Banana-Yogurt Oatmeal Muffins

A healthy, tasty muffin your family is sure to love. For the Greek yogurt, I highly recommend Oikos or Chobani. It lends a very delicate texture to the end product. The blueberry flavor doesn't come through on its own, but adds a nice depth of flavor. -- posted by Chef #661355

Raspberry Corn Bread Muffins

These are my son's favorites. He calls them "surprise muffins" because I pipe raspberry preserves into their centers.
Cranberry Zucchini Muffins

I made this recipe based on one of Martha Stewart's recipes. I love cranberries in baked things...the tartness of them. Delicious!! The zucchini adds a little something without being the major flavor. Hope you enjoy them as much as I have!
Note: You can substitute the applesauce with oil, I just prefer to use applesauce. Also, the cups will be quite full when you fill them, but I haven't had any trouble with them spilling over. -- posted by rbrynsaas

Savory Muffins With Goat Cheese, Rosemary and Kalamata Olives

Savory muffins to serve with soups, a big salad or on their own for healthy snacking. This recipe was in Pam Anderson's CookSmart column in the USA Weekend paper, Feb 20, 2009. If you want something delectable and nourishing and don't mind messing up four or more different bowls, this recipe is a lucious hit every time. I replace the sugar with agave or leave it out sometimes. These freeze fine, if well-packaged, to add quick pizzazz to a dinner for many or just take one out to reheat solo.
Heavenly Sweet Cappuccino Chip Muffins With a Cream Cheese Sprea

The best muffins I have ever tasted and the only way I enjoying consuming coffee. Even the cream cheese spread made with them is incredible just by itself. These are super easy to make and you can add your own fun twists to them easily ("frosting" them with the spread and decorating them or filling the muffins with the spread works well!). Make sure you keep the spread refrigerated as the cream cheese in it can spoil easy. Don't plan on piping the spread with a frosting tip unless you thin it out and leave the chocolate chips out as it will be too thick. Enjoy! :] -- posted by Jessa M

Gluten Free Blue Corn Muffins

Funnily I cannot have yellow corn but am fine with blue corn - and managed to get some blue corn flour in Germany! This was my first approach to making corn muffins, and they turned out wonderfully moist. I suppose they can be made with yellow or white corn flour as well. For the milk I used rice milk, use any kind you like. If you want a sweet muffin, add two to four additional tablespoons brown sugar. -- posted by Mia in Germany

Healthy Whole Wheat Muffins

Well sort of whole wheat...half and half, but these are pretty tasty, easy to make, healthy for the most part, and very filling. I came up with this on my own with experimentation.
Blueberry Muffins à La Alton Brown (Good Eats on Food Net

We tried this recipe because I was craving having blueberry streusel scones (# 244646) again. However, I am trying to cut down on my saturated fat and cholesterol, so we looked for something to fill that baked goods craving without blowing my daily saturated fat limit, and Alton Brown is often a decent place to start. We used whole wheat pastry flour with some flax meal thrown in for good measure, frozen blueberries allowed to thaw slightly, and a silicon muffin tin. They were somehow dense and light at the same time, and had an interesting buttermilk note (we assume from the yogurt). Also, Alton says muffins are really more like pancakes than cupcakes! -- posted by Michelle from Central Time

Pumpkin-Chocolate Chip Bread

A pumpkin quick bread with a hint of chocolate. The batter can also make muffins (baking instructions included). For a healthier bread, substitute whole wheat flour for some or all of the AP flour. Adjust amount of flour according to the moisture content of your pumpkin. Yields 12 muffins, 3 small loaves, or 1 large loaf. -- posted by periwinklejenn

I put in some whole wheat flour and use less sugar. Serve these moist muffins warm for breakfast.
Almond Joy Muffins

From The Ultimate Muffin Book. Almond oil is rich in Omega-9 acids and so is a heart-healthy alternative to other fats. But almond oil can also produce gummy muffins. Here, a small amount of butter is combined with the aromatic oil for a lighter crumb with that characteristic, nutty flavor. Almond oil is found in almost all gourmet markets and in some supermarkets in the cooking oil section. Store it in the refridgerator, but let it come to room temperature before using it in this recipe. Muffins will stay fresh for two days, or can be frozen for up to 2 months. -- posted by BB2011

Can't Believe It's Whole Grain Delicious Raisin/Craisin Muffins

This is a simple but really delicious recipe I've developed over time. In spite of being whole grain, they are pretty light. Applesauce replaces the fat, and it isn't missed at all. They're sweet without being too sweet, and disappear right after I make them. My toddlers, hubby, and I all love them. Of course there's plenty of room for variation with this recipe--any type of dried fruit can be put in, you can play with spices, or add some packed pumpkin puree. Lots of options. -- posted by Jujubegirl
