Easy Yummy Black Bean Salad

This one grabbed me for seconds at a potluck recently, so I just had to snag the recipe from the chef. I was amazed at how easy it was, and if you've never liked black bean salad...well, just try this one! Update Jan 8, '08: I just realized that I should warn those who love things hot & spicy that this is NOT! It is what I would consider tex-mex for those who don't like things hot. Hey, man, what can I say, I live in Canada! -- posted by annlouise

Spicy Black Bean & Chorizo Chili

This was my first introduction to Chorizo sausage. When I make home-made chili, this is the recipe I use. Adapted from a recipe I got from some magazine years ago. Usually buy my chorizo, but have also made my own. I like that you don't have to be so exact when chopping the ingredients, since it's going to be pureed anyway. -- posted by Feej

Southwestern Baked Beans

This is something I came up with when I wanted to use some dried beans but didn't want to have the same old baked beans. I added the barley to get more healthy grains into my family, knowing the color of the black beans would mask it. There are only 4 of us so we ended up having over half of this left after dinner. The leftovers worked great for burrito filling and a vegetarian topping for nachos. -- posted by DbKnadler

The Only Texas Caviar You Should Ever Eat

I first tried this dip/salsa at a work picnic. It was so good I had to have the recipe. A real hit with parties and large gatherings. Serve with Tostitos scoop chips for a hearty taste! The secret is in the marinade. Not a difficult recipe but time consuming due to chopping of veggies. -- posted by Chef #878971

Southwestern Summertime Quinoa Salad

Wanted a refreshing wholesome side dish to accompany some spicy Mexican meatloaf, and this is what happened. Use a LARGE bowl to mix as it makes quite a significant amount. With the seasoning amounts given, the predominant tastes are the lime, cumin, and cilantro. My family doesn't like spicy things, so there isn't much kick to it, so you could probably double the chili powder, increase the other seasonings, and add some cayenne if you desire. Could also be made with long grain rice if quinoa is unavailable. -- posted by Stylobille24

Frijoles Negro Barrachos Aka Drunk Black Beans

Authentic black beans made from scratch and WAY better than anything that comes out of a can! Not that there is anything wrong with beans that way! Just that these are as different as night and day when compared to canned. You could probably save time and use canned beans in place of the dried. Just be sure to rinse very very well. I am finally getting some of my 'secret' (lol) recipes on Zaar. Since I tend to measure in my hand or just add a 'pinch' of this or 'enough' of that it is difficult to post the ones that I make here day in and day out. This is a recipe that I can make probably with my eyes closed! Dark beer is too strongly flavored and Light Beer not strong enough for this so use a regular beer. Dos Equis (XX) or even Budweiser beer works well here. You could also used dried herbs and spices but your mouth will be rewarded if you use fresh. I learned how to cook lots of different authentic Mexican dishes from several different friends over the years. The biggest and best thing I think I learned was do not rub your eyes after handling chilies! lol Wear gloves if you like! Learned that one FAST! I also learned how to make salsa's- NOT what we think of as salsa but rather a sauce or seasoning paste that is used to then season various dishes. Making a blended seasoning paste to add to the beans is a great way to punch up the flavor. After compiling all that knowledge with my 'gueralita' background this is what I came up with. Hope you enjoy too! Oh and plan ahead! The dried beans need to soak! -- posted by mama's kitchen

Corn and Black Bean Macaroni Salad - Tex Mex

Chill a beer for this nice and spicy dish!
The elbows should be cooked al dente in well salted water to prevent broken mushy noodles. Do salt the water liberally. (2 teaspoons is not a lot once mixed with the rest of the ingredients) Seasons the pasta and avoids father salting in the recipe.
This can be eaten as a side or a main balanced meal.
I opted for yogurt and smart balance for better health. But you can use sour cream and mayo. -- posted by ~Rita~

Spicy Refried Black Beans

These are great served with the Texican Shredded Pork recipe I've posted as a topping on tostados, but its also good in burritos or as a side for fajitas or enchiladas. Originally from a September 1989 issue of Bon Appetit that featured a "Do It Yourself Tostado Party" in the Cooking for Friends section.
Queso fresco is also know as queso blanco and can usually be found in the cheese department at the deli section of your local grocery store. Monterey Jack is a readily available substitute. The overnight soaking of the beans is not included in the prep time. -- posted by Leslie in Texas

Cuban Bean Salad

Cuban cuisine is a fusion of Spanish, African and Caribbean cuisines and closely resembles that of other Caribbean nations such as Puerto Rico, Dominican Republic, and Panama of Central America. While various parts of the island were influenced by many different immigrants, the Cuban cuisines developed locally, from the influences and demographics specific to each area.
New World Spaghetti Squash

I concocted this on getting acquainted with the taste and texture of a roasted spaghetti squash (also known as a calabash squash). It's an alternative to the idea of treating the squash as a substitute for spaghetti noodles. The roasted squash really has slaw-like texture--soft yet crunchy. Spaghetti squash is an ancient New World food source in Central and South America, so I decided to try making something that combined an ancient native trio of ingredients: corn, beans, and squash. On sampling the roasted squash by itself, my first thought was "black beans," and my second was "spicy." Here's what I did, based on what I had in my kitchen this evening. I'm sure others can improve on it! -- posted by Epyllion

This versatile recipe is quick and easy, tasty and delicious, and gluten and nightshade free. It is great served hot as a side dish, you could add any meat to make it a main dish, or served cold as a tortilla-chip dip. Perfect in a warmed flour tortillas wrap with some shrimp, or a lettuce wrap with a bit of Avacado. It can be used with seafood, chicken, beef or pork as a relish.
