Phyllis' Chocolate Syrup

This is a childhood favorite of mine. Aunt Phyllis made her famous biscuits and this Chocolate Syrup was served warm over the biscuits. This one is different from any I've seen here on Zaar. It's more of a syrup than a gravy. I recently got her to tell me how to make this. Now I make it for my boys to enjoy! It's so simple and delicious. -- posted by Vseward (Chef~V)

Amlou

I tasted, well in fact fed myself almost completely on, amlou during my trip to Morocco 2 years ago. It requires one hard to find ingredient, the argan oil which posess a very distinctive nutty taste. Say one was to make this recipe without argan oil I might, and I stress I only *might*, recommand grilled sesame oil but I would be very sad about the whole thing. The best is to dip freshly baked bread in amlou and drink mint tea with it... you'd think you'd died and went to heaven. Or Morocco, which is close enough. -- posted by Geist

Blueberry-Sage-Ginger Jam

This blueberry jam is flavored with fresh sage and freshly grated ginger. In this method I use Dr. Oetker's "Gelling Sugar", which already contains pectin.
Strawberry-Lavender Jam

Strawberries and lavender are a wonderful combination. Not only that the jam is tasting great, it has also a great flavor, which fills the air, when you open the glass. Can there be something better than breakfast with such a jam? In this method I use Dr. Oetker's "Gelling Sugar", which already contains pectin. The "Super Gelling Sugar 3:1" reduces the amount of needed sugar to 1/3 of the fruit weight. This makes the jam not so sweet and very fruity and fresh.
Strawberry-Basil Jam

Lime Jam With Ginger and Vanilla

I love limes. Their fuityness is awesome. This jam catches the full flavor of lime. The dry white wine adds even more fruity notes. The ginger in here combines the fruit with s hint of delicate sharpness. It will be completed by vanilla, which holds the flavors all together without being recognized at first. This is true suummer jam, fresh and fruity. It is a bit of work, because you have to press out the juice of the limes, but it is worthwhile. I love it. Add some of this jam to a plain yogurt and you will have an awesome fruit yogurt. Wonderful on a slice of toasted bread. I could eat it as it is too. -- posted by Thorsten

Mirabelle-Rosemary Jam

Mirabelles (also called sometimes yellow plums) are not as tart as plums can be. These small fruit goes well together with a herb like rosemary. To balance the flavors I add here vanilla, which helps to blend the flavors well without being dominating. To make it fruity I add lime juice and use again the Dr. Oetker's super gelling sugar 3:1.
Vera's Strawberry Preserves

I love Vera's directions for this recipe. Get ready for a work out! Vera wrote in the margins "The shaking is the secret of success! It causes the berries to absorb the syrup and remain plump and whole. Never cook more than 2 quarts at a time and be sure to SHAKE THE BERRIES!"
I know this makes 2 quarts, but am guessing at the servings. Cooking time does not include cooling time. -- posted by AshK

Vegan Breakfast Biscuit Gravy

For yummy biscuits and gravy! A good vegan comfort food for a hearty breakfast. We make this with our breakfast biscuits. Turn this into "sausage" gravy by adding Griller Crumblers or another vegan sausage/beef substitute. We usually always use crumblers with our gravy. We have a recipe for Recipe #252301 but I haven't tried using it with this gravy yet. Found this on Patricia LaVanture's cooking program.
Nutmeg Syrup

Warm nutmeg syrup tastes great drizzled over frozen vanilla yogurt, pancakes or waffles. The longer you heat the sugar-water mixture, the more the liquid evaporates - and the thicker, more concentrated the syrup. There is a point of no return, however, when you end up with hard, brittle, pseudo-candy, so don't walk away from the stove when preparing this. If you want a really dark-colored syrup, use dark brown sugar; for a golden, maple syrup shade, use light brown sugar.
Homemade Chives Green Onions Cream Cheese

I'm a fan of bagels with scoops of whipping cream cheese! Unfortunately it is very unhealthy so I found this alternative and love it! I get this yogurt in a local Indian grocery store, and I'm sure you can find it in any Parkistini, Middle Eastern or Greek grocery stores as well. This type of yogurt is much richer and thicker. Please be sure to use whole-milk but not fat-free yogurt.
Homemade Vanilla Yogurt (Easier then You Think)

