			<description>Jam tarts are a quintessential British teatime treat - little crispy short crust pastry rounds filled with assorted fruit jams, such as strawberry, raspberry, apricot, blackcurrant and lemon curd. They were the first things my mum taught me to bake when I was little,  and in turn, I taught my daughter how to make them when she was very small. Here I have suggested that as a Valentine's Day treat, you top the jam tarts with a little pastry heart........after all, the way to a loved one's heart is through their stomach! Jam Tarts normally do NOT have any pastry topping however, so for the rest of the year, just make them as posted with no pastry lid, or use other suitable shapes appropriate for a special event. I have posted homemade short crust pastry, it is so easy to make and is far superior to ready-made, although I DO use ready-made when I am short of time! Try to use good quality or homemade jams and jellies, the higher the fruit content, the less the jam or jelly will bubble out of the pastry case. These are essential for any English Tea Party, especially if Alice in Wonderland has been invited............along with the white rabbit! Fling them all into an ovenproof gratin dish; whizz up a shortbread crumble topping - and Bob's your uncle and Fanny's your aunt, as we say down our way!!!! You can find it in the natural section most likely and it works like cornstarch as a thickener but healthier for you than cornstarch. I am going to try making a pie with this mixture and give it a pecan pie shell with crushed pecans that have been browned in butter and cinnamon. 			<description>Yaay!  It's strawberry season right now here in California, time to make my favorite pie.  Want to post this for safekeeping here as I just had a scare and couldn't find my cookbook - this is not a recipe I want to lose!  Got it from Good Housekeeping Book of Desserts, which is one of the best cookbooks on sweets that I have ever found!  I have been making this pie for years now, and it's one of the few things that my incredibly over-picky kids will eat.  Does take a bit of time and effort, between making the crust and sweetening/juicing up the berries, then baking and letting it cool for a bit.  You can vary the top crust, I like the &amp;quot;criss-cross&amp;quot; lattice look for this one with the juicy red berries oozing on top. 			<description>This is an absolutely scrumptious pie, based on one originally published in The Vancouver Sun.  With its fresh summer berries piled high in a baked pie shell and a glaze poured over top, it makes a nice change from traditional pies, where the fruit is cooked.  It makes a wonderful summer dessert with a dollop of sweetened whipped cream on top.  (I am from Canada, but for you Americans, it would make a wonderful 4th of July dessert (strawberries, blueberries AND whipped cream) (smiles).  The original recipe in The Sun called for fresh raspberries (2 cups for the glaze and 6 cups for the filling), and it's wonderful with that too, but raspberry season is very short, and this strawberry/blueberry filling is wonderful too. 			<description>I live in Florida and it is difficult to make a non-runny blueberry pie due to the humidity, but this recipe is perfect.  I got this recipe through trial and error of 5 different published recipes.  The filling is dense enough so that little loose liquid is present, but you still feel like you are biting into whole berries when you eat it.  This fixed my problem of getting a pool of liquid in the bottom of my pie shell.  I recommend using only fresh blueberries.   
Use a 9-inch deep-dish pie plate.  Regarding the crust, the store-bought frozen crusts did not work properly for me.  They either didn't bake on the bottom or resulted in an overflow of pie liquid into the bottom of my oven.   I recommend the Pillsbury brand rolled pie crust dough found in the refrigerator section of the grocery store (by the biscuits/crescent rolls).  These bake nicely, are easy to work with, and have an appropriate amount of moisture.
