Chocolate Hazelnut Biscotti

Biscotti is used to describe a long, dry, hard twice baked cookie with a curved top and a flat bottom designed for dunking into wine or coffee. The name biscotti is derived from 'bis' meaning twice in Italian and 'cotto' meaning baked or cooked. These are very nice glazed or dipped in white chocolate. Enjoy. Don't let all the steps bother you. -- posted by Barb Gertz

I had some pistachios in the freezer that I needed to use up and I developed this recipe. I think it came out quite nicely, not too sweet. Hazelnuts or almonds can be substituted for the pistachios (make sure to toast them first).
Chocolate Chip Cookie Sticks

These chocolate chip cookies are like biscotti--twice baked. Everyone says they are DELICIOUS, some people used milk chocolate chips. For a more crunchy cookie bake a little longer on the second baking. Cooling time not included in time.
Make-Ahead Tip: Bake cookies as directed; cool completely, place in a freezer container or bag and freeze up to 3 months. Before serving, thaw for 15 minutes. The recipe comes from Better Homes and Gardens. -- posted by Barb Gertz

Ellie's Biscotti

This recipe is from a friend of mine in Boston. She and I used to work together and have continued our friendship into retirement.
One day she emailed me that she was sending me some goodies, but did not tell me what it was. Only that it was homemade!
Imagine my surprise when I received a very heavy package via parcel post! I anxiously opened it and found a great, and big, Rubbermaid container filled with homemade Biscotti!
Boy, were they scrumptious! -- posted by Nana Lee

Fantastic Double Chocolate-Pecan Biscotti

Since biscotti is a huge favorite at my house I am always searching for good biscotti recipes, this one is fantastic! --- if you make biscotti and love chocolate, then this is a recipe you should try! --- since the batter is quite stiff this dough is best prepared on a heavy-duty stand mixer, the recipe can be completely doubled to make four logs, they will keep tightly covered at room temperature for one week, or frozen for one month, feel free to use any other chopped nuts that you desired, walnuts work great with this also :) -- posted by KITTENCAL

Chocolate, Cherry and Chile Biscotti

If you like biscotti, expand your palate a bit with these deliciously spicy cookies. Chocolate and chiles are old friends, and the cherries add sweet contrast. Candidates for dipping include full-bodied wines like Zinfandel and Cabernet Sauvignon, port, and espresso, and just plain old coffee, tea or milk! -- posted by Nana Lee

Triple Chocolate Almond Biscotti

This is a decadent biscotti. The recipe comes from the Nestle company to promote their new "chocolatier" chips but any bittersweet chocolate could be subbed. These are rich and chocolate heaven. I have made them a couple of times the directed way and now plan to try different flavorings such as chocolate/orange...yum!
Passover Chocolate Mandelbrot (No Flour, Better Than Biscotti)

Modified from a Canadian newspaper - this is AMAZING stuff! The best description of texture I can give is that this is not totally dry, but it's still crunchy.
You will be questioned if it's really Kosher for Passover, you will be questioned how this is possible to make without flour. It's possible AND it's delicious, just try it! Don't half this recipe, it makes a lot, but they will fly off your table!
Try variations like cranberries and your favorite nut or dried cherries and almonds instead of the chocolate chips and walnuts. -- posted by AniSarit