I use this recipe and method at least once a month. You can leave out the sugar and vanilla extract to just have a plain yogurt. Any % milk can be used, I use fat free.
You'll need a method of incubation. I use a medium sized styrofoam cooler with lid, and a couple of dish towels. Any cooler will work. Make sure when you put your jars inside that the lid will close, and there isn't to much extra space. The warm jars themselves will maintain the temperature.
You'll also need containers to pour your yogurt into. I prefer glass jars (mason/canning jars) But old glass mayo jars etc. would also work great. Sterilize your containers before you begin, or while you're heating the milk mixture. Do this by boiling the jars for about 10 minutes in a large pot OR washing them and placing them right side up on a cookie sheet. Place in the oven and set to 350. bake for 20 minutes. -- posted by Nikoma

Yogurt

This makes a delicious yogurt (about 4 pints). I'm still experimenting with it, regarding flavorings. For the powdered milk, you may use instant or regular powdered milk. I use regular powdered milk. If using instant, you can simply stir the powdered milk into the 1 or 2% milk. If using regular powdered milk, be sure to whisk it in well. A mixer pitcher works well for this step.
I've recently learned about hay box cooking or "Wonder Box" cooking and I use this to cultivate my yogurt in. It is simply a bean bag in essence. The top and the bottom of the box are made from a sturdy fabric and filled with polystyrene beads. My recipe will be for using my hay box, but you can use a small styrofoam cooler; wrap the jars in a warm blanket and place in the cooler for the allotted time. Hay Box cooking is often used in countries where fuel is expensive and hard to come by. You primarily heat the contents of your pot of whatever you are cooking (stew, chicken, etc.) and once it is boiling hot you place it in the Hay Box for the allotted time for each dish. As I said, I'm still experimenting with mine. I'll post pictures later.
I made a delicious yogurt cheese from some of this yogurt last time. I'll try to post that later.
Use Dannon plain yogurt for the starter the first time making this, then use some of the yogurt from your previous batch for the next time.
This recipe is from a site called simplylivingsmart.com. I've tweaked it a little. Cook time does not include wait time. -- posted by charlie #5

Who knew you could easily make your own homemade cherry sauce to go with your favorite waffle? I used frozen dark sweet cherries, and it was very good, but I bet if cherries were in season and you used fresh it would be even better. I used twice the pecans the recipe called for because I love them, and I heated them in the oven at around 350 until toasted. This recipe came from Family Circle All-Time Favorite Recipes.
Pecan Maple Bagel Schmear

I don't really like plain cream cheese on my bagels, so I made some of this! I use reduced fat cream cheese because the consistency is naturally softer, even when cold.
Buttermilk Pancakes With Maple Syrup Apples

These delicious pancake recipe are thin, light, fluffy, and moist with a texture that is a cross between a crepe and a pancake. They are great with the apples or without. The recipe is from "Bon Appétit" (Oct. 2004). Don't overmix the batter (it's okay if there are lumps) to ensure that the pancakes will be airy. If you don't have buttermilk, add 1 T of vinegar to 1 cup (minus 1 T) of milk and let sit for 5 minutes.
Thick Apple Pancakes With Raspberry Sauce

This is a fabulous and impressive recipe (both visually and in deliciousness). It's great with or without the raspberry sauce The recipe makes about twice the amount of sauce necessary (in my opinion), but the leftovers are amazing on ice cream! I don't strain the raspberries because the seeds don't bother me. You can also replace with strawberries. If you really want a decadent meal, top with whipped cream. You can prepare the recipe as directed or just bring the apple topping and raspberry sauce out to the table and let people plate it themselves. It's also great if you mix the apple topping right into the pancake batter. Really, it's hard to go wrong with this recipe. :)

This beautiful brunch dish is served at The Ahwahnee Hotel in Yosemite Valley, CA and was printed in "Bon Appétit" (Nov. 2000). If you are just cooking for one or two, leftover batter refrigerates well. -- posted by blucoat

I have been making this quick and easy recipe for nearly 20 years. My kids love it. I use fresh blueberries when they are in season and on sale, but frozen work just fine too.
Mango Jam

It can definitely cheer you up on a chilly March morning in the Midwest. With four mangoes, I added about 4 cups of sugar.
