Aztec South American Chocolate and Chilli Glazed Pork Strips

A fabulous combination of heat and sweet makes this chilli and chocolate glazed pork a real winner. And, this Sophie Grigson recipe uses a very cheap cut of pork, so it makes a very economical meal; however, the unusual and exciting flavours would make this a great dinner party dish. Serve with assorted stir-fried vegetables, relishes and sauteed potatoes. The Aztec's were famous for using chocolate in their cooking, both savoury and sweet - and the addition of a good quality chocolate adds a deep and delicious dimension to this humble cut of belly pork. -- posted by French Tart

Brazilian-Style Beef Strogonoff

This is a brazilian favorite and one of our family's too! Beef strogonoff comes in a flavor-rich heavy cream sauce, with a touch of ketchup, mustard and soy sauce, along with chopped mushrooms. It is perfect when served with white rice, potato sticks and a green salad.
I particularly am not very fond of mushrooms, so I leave it out of the recipe when I make it for my picky eaters at home, but I am posting the original recipe for this brazilian dish. Enjoy! -- posted by Gabe's Mom

Pavê De Limão

My mother taught me to prepare this no-bake, easy-to-make Brazilian dessert. I love it because it’s not too sweet. Use thin biscuits that are rectangular—about 35mm x 75mm. In Australia, I use Arnott’s Malt o Milk biscuits, but any similar biscuit would be fine. You can make this dessert in any size pan, depending on how many layers you want. I get four layers when I use a pan about 180mm x 280mm. Time does not include two hours for refrigeration. -- posted by Matheus Brasil

- use rhum instead of cognac

- add 1 1/2 tbsp of peanut butter

Bolo De São Pedro (Saint Peter's Cake)

Sts. Peter and John are two big parties we have in Brazil on July, especially in the country side. We commemorate by gathering by large bonfires, eating popcorn, cakes, sweet potatoes (quite different from Americans'), among other things, singing and dancing. One tradition is that girls of marrying age will learn who they will marry by following certain procedures the night before St. Peter's Feast (who is a matchmaker Saint in Brazil). Some frustrated girls go so far as to hang the saint's image upside-down inside a well, punishment for faling to find them a husband; he stays there until he performs his duty... Another tradition is to pack a small token and put it in the cake batter before baking; the girl who gets it is the next one to marry. Folclore apart, I love this cake and tried it in the US successfully. -- posted by MillaKette

CAUTION: Dende oil gives this dish its special flavor, BUT too much of it may cause “piriri,” a.k.a. Montezuma’s Revenge!
Six Pepper Salsa

I don't know if this salsa recipe is typical of Brazilian salsas, but I do know this recipe is special. It was my neighbor Nina from Brazil who taught me to make salsa and to can it. It was my first venture into canning. Now we bottle whatever is abundant almost every year, but we never miss canning this salsa. There was a period of several years when we suffered without this amazing recipe. All I can figure is that the carefully copied ingredients must have been thrown out with the remains of the chopped vegetables one fall, because the next year the recipe card was gone. Oh the mental anguish of not knowing if we could ever duplicate our beloved salsa! Oh, the hunger! I began searching for a recipe with the unique combination of six different hot peppers that our recipe had. No luck. I even located our long-lost friend Nina and gave her a call. Sadly, she didn't recall the recipe or me. No matter. I will always be grateful for her friendship and her salsa. I began trying to recreate our salsa by altering other salsa recipes. Thanks to Recipe #9272 as my starting point, I finally hit upon the right combination of peppers and spices. U-pick farm fresh or garden ripe tomatoes are the only way we've ever made this recipe. One batch usually lasts till the tomatoes are ripe again -- about a year -- plus a couple of pints to share. Preparation time is how long it takes us to chop all the veggies. We are probably too meticulous. We do the tomatoes and onion in 1/4-inch dice so they are easy to pick up with a chip and small enough that we don't bother to peel them. We chop the hot peppers even smaller. Cooking time is cooking plus processing time. -- posted by CTRmom

This recipe is the only vegetarian dish I've been able to get my family to enjoy - and they really enjoyed it! Since sweet potatoes are so hard to chop up raw, I go ahead and boil them ahead of time until they're just tender enough that I don't need a chainsaw to get through them.
Bahian Brasilian Fish Stew, Decorated With Boiled Eggs (Moqueca

Brazil's Famous Bahian Fish Dish (Moqueca de Peixa Baiana: (moo-KAY-ka Jhee PAY-shah) garnished with chopped Cilantro and Hard-Boiled Egg Wedges.

Just loving my Brasilian lineage and the foods of my culture, this is an homage to Bahia and to Brasil.

Saute and simmer all the other ingredients as long as you like, until tender, but Do NOT ADD the fish until 5-8 minutes before serving depending on the thickness if the fish. That said, you can add a piece or two to the saute for added flavor. I also use two tablespoons of Fish Sauce.

This is to be ideally cooked very slowly so that the flavors can blend thoroughly. I'm going to try cooking in a slow cooker on low for 6 hours and then adding the fish JUST prior to serving.

Serve over white rice, with lime wedges. Side dishes: sauteed collards or spinach and garlic and also cold orange slices. -- posted by MW Savant

Feijoada (Brazilian Black Bean and Mixed Meat Stew) With Orange

Traditionally eaten on Wednesday's and Saturday's throughout Brazil with white rice and oranges (amongst other things), this special and rich meaty slow cooked stew has a depth of flavour using simple ingredients that could bring 'ooohs' and 'aaaahh's' from across the Atlantic I'm sure. I save my version for special occasions when I want a really hearty shared meal and I love the way the beans melt into the sauce lending their luxurious almost creamy texture to the finished dish. Originally this was made by African slaves using fatty offal scraps and as tasty as it was (I've tried this version and it is pretty good!) many people nowadays, including myself, make it lighter and use better quality meats. The Orange and Coriander salad is not compulsory but comes very highly recommended. Absolutely Outstanding. -- posted by robd16
