An easy to make, traditional Easter cake that reveals Sicily's Greek religious heritage. Mahlepi or mahleb is a Greek spice found in Greek or Middle Eastern specialty shops or possibly online. You may top the cake with raw white or red dyed eggs....Delicious with espresso .....
Super Awesome Pretzels

These pretzels are delicious! They remind me of the pretzels sold at the ballpark. I used my regular bread recipe as a base and added the poaching step to give them that lovely, unique pretzel-y flavor. I like to make them with half wheat and half white flour. NOTE: for a sweet topping, bake the pretzels plain; when they’re done, brush with butter and sprinkle them with a cinnamon and sugar mixture (3 parts sugar to 1 part cinnamon) -- posted by Mr. Beetty

Christmas Banana Bread

This is one of my favorite banana breads. I love bananas, but the ones available in the US are not as tasty as the Brazilians, so banana bread is my way of enjoying this fruit. I am not criticizing, it is just that bananas grow all over Brazil, from North to South, so it is just obvious we have better ones there! ;-) -- posted by MillaKette

Crusty Portuguese-American Yeasted Cornbread (No Knead)

An easy no-knead recipe for "pao de milho" is from Nancy Baggett's wonderful new cookbook, Kneadlessly Simple: Fabulous, Fuss-Free, No-Knead Breads". The large, homespun loaf has a mild, go-with-anything flavor and a delightful crusty-chewy top. It has a finer, moister crumb than most cornbreads, the result of the cornmeal being combined with boiling water and turned into a mush first. This simple, seemingly unimportant step makes a big difference in taste, too: Due to chemical changes that occur as the cornmeal begins to cook, the bread is noticeably mellow and sweet, even though no sugar is added. Serve it with meals, along with butter, toast it, or grill it and use in all sorts of hearty meat, cheese, and roasted vegetable sandwiches. This bread is very easy to make, but due to the slow rise, no knead method, you must start this bread a couple of days in advance. -- posted by blucoat

Panettone

MOIST Panettone dotted with raisins and marzipan. The long rise creates a fermentation giving this bread flavor. This Moist sweet dough stays fresh a long time. Just wrap it snuggled in foil and then plastic wrap. Up to 1 week. Make great french toast and or bread pudding. This is a take off Jim Lahey's dough. he got me to make it! I hope you get to make it as well. So worth it! -- posted by ~Rita~

Emeril Lagasse's Portuguese Sweet Bread

This is a recipe that has been handed down for generations in Emeril's family. It is his family's favorite bread to have at Easter, but can be made at any time. This recipe makes five small loaves. It is very hands-on, requiring kneading but it works very well. The prep time is for rising. Note: If making for Easter, you can add a colored Easter egg to the top of each loaf during the final rising. You would need 5 colored Easter eggs, one for each loaf. -- posted by LifeIsGood

Artisan Pumpernickel Bread

Baking bread every Sunday has become a tradition in my house. It fills my house with the cozy smell of fresh baked bread, and the act of kneading has become a source of meditation to release the stress of the work week. Needless to say, this recipe isn't for a bread machine. This was one of my best breads so far. I think it's the addition of the mashed potatos that makes this a wonderfully moist elastic bread. Beware of over-kneading this one, you don't want the dough to be too moist, but it will retain a bit of stickiness throughout. -- posted by OwlMonkey

The blue cornmeal makes for a beautiful presentation but it tastes just as delicious with yellow. Toast pinenuts on a cookie sheet at 350°F for 5 minutes. Best served warm.
Algerian Khobz El Dar -- Semolina Bread

This is the traditional bread of every home in Algeria, hence it's name which transaltes into English as 'Bread of the House'. Every home has a different version & this particular recipe is from my lovely sister in law 'Um Youcef' ;)
Just a word of warning, if you have never made this kind of bread before, you will be shocked at how sticky & hard to work with the dough is. Unlike a regular bread, when your dough is too sticky you may add more flour - here adding more flour or semolina will make things worse...instead add a little water & knead gently with your fingertips . Water will always make the dough come together & away from your hands & the mixing bowl. You can also knead the dough in a KA or similar mixer with a sturdy dough hook. -- posted by Um Safia

