Chicken in Soy Mushroom Sauce

This is a really tasty, low fat dish. If you don't have time to marinade the chicken, don't bother. It really needs at least one hour, even better with longer. It comes from a Family Circle cookbook entitled "healthy eating". Cooking time is listed as the marinading time. This is not the kind of dish that you can run off and do other things while cooking it. You really do need to stand there.. -- posted by Sassy Syrah

Dan Dan Noodles With Pickled Mustard Greens

These aromatic dan dan noodles in a spicy soy-based sauce are wildly popular at South Beauty. A small bowl of them will customarily arrive at the end of a meal—especially in the summer when, paradoxically, eating chile-laden foods is thought to help you feel cooler. Choose noodles that have a firm, chewy texture.

This is a nice accompaniment to steamed rice & fish & a good way to use any greens in your fridge.

I used tamari in this recipe instead of regular soy sauce, which is good if you are not eating wheat.

You can also use canola oil if you do not like using peanut oil.

Baby Bok Choy Saute

If you can buy baby bok choy, please do give a try. We much prefer the flavor of baby bok choy to standard boy choy which to our palates at least is quite bitter and too strong tasting.
Filipino Beef Stew (Sinigang Na Carne)

Sinigang is a famous Filipino dish, typically sour, that can be made with chicken, beef, pork, shrimp or fish. Usually prepared with tamarind or less commonly with guava or mango. This one is a mix of beef & pork and gets it's sourness from lemon juice, making it quite different from most other sinigang recipes I've seen. -- posted by littleturtle

Kung Pao Tofu Rice Salad

This is a surprisingly satisfying vegetarian salad. I got the recipe from Leanne Ely's "Saving Dinner" e-mail service. I have since stopped using the service, but this recipe remains a family favourite. We are meat-eaters but enjoy this anyway! Cooking time is time to cook rice. If you plan ahead and use your rice cooker, this is a very quick meal to throw together! I *think* this is vegan but it might depend on the brands of soy and hoisin sauces you use. -- posted by Gingernut

Zippy Stir-Fried Baby Bok Choy

Easy to make, this side dish adds a colorful green vegetable to a meal and is a bit spicy and tangy. My DH loves it. If you choose to substitute fresh garlic and/or gingerroot, cook them in the hot oil before adding the cabbage. This side dish goes well with most Asian-spiced meats and poulty. Fried garlic (in jars) can be found at most Asian grocers, and imparts a bit of a roasted flavor to this dish. -- posted by artistclogger

Thai Steak and Pasta With Peanut--Pepper Dressing

I decided to enter into the dark, scary unknown! Thai food! I have seen pictures, smelled the aroma, read, or tried to read some of the recipes. Didn't work! It's still scary unknown.I bought the ingredients, prepared them, rolled up my sleeves, and went to it! Then a funny thing happened, YES! it was delicious! Now, I wondered why didn't try this before? Now, I'm going to get my feet wet in another scary unknown! Enjoy! You might want to add the red pepper flakes slowly, and taste before you add more. The pepper flakes will even be hotter the next day, so be careful. If you have trouble finding the lemongrass, ask your produce man to stock it. Asian markets will have it also. There are lot of steps here, but so well worth it. Times don't include time for marinating. -- posted by FLUFFSTER

Tatsoi, Mizuna and Edamame Salad With Sesame Dressing

This is from the Feb 2007 issue of Vegetarian times. They say "Tatsoi cabbage has small, heart-shaped, green leaves that are beautiful in salads. Mizuna, another Japanese green called for in this main-dish salad, has feathery leaves and a peppery flavor. Both are worth seeking out, but if you don’t come across them, simply substitute napa cabbage and watercress." -- posted by dicentra

Spicy Beef With Shrimp and Bok Choy

In my search for recipes using bok choy, I ran across this recipe on Yahoo.com I am trying to introduce my family to new ingedients and they have never eaten bok choy. This sounds like a delish recipe and preparation should be simple. Cook and prep times noted are estimates as I have not yet prepared this stir fry. This would be good served over rice noodles or brown basmati rice. If you try it before I do, please share your thoughts in the review process. NOTE: Shao Hsing (or Shaoxing) is a seasoned rice wine. It is available in most Asian specialty markets and some larger supermarkets in the Asian section. If unavailable, dry sherry is an acceptable substitute. -- posted by Happy Hippie

Thai Basil Chicken

Adapted (liberally) from Simply THAI Cooking, this is a favorite in our house, as testified by the badly stained page in my cookbook. Can also sub pork for the chicken. Change vege to suit your taste - green beans are nice instead of bok choy. Prep all ingredients, including the sauces, before starting to cook. -- posted by dianegrapegrower

Baby Bok Choy in the Wok

This is a fast and easy recipe for cooking bok choy or baby bok choy. You can adjust the amount of flavor by adding more or less sake/soy sauce mixture (use equal amounts). We've found that adding the sesame oil at the end gives it more sesame flavor, but you could also just cook the bok choy in a mixture of vegetable and sesame oil. When in doubt, it's best to slightly undercook the bok choy. -- posted by Chef #910147

Noble House Long Life Noodles

Any type of noodle - thin chow mein noodles to broad rice noodles to the thicker Shanghai wheat noodles - is a must at Chinese New Year's. However, long noodles represent a long unbroken life (so cutting them into shorter strands would symbolically shorten your life). Pull out your largest skillet or wok because this recipe creates a full pan. -- posted by Celticevergreen

Mongolian Hot Pot

I am posting this recipe because it was in a cookbook I received from NE Lady in the cookbook swap March 2009. I was intrigued by the picture in the cookbook; however, mine didn't turn out looking like the picture! I had way too many noodles and too little broth. The cookbook, "Soups for Any Body" states that it is a mix between a soup and a stew. Mine was pretty thick, so I would add more beef stock to the recipe. I'd also serve more soy sauce with each serving, and allow each diner to add their hot pepper oil. If you let your meat marinate while you chop the vegetables, it gets on the table pretty quickly! I did change it a little...I increased the meat by 4 oz. -- posted by breezermom

Asian Vegetable Noodle Soup

This light, refreshing rice noodle soup is perfect for both Summer and Winter. If needed, dried herbs can be used in place of fresh ones. Add tofu, cooked chicken, seafood and mushrooms as desired. White cabbage can be added instead of bok choy and a small amount of leek or onion is also good. The soup will freeze well but noodles tend to go mushy when reheated. -- posted by the_allergic_chef
