Asian Soup Stock

This recipe came from a Moosewood recipe book. This flavored broth needs only some tender young bok choy or snow peas, sliced seasoned tofu, and a splash of soy sauce to become a delightful soothing, and light soup. -- posted by BeckyF

Happy Happy Choy Choy

This healthy slaw tastes great and looks wonderful, and uses a minimum of ingredients. The shredded bok choy contrasts nicely with the cabbage, and the whole slaw is tied together with a slightly sweet vinaigrette. If you wish, you could add some shredded carrot for more color. Prep time includes allowing slaw to "wilt". -- posted by EdsGirlAngie

Baby Bok Choy Saute

If you can buy baby bok choy, please do give a try. We much prefer the flavor of baby bok choy to standard boy choy which to our palates at least is quite bitter and too strong tasting. Omit the Thai pepper and replace with milder chile or freshly ground black pepper for less spicy version.
Wilted Garlic Bok Choy

I recently fell in love with Bok Choy & this is one of my favorite recipes. It is an easy, delicious, healthy & colorful side dish that seems to go with any meal.
FYI: The 1TB of olive oil is an approximation, I usually just eyeball it, so you may need more or less.
And for all you Monk fans..."Adding to the list Bok Choy." -- posted by Sirpezy

Kung Pao Tofu Rice Salad

This is a surprisingly satisfying vegetarian salad. I got the recipe from Leanne Ely's "Saving Dinner" e-mail service. I have since stopped using the service, but this recipe remains a family favourite. We are meat-eaters but enjoy this anyway! Cooking time is time to cook rice. If you plan ahead and use your rice cooker, this is a very quick meal to throw together! I *think* this is vegan but it might depend on the brands of soy and hoisin sauces you use. -- posted by Gingernut

Chicory-Endive Roquefort and Walnut Salad

We often eat this simple salad for lunch, only accompanied by crusty French baguette and a glass of wine! Feel free to substitute the Roquefort for a blue cheese that is readily available where you live; it is also superb with Stilton & Shropshire Blue cheese. I have served this as a dinner party starter & also in place of a "just" cheese course as well! If you cannot obtain walnut oil, any other nut oil will be fine, or a good olive oil. This recipe serves 6 people for a light luncheon or 8-10 people as a dinner party starter. -- posted by French Tart

Zippy Stir-Fried Baby Bok Choy

Easy to make, this side dish adds a colorful green vegetable to a meal and is a bit spicy and tangy. My DH loves it. If you choose to substitute fresh garlic and/or gingerroot, cook them in the hot oil before adding the cabbage. This side dish goes well with most Asian-spiced meats and poulty. Fried garlic (in jars) can be found at most Asian grocers, and imparts a bit of a roasted flavor to this dish. -- posted by artistclogger

Stir Fry Veggie Take Out!!

A very healthy option to Chinese take out. Meatless but wonderful! The orange juice, honey and gingerroot create a sweet and sour taste that will have you throwing away all those take out menus! Easy to prepare, easy to freeze and easy on your waistline!! ;) -- posted by SecretIngredients

Kohlrabi for the Novice

This recipe is from the Sept. 16, 2008 edition of the "Living" section of our local newspaper, "The Democrat & Chronicle" (adapted from "In Praise of Pecans by June Jackson" ). I have never tried kohlrabi, but it has been described as a member of the cabbage family but more mild than its broccoli and cauliflower cousins. The article states "pecans and honey accentuate the vegetable's sweet side". I have not cooked this yet but am eager to try it. -- posted by MarthaStewartWanabe

Baby Bok Choy in the Wok

This is a fast and easy recipe for cooking bok choy or baby bok choy. You can adjust the amount of flavor by adding more or less sake/soy sauce mixture (use equal amounts). We've found that adding the sesame oil at the end gives it more sesame flavor, but you could also just cook the bok choy in a mixture of vegetable and sesame oil. When in doubt, it's best to slightly undercook the bok choy. -- posted by Chef #910147

Hoisin Tofu With Vegetables

My adaptation of a Weight Watchers recipe. The 30 minutes preparation time represents the time needed to press the tofu before cook, as the actual effort involved is minimal. Generous portions and big flavors for just 6 points. -- posted by justcallmetoni
