Potato and Leek Soup

Growing up in Scotland this soup was a favorite of mine. Over the years I have adapted it to suit my tastes. This is the full fat creamy version I use for Xmas and Thanksgiving a true treat for the holidays! But it is very easy to adapt it by using milk or half& half instead of creme fraiche, which I do at other times of the year. This freezes well, I reheat and add creme fraiche just before serving. There are creme fraiche recipes on this site the one identical to mine is Judi Caston's #34037. The servings are for holiday meals, if only for a dinner it serves about 4-6 -- posted by mrs mack

Savory Roasted Butternut Squash Soup

The 2 hour cooking time is largely unattended - This is savory and a little bit sweet, spicy, warming, thick & creamy. A perfect autumn soup to sip by the firepit after a long day of raking. My kids love this soup and ask for it - It's a great way to sneak veggies in to their diet too!
This is a three step recipe and I've kept the salt minimal as stocks are often salty - Please salt and pepper to taste! Also my OXO peeler is amazing on butternut squash! -- posted by ChandraSoleil

Vermont Cheddar Bisque

The October 11-17, 2009 issue of the American Profile in my Saturday newspaper insert was entitled "Soup's On" A former Navy Seabee (Ken Haedrich) builds hearty soups for the fall and this is one of the soups that looked delicious to me. The recipes are from Ken's book Soup Makes the Meal (Harvard Common Press, 2001). Ken says about the recipe: “No one has ever asked me, but I’ve thought about what I’d like to eat for my last meal. I’m pretty sure it would be Welsh rarebit on toast points. This soup is just a step or two removed from that dish. The flavor is virtually the same; it’s just thinner, though still quite full-bodied,” Ken Haedrich says. -- posted by Sooz Cooks

Tomato Carrot Basil Bisque

I found this recipe on allrecipes.com and added some additional ingredients. I tried to keep in mind the fat content. It's easy and I usually cook it in a crock pot. I have also used dried basil in place of fresh basil. I puree this soup using a hand held blender. Using this appliance, it maintains a chunky consistency. I would be interested in other ways to improve this recipe, as I have difficulty getting the basil flavor to stand out. -- posted by telcherj

Roasted Beet and Potato Soup

I recently roasted five pounds of beets and have been using them for side dishes. I decided to make soup last night, and it turned out quite nice. You may get more servings, but we really like our soup and 4 servings is all I got. I am sure that canned beets would also work quite well. I like evaporated milk because it brings richness with fewer calories, but half-and-half would also be good. I don't usually have fresh celery, but 1/2 cup of chopped celery could be used instead of the flakes and 1/4 tsp fresh ground pepper instead of the peppercorns. Add an hour to the cooking time if you need to roast fresh beets. -- posted by duonyte

Layered Corn, Black Bean and Chorizo Chowder

Yes layered soup, well that was their name ... "Creamy Corn, Chorizo and Bean Tortilla Chowder." It was at a small little Mexican restaurant in Taos, NM, about 10 years ago and it was amazing. The table next to me ordered it and it looked so interesting I had to try it. The soup was topped with small piles of the chorizo, avocado and olives, and cheese on top this beautiful creamy pale yellow corn chowder and then they took a bite and the bottom layer of the soup was black beans. It was picture perfect served in this big wide rimmed white bowl, it was almost to pretty to eat. Well it incorporates a spicy layer of black beans, onions and roasted jalapenos, topped with a perfect creamy corn chowder and then topped with small piles of the chorizzo, diced avocados with olives and a pepper jack cheese. A squeeze of lime and cilantro. Take advantage of cooking the chorizo, black beans and chowder well ahead of time so when it comes time to serve ... just reheat and plate up. I serve this with my chicken enchiladas with a red sauce. This is a great dish for friends or just family and it is really simple. Make some margaritas and time for party. -- posted by SarasotaCook

