			<description>I didn't know what to call this so I called it Black Bean Salsa. This is a VERY good salsa and SO easy to make. It makes A LOT of it as well. So it's good for cookouts and dinners. My mom got this recipe from a friend and we made this together that night. It was mandatory that we got to the grocery store to get the ingredients for this. I absolutely loved it! I also find that it's very healthy and high in fiber. I enjoy my salsa with some WOW tortilla chips. . . or even on an egg omelette. My mom and I nearly ate half of it before we even chilled it. Or you can put it this way.. . we went through a whole bag of tortilla chips. lol. Enjoy! (I do not know how many servings this makes, all I know is that it makes a WHOLE lot of salsa. Don't let the long ingredient list scare you off, it's actually very simple to make. For any ingredients with a range of amounts, the least amount is what I like to use, the greatest amount is what the original recipe calls for. It sounded good, but I made roasted potatoes the night before and I had zucchini and yellow squash, onions and a green pepper at home, so I combined the one recipe with the other. Oh did it turn out well. It tasted better that most salsas that I get at restaurants. It isn't that spicy, but very flavorful and perfect for the summer time. 			<description>Millet a wonderful grain,that most think of as bird food.
Millet is highly nutritious, non-glutinous and like buckwheat and quinoa, is not an acid forming food so is soothing and easy to digest. In fact, it is considered to be one of the least allergenic and most digestible grains available and it is a warming grain so will help to heat the body in cold or rainy seasons and climates. 

Millet is mildly sweet, nut-like flavor and contains many beneficial nutrients. It is nearly 15% protein, contains high amounts of fiber, B-complex vitamins including niacin, thiamin, and riboflavin, the essential amino acid methionine, lecithin, and some vitamin E. It is high in the minerals iron, magnesium, phosphorous, and potassium. 
So eat your millet!

			<description>Wanted a refreshing wholesome side dish to accompany some spicy Mexican meatloaf, and this is what happened. Use a LARGE bowl to mix as it makes quite a significant amount. With the seasoning amounts given, the predominant tastes are the lime, cumin, and cilantro. My family doesn't like spicy things, so there isn't much kick to it, so you could probably double the chili powder, increase the other seasonings, and add some cayenne if you desire. The elbows should be cooked al dente in well salted water to prevent broken mushy noodles. Do salt the water liberally. (2 teaspoons is not a lot once mixed with the rest of the ingredients) Seasons the pasta and avoids father salting in the recipe.
This can be eaten as a side or a main balanced meal.
