Of course you can use whatever meat you want, I always have this roast as a left-over in my fridge so this is the perfect use for it.  There are many ways to wrap and cook tamales, this is just one.  I use canned black beans and have never tried dried ones. It's an alternative to the idea of treating the squash as a substitute for spaghetti noodles. The roasted squash really has slaw-like texture--soft yet crunchy. Spaghetti squash is an ancient New World food source in Central and South America, so I decided to try making something that combined an ancient native trio of ingredients: corn, beans, and squash. This recipe resembles many &amp;quot;enchilda&amp;quot; chicken dishes seen on zaar, with one particular difference being the use of yogurt.  This adds to the protein of the meal as well as the flavor while not adding to the calories that heavy or sour cream would.  An odd substitute you might say?  Not at all, many Indian curry recipes use it as a healthy substitute for cream.  The 'tang' of the yogurt blends well with the sweet salsa and combines harmoniously with the natural sweet &amp;amp; tangy flavor of the fresh cilantro. They are our favorite OAMC meal and they disappear very soon after I load the freezer with them! The hot-oil dipping step makes the tortillas very easy to work with and also makes it so when you take them out of the freezer, all you have to do that night is toss them in the oven to heat -- no frying mess on eating night. Roasting the sweet potatoes is absolutely the key to this recipe - I've cooked them other ways before and it turns out much less flavorful.  It looks like a lot of ingredients, but it goes together quickly and makes great left overs too!
