			<description>This is a staple at my mom and dad's house... and is quickly becoming one at mine too!  It's super versatile and you can make it with just about any combination of fillings.  I go for the vegetables and have been attempting to incorporate as many as I can from my garden (hence the base recipe below)... my parents will often make a version with spinach and smoked salmon. This is a great brunch/leisure breakfast dish, I make this on some weekends when I have time to cook a gourmet breakfast instead of rushing out the door with coffee and toast. (And I love to leave bits of egg on the stove to make some scrambled egg to eat before it gets baked.)

If you want it to be thicker and fluffier for the scrambled egg element and to cut into pie-like wedges, use an 8&amp;quot; baking pan.

My grandmother would have lots of dark chicken meat in it and huge chunks of ginger that I would end up biting into (not fun when you're 7 years old). Since then my own kids have developed a love for the traditional Chinese-style congee (also called rice soup) they serve in restaurants, especially during cold Autumn and Winter days. Some people may be uneasy about using the 'century duck egg' (or 'thousand year old egg' is really just as egg that is preserved in salt, ash and lime) but don't judge it in it's unpeeled, chopped up state - added to the congee, it really adds a yummy complexity to this dish, even my 2yo daughter loves it. This recipe is for you if you want a warm, hearty, simple and economical meal. Enjoy! It was sent in to them by Ann Schenk of Winnett, Montana.She added two teapoons of wheat germ when the dry ingredients were mixed together, but I left it out. And they seemed to come out just fine.This recipe make enough for one, but if you make them just a bit smaller you could get enough for two. And serve eggs and sausage on the side for a much heartier breakfast or even dinner.Serve with margarine and syrup, if desired. Nothing wakes up your camp-mates like the warmth of a campfire and the sounds and smells of sausage, bacon, and veggies. You will NEED a REAL camping dutch oven (get the cast-iron kind with the little legs and the lip on top for putting coals on the lid - if you camp much, this is well worth the investment). You will also need two hot-pads, tongs, and a heat-resistant spatula. A long-sleeve shirt and leather gloves are recommended so that you don't singe your arms and hands.