Fall Harvest Smoothie

This recipe tastes like pumpkin pie in a glass! You will never know it is packed with veggies and fruits and "good for you stuff". Top with a little fat free whip cream for an extra-special desert. My teen-age daughter begs for this and sometimes we even heat it up for a thick soup. The key to this recipe is to make sure you use a blender/smoothie maker that has enough power to completely puree alll the ingredients; otherwise the squash will stay stringy. -- posted by RackeSRN

Thai Butternut Squash and Corn Bisque

Ready to shake up the Thanksgiving standards? This is a great way to do it: posted in Barbara Fisher's blog, Tigers and Strawberries (http://www.tigersandstrawberries.com/). The flavors of this soup are amazing–it is somewhere between the tangy-spicy herbal flavor of Tom Kha Gai and the best butternut squash or sweet potato soup you have ever had with a little Thai curry mixed in for fun. It is spicy, sweet, tangy and rich all at the same time without being heavy or overly filling. And it's vegan. How can it be velvety smooth without much in the way of rich coconut milk and absolutely no cream?
It was the addition of the potato that does it. This is a trick she learned when she was cooking for vegan clients as a personal chef. A good creamy boiling potato like a Red Bliss or Yukon Gold will thicken soups and make them velvety smooth if they are pureed, all without adding fat or any dairy products at all. -- posted by East Wind Goddess

Homemade Condensed Cream of Chicken or Mushroom or Celery Soup

You have these ingredients already. So save yourself a trip to the store, some money, and some sodium. Here's a flavorful condensed cream of chicken soup base recipe for use in dishes that call for canned creamed soups. Use instead of condensed canned cream soups in recipes. Just add the ingredient that forms the basis of the soup. Chop mushrooms, sauté in a bit of olive oil and add for cream of mushroom soup. Add chicken for cream of chicken soup. Chop & sauté celery for, you guessed it, cream of celery. (As found at tammysrecipes.com/homemade_cream_chicken_soup )
Yields 3 cups -- about 2 (10.5 oz) cans of condensed cream of 'whatever'. -- posted by AngieME

Warming Celery & Carrot Soup

A smooth and creamy soup with just a little "bite" for those colder days. Cooked in a microwave with not too much labour input beyond preparation of the veg.

The basic recipe was a favourite from our old Sanyo microwave cookbook from more than twenty years ago.

Note:
For more or less "bite", add or take away one tablespoon of the Love Apple Sauce as you desire.

Amazing Chicken Noodle Soup With Acorn Squash

Don't be deceived by the lack of added seasonings. It is full of flavor! Adding the squash makes the whole thing rich and smooth, with a color and consistency similar to Kraft Mac'N'Cheese! Delicious! Even my daughters loved it! (3 yrs & 7 mos) I just took the chicken out for my baby girl, mashed it up, and she couldn't have enough!
This recipe makes a whole stock-pot full, and it's super easy to make, so it's a great one to make and freeze the leftovers. I was going to, but it we scarfed it all up in 2 days! -- posted by Chef #1459874

Butternut Squash With Roasted Apples, Pears and Onion Soup

A fun fall soup. Roasting of the vegetables and fruits to me just really makes this the best. A drizzle of maple syrup, chopped candied walnuts, cranberries, and a dollop of creme fraiche finishes this over the top. What a wonderful Holiday soup, but also just a good comfort soup. I make this often with grilled cheese. Smoked gouda, multi grain bread and maple smoked bacon make for an amazing sandwich. I often make a bunch of these walnuts for the garnish and store them in the freezer in a baggie to use throughout the Holiday season. They are really easy and don't take any time. -- posted by SarasotaCook

Yellow Turnip Soubise

I don't like many vegetables. I try to find lots of creative ways to make them taste better, so I can have a balanced diet. Rutabaga's( yellow Turnips) are high in vitamins and lower in carbs than potatoes and so make a great substitute in many things. They also combine with onions and rice in this simple recipe to make a rich, creamy soup that is high in nutrients and low in fat.
I found this recipe in "Recipes 1-2-3" by Rozanne Gold. -- posted by Ames0325
