Biscotti ai Pignoli (Pine Nut Cookies)

Although they are called "biscotti", they are not a biscotti in the true sense (ie: twice baked)they are really more like a cookie. They are very easy to make and are a traditional part of every Italian cookie/pastry tray, especially for weddings and other festive/special occaisions. They are also very good any old time, with a cup of coffee or a cappuccino :) -- posted by Dee514

Ginger Pistachio Biscotti

This recipe is dedicated to ChrisseyO who sent me a bag of totally awesom, addictive "Wildbite" Ginger-Pistachio Biscotti I have now made this recipe 3 times and it gets better each time, This time I substituted roasted pumkin seeds for the pistachios - excellent result and what a cost saving plus not having to crack all those pistachios. The pumkin seeds made the recipe a bit drier.but still great texture & flavor. -- posted by Bergy

Chocolate Hazelnut Biscotti

Biscotti is used to describe a long, dry, hard twice baked cookie with a curved top and a flat bottom designed for dunking into wine or coffee. The name biscotti is derived from 'bis' meaning twice in Italian and 'cotto' meaning baked or cooked. These are very nice glazed or dipped in white chocolate. Enjoy. Don't let all the steps bother you. -- posted by Barb Gertz

Spring Biscotti

Another web find. This biscotti has a fresh taste with orange zest, dried cranberries, white chocolate, and pistachios. Very light and tasty. The combination of flavors is perfect. You may want to add some orange extract or doubled the vanilla extract, or even use some lemon extract. You may need to adjust your oven temperature depending on what type of oven you use. Use an electric knife, it cuts through these biscotti like butter. -- posted by kcdelong

Honey Almond Biscotti

I love the honey flavor of these biscotti as much the almond aroma while they bake. Based on "Biscotti Napoletani" from Nick Malgieri's book, Great Italian Desserts, the three flavoring ingredients are just honey-almond-cinnamon. They're wonderful in this pure form but I mention the optional ingredients since they please my American tastebuds. Since there's no butter or egg, these biscotti are exceptionally light--imagine a crisp, honey almond toast. They're different but definitely worth trying. -- posted by TommyGato

Almond Biscotti With Orange Rind

This is my long time favorite desert, travels well, freezes well, and is great at dunking in coffee, and is amazingly easy to make. The original recipe came to me from very long ago and while OK just lacked something. It turns out that sometime is more nuts, more flavorings, and orange peel. I almost always double the recipe which then makes about 45- 50 biscotti. I have also been known to dip some of the biscotti in melted chocolate. -- posted by doctorjerry

Jelly Bean Biscotti

These biscotti are ideal for Easter. They are full of sweet colored polka dots. Choose red and green jelly beans for Christmas or black and orange for Halloween but you'll enjoy them any time of the year. This is very typical of California adaptations *wink*. -- posted by Annacia

Orange Biscotti

These crisp, crunchy cookies are based on the classic Italian version. These contain no nuts and are a slightly softer than the original version, which makes them more child friendly (mine adore them!).
Butter Pecan Biscotti

The holidays are here and I was looking for a cookie selection to use a bag of butterscotch baking chips and at the same looking for a biscotti recipe. Decided to join the two ideas and then couldn't find a recipe, so I decided to make my own. Personally, I like to keep the nuts in my biscotti fairly large because I like the way they look when you slice the logs. Chopped works just as well. -- posted by justcallmetoni

American-Style Vanilla Biscotti

This recipe was featured in an email from the www.kingarthurflour.com website: "Here it is, the simplest, easiest biscotti recipe you'll ever follow. Biscotti bake twice rather than once, and thus take a bit longer start-to-finish than normal drop cookies. But the dough is put together exactly like drop cookie dough. And if your kitchen skills include shaping a meatloaf and slicing a loaf of bread, you've got what it takes to make delicious, gorgeous biscotti." -- posted by senseicheryl
