			<description>I have tried a few banana bread/muffin recipes that either were already fairly healthy or that I attempted to make healthier, and I just couldn't find one I really liked. They always seemed to lack flavor or have that weird gummy texture that low-fat muffins tend to get. So after looking at quite possibly over a hundred recipes, I kind of made up my own. They just came out of the oven, and the one I tried was pretty tasty. I think the only change I might make is to increase the spices a bit, but that is just from personal preference. 			<description>I adapted this recipe from a mango bread recipe but substituted yogurt for sour cream, vegetable oil for butter, cut the amound of sugar in half and used local honey instead of sugar, and used whole wheat flour. I also added almond meal, oats, flax seed, blueberries, and almonds to give some healthy fats, fiber, and sweetness. The result is not too sweet but still delicious and somewhat healthy muffins. I like to use a mini loaf pan and give the loaves as gifts in a gift basket along with other &amp;quot;Hawaiian&amp;quot; treats.  I also use valtrompia bread tubes in different shapes and then slice.  The slices look so pretty on a plate.  If you use the bread tubes, be sure to fold wax paper to fit over both ends of the tubes before fitting the lids on. If you are after a 'bread' then omit the baking powder, if you want more of a cake, baking powder makes it light and fluffy! If you can, don't make this recipe until the banana skins have gone completely brown - the bananas are much more sweet, moist and flavoursome taking this recipe into a different league. 			<description>I bought a 20lb bag of bananas at Krogers for $1.00 and have been trying to use them all up. This is one of the recipes I made in the process. It was by far the most scrumptious recipe that I made. It could also be made into a bread, but I made muffins. This is definitely my new default banana bread recipe! Imade a double batch and ended up with 39 muffins. I made half with the called for maple syrup/pecan topping and half with a cream cheese topping. To make the cream cheese topping, I whipped 6oz cream cheese with 1/4 cup brown sugar and 1/4 cup maple syrup. 			<description>Absolutely addictive!  These bars are moist, light, and fluffy like a quick bread (rather than dense like a brownie).  They have a slight sweet/salty thing going on that takes them to the next level.  Make a pan and watch them disappear!  These are a huge hit at potlucks.

You can double this recipe and bake in at 13x9-in. pan.

Variation: For outrageously good pumpkin bars, substitute canned pumpkin for the banana and add 1 tsp. fresh grated ginger.  Outstanding!

			<description>This is an excellent, moist banana bread by itself but the addition of caramelized brown sugar apples make this truly outstanding.  You can add nuts or currants.  Be sure to use super-ripe bananas  (the blacker the better).  The banana bread keeps well wrapped in plastic wrap at room temperature for up to 3 days. For longer storage, freeze well wrapped in plastic wrap and then aluminum foil for up to 3 weeks. Defrost (still wrapped) at room temperature. There are tons of low fat recipe options out there but the always take out the walnut.  Removing them will take away from those &amp;quot;scary numbers&amp;quot;  we all watch; however, walnuts are such a rich source of nutrition that they are worth keeping. 
Side Note: Many people use &amp;quot;Splenda&amp;quot; as a sugar substitute, if you get an icky aftertaste try Stevia, like &amp;quot;Truvia&amp;quot;.  I personally prefer &amp;quot;Sun Crystal&amp;quot;, a mix of natural sugar cane and stevia.
