eat wheat, so if I make pancakes they're gonna have oats in them.  Plus, the Tahitian Pancakes came up on Heroes in the past week or so, so that's on my mind.
I combined two different recipes that I found online, one for pineapple pancakes and one for oatmeal pancakes.  Neither one is like this new version though.  SO AWESOME!  
One last thing, I used coconut milk instead of cow milk, since my husband is also on this non-dairy kick.