Singin' Hinnies - Northumbrian Tea-Time Griddle Cakes/Scones

Served warm and oozing with butter, these fabulous fruity griddlecakes make a great treat for breakfast or afternoon tea. I remember my grandmother making these when I was little; she lived in a very old stone cottage in Northumberland, and made these on a huge cast iron black griddle, or girdle as they were also called! We used to eat them hot from the griddle, with butter – in front of a roaring wood fire during the winter months. Singin' hinnies are a type of fried fruit scone or griddle cake, so called as they 'sing' and sizzle whilst cooking. 'Hinny' is a Northern term for endearment used especially to children - my grandmother used to call me "hinny". Similar to singin' hinnies are Northumbrian griddle cakes, also known as Gosforth gridies.
If you are making them for a children’s party or at Christmas, put coins that have been briefly boiled, then wrapped in greaseproof paper, in the middle of some of the singin’ hinnies. -- posted by French Tart

Never Ending Bran Muffins

They are called never ending because this makes a HUGE amount of muffins! The batter has to sit overnight in the fridge and can be stored for several weeks in there, so you can have warm muffins everyday! Thanks to my friend Malorie for the recipe...*Update* Since this recipe makes so much I decided to freeze 1/2 the batch and it worked great. Just put cupcake liners in a muffin tin fill as usual, put the tin in the freezer for 1-2 hrs, take out and pop into a freezer bag. When ready to use just put back into the muffin tin, it will take about 5-8 extra minutes to bake! -- posted by Rollin in the Dough!

Easy No-Knead Challah Bread

A fabulously easy recipe from "Artisan Bread in Five Minutes a Day" by Jeff Hertzberg and Zoe Francois that bakes a beautiful golden laof. This recipe takes very little effort (you basically need to mix ingredients in a bowl for a minute), but you do need to give the dough time to rise.
Makes four 1-pound loaves. The recipe is easily doubled or halved. You can freeze or refrigerate unused dough. -- posted by blucoat

Cinnamon-Swirl Pumpkin Rolls

This recipe is from King Arthur Flour and is a delicious fall twist on cinnamon buns. And, they are somewhat healthier because they contain some whole wheat flour (and a vegetable!). The dough is very easy to handle and rises up beautifully. These would also be good with a cream cheese icing.
Dough requires a total of at least 2 1/2 hour rising time (if you use liquid milk instead of dry, you may require slightly longer rising time). You can make the dough the day before. Just let them rise for about 30 minutes, wrap them up, and refrigerate overnight. In the morning, let them rise a bit more and warm up, unwrap and then bake. -- posted by blucoat

Almost No-Fat Harvest Pumpkin Cinnamon Rolls

I came up with this recipe one rainy Saturday morning when everyone wanted cinnamon rolls but I didn't want to take the time for "regular" ones. I had purchased a ball of pizza dough at the store so I used that as my dough for the rolls. Worked out GREAT!! This will probably be our Christmas breakfast.....easy and YUMMY!!! I am a "dump cook" so I approximate with measurement. :-) My kids LOVED these!!

Would be good with chopped walnuts, but my kids won't eat those very often. I have to call them "super food" to get them to eat ...but only occasionally. :-) -- posted by sconehead

Cranberry Cake

Clients of the company I work for give us fresh cranberries every year at Thanksgiving. this year, I decided to actually DO something with them.

I made this cranberry cake several times in one week because we just can't get enough of it. It's sweet with a golden crumb, soft and moist, and dense without being heavy, with juicy explosions of tart cranberries.

This is also really easy; it comes together in about 10 minutes. Sometimes, I will cover it in whipped cream, but lately I have been baking it instead with a topping of pecans caramelized in butter and brown sugar.

Popovers

Based on a recipe from one of my very first cookbooks: The Encyclopedia of Creative Cooking. These are very nice popovers, and go well with prime rib of beef, in which case I substitute the beef fat renderings for the shortening. -- posted by mersaydees
