Cinnamon Raisin Bread (Abm)

Modified from "The Biggest Book Of Bread Machine Recipes," my 5 yr old son loves helping me make this, and even more, he enjoys devouring it. It makes a 1.5 pound loaf. It's supposed to be great when slices are toasted, but we never get it to last that long. -- posted by SnoBahr

Whole Wheat Pumpkin Bread

I created this recipe after tasting a similar bread. The pumpkin and pudding mix add moistness while the whole wheat flour adds nutrition. It’s a perfect quick bread for this time of year, for breakfast or any meal.
Yummy Gluten Free Pumpkin Muffins

I got the idea off of Econobusters, but changed it so much that it's pretty much my own now. For the GF flour mix, I use Recipe #391326 (with almond meal as the last ingredient - so there is some protein that doesn't show up in the nutrition). It rises really well, but needs to cool for awhile before eating. -- posted by WI Cheesehead

Easy Cornbread

This is the simplest cornbread recipe you will ever find. It's a sweet twist on a classic. The cornbread comes out perfect every time. We like to slather it with butter and enjoy it with a beef roast or beef stew. Adding 1/3 cup of sugar is just an estimate...I probably add closer to 1/2 cup. -- posted by AshleyNeicole

Big Batch Buns

My mother and I used to whip this up and make all kinds of things: bread, cinnamon rolls, bread sticks, roll little balls of dough in cinnamon and sugar and fry them, roll little balls in melted butter then coat with cinnamon and sugar and put them in a bundt pan for coffee cake....anything we could think of. (and I mean we'd make all those things out of one recipe - that's why it's called Big Batch Buns!!)

We'd get one thing baking in the oven and then ask, "what else should we make?" We'd spend all day baking. Ahhh, great memories.

I honestly have to say; servings, prep and baking time are a total guess. It depends what you make and how many things you make. :-) -- posted by HeatherN

Christmas Cherry Nut Bread

This is so easy to make as you just put everything, except the cherries, in a bowl and mix it, adding the cherries last. It is so pretty and so good. It is nice with a cup of tea or for giving in a pretty little basket along with some tea. You could put a pretty tea cup in the basket, too. If you like fewer cherries, use the lesser amount; I like more so I use the whole jar. -- posted by Mimi in Maine

Napa Goat Ranch Whole Barley Sandwich Bread

I worked on this recipe for years- I wanted a good tasting sandwich bread with the nutrition of barley, one that would be very moist and keep well. I must have done it because so many people have told me that this is the best bread that they have ever eaten! I admit that it is a little more work with the extra step of cooking the barley, but if you do as I do and do it in 3 steps when you have time- it fits into anyones schedule! Another bonus is that the dough makes killer hamburger buns as well as dinner rolls. My husband loves it when I make individual sized loafs so he can have a whole loaf to himself!!!! -- posted by Grace at Sweet Grace's

I got this in my e-mail from preparedpantry.com. It uses baker's dry milk but you can use regular dry milk. It also calls for dough conditioner (enhancer) which makes the bread lighter and better textured. The mashed potatoes in this recipe may vary in moisture content and that may affect how much water you need to reach the right dough consistency. If your dough is too dry, drizzle in a little water while kneading. If it's too wet, add flour one tablespoon at a time. I'm guessing it makes 12 rolls. -- posted by CJAY

Thin Sandwich Buns

These are like those sandwich thins in the store without sucralose or chemicals. One sandwich bun is 1 Weight Watcher point.

TIPS: You'll need a 4" biscuit or cookie cutter for these to be consistent, but you don't have to have it. The vital wheat gluten improves the texture and rise, but you don't have to use it. Just add 2 more tablespoons of flour if you omit it. And white flour will work just fine if you don't want whole wheat. Just add more flour in place of the extra bran called for in the recipe. Of course, the nutritional info will be different.

Lighter Chicken and Biscuits (Oamc)

This is a recipe I adapted from Martha Stewart's Everday Food. It is a stovetop version of a classic southern casserole. I am usually suspicious of so called "quick" versions of classics and even more so of "light" adaptations, but this one was right on the money. The texture and flavor are reminiscent of Boston Market chicken pot pie. There is no cream of chicken soup and you can have dinner on the table in about 45 minutes. The original recipe called for whole wheat biscuits, but I made Bisquick biscuits with melted butter generously brushed on top (makes a golden brown crust). This recipe would be delicious with turkey and can be made with cooked chicken or turkey as well. This recipe can easily be doubled for OAMCers as well. -- posted by UrbanDesiMommy

Cranberry Cake

Clients of the company I work for give us fresh cranberries every year at Thanksgiving. this year, I decided to actually DO something with them.

I made this cranberry cake several times in one week because we just can't get enough of it. It's sweet with a golden crumb, soft and moist, and dense without being heavy, with juicy explosions of tart cranberries.

This is also really easy; it comes together in about 10 minutes. Sometimes, I will cover it in whipped cream, but lately I have been baking it instead with a topping of pecans caramelized in butter and brown sugar.

Savory Muffins With Goat Cheese, Rosemary and Kalamata Olives

Savory muffins to serve with soups, a big salad or on their own for healthy snacking. This recipe was in Pam Anderson's CookSmart column in the USA Weekend paper, Feb 20, 2009. If you want something delectable and nourishing and don't mind messing up four or more different bowls, this recipe is a lucious hit every time. I replace the sugar with agave or leave it out sometimes. These freeze fine, if well-packaged, to add quick pizzazz to a dinner for many or just take one out to reheat solo.
Moist Pumpkin Spice Bread

This may be the most delicious pumpkin bread recipe I've ever baked. I came up with this for my brother's 18th birthday and it has been devoured in just two days. I believe the applesauce in the recipe is what makes it so ooey-gooey moist. It's also low in fat as the applesauce replaces the oil that would normally be used. The recipe makes two loaves, one of which can be frozen or given to a friend. -- posted by EntirelyEmily

Holiday Nut Roll (Americanized Croatian Nut Roll)

While similar to other nut roll recipes, this filling is unique because it uses no egg whites or lemon and includes a delicious "Americanization" of the Slavic recipe by adding--whiskey! It adds a fantastic additional flavor; feel free to split the filling before adding whiskey if you'd like to reserve some spirit-free for the kids (though it cooks off and I've never met a kid who didn't like this).
