			<description>Didn't have much in the house, and wanted something with pasta, so I invented this. My 15 month old loved it, as did my husband! I made this with rotini as that was all I had on hand, you can use whatever pasta you prefer. You can also add more tomatoes if you like more of a chunky sauce. This could also be made with a Jar of spaghetti sauce, or whatever your favorite sauce is. 			<description>When I was little my mom made this recipe a lot.  It was during World War II and it was very inexpensive to prepare.  I loved it.  I guess you would call it a comfort food for me as I was always so happy when I asked, &amp;quot;What's for supper&amp;quot; and Ma answered, &amp;quot;Chop Suey&amp;quot;.  She never called it &amp;quot;American Chop Suey&amp;quot; except on her recipe card.  It was always &amp;quot;Chop Suey&amp;quot;.  I can't believe that I haven't posted this as I still make it often.  I guess I figured it wasn't fancy enough and everyone knew about it, but because I don't want to lose it, I am posting it now. I got this recipe from a former roommate, and we used to eat it pretty much weekly. This keeps well in the refrigerator, but you can eat it right away too. The feta cheese adds a nice punch, but the mozzarella makes for a more comfort-food feel; try both if you'd like! I like to use a mix of parmesan and white cheddar or you can use a monterey jack cheese if you prefer that, but it is just creamy and comforting. I love to bake a ham once a month.  I cut it up and freeze and that way I always have a quick meal waiting to be put together. So many people only cook ham on holidays, but it is a great resource and inexpensive. I really like flavor of this soup's base as it is seasoned with garlic, herbs, tomatoes and chicken.  This is a great meal to make when time is short.  Lastly, I do not care for red peppers.  In most recipes, I won't include them. Also try making it cheesier or adding or substituting cheeses.  I've made an excellent one with brie. I've also used canned tuna instead of chicken for a quicker version.

I have also experimented with different seasonings and rubs for the chicken or tuna, including celery salt, cayenne, rosemary, cumin, etc.

Changing the pasta also greatly changes the flavor as well, in my opinion.

Can be made with dried spices but I recommend fresh!

The cheese is simply what I tend to keep in the fridge and therefore what I had to put the recipe together. It was a good combination, but you can substitute whatever you would like for it. Equally, you can leave out the ground beef if you'd like it to be vegetarian. 			<description>This is a great way to use up leftover ham, some frozen peas and some pasta and you have an amazing quick dinner.  Now I really think that a combination of the fontina cheese and the parmesan is what makes this good. You can use other pastas, but I happen to like the penne or the small penne.  My favorite is to serve this with balsamic grilled portabello mushrooms and a good glass of red wine. You just mix all the ingredients on the stove and come back and hour later.  The onions get meltingly soft and sweet.  It'salso great with some crumbled blue cheese. 
If you use homemade pasta, which is more absorbent than spaghetti, you should start with 1 tbsp more butter when making the sauce.
TO MAKE AHEAD : You can cook the sauce entirely in advance up to the point where you add the parsley. 			<description>The original recipe came from the San Francisco Chronicle.  The original recipe calls for arugula (which I love) but it's hard to find sometimes, so I switched to fresh spinach.  If you can find an Italian tonno in olive oil (Bumble Bee has one in the gold can which I can easily find), then it's worth the extra money to use.  However, I have used tuna in water when it was all I had in the pantry.  Just drain the water and add a little olive oil to the can, since this tuna is a bit drier than the Italian version.  Let it marinate for about an hour, then drain it and use. Canned tuna has never tasted so good!!!   I love this recipe for a quick dinner that I can throw together out of the pantry in less than 30 minutes, and DH was surprised how good it was when he first tasted it.  This is a good base recipe to add extra goodies (sun dried tomatoes, mushrooms, artichokes, black olives, capers, etc.). 			<description>I first was introduced to this recipe when I was reading the book, &amp;quot;Belong to Me&amp;quot;, when the main character &amp;quot;would have sold her soul&amp;quot; for a plate of this. I had to do further research and hours later, found a recipe that I was happy with sharing. There are American versions of this and Italian versions of this. The Italian version has you begin by reducing the anchovies into a paste, reducing their fishy taste. It also has you cook the sauce longer, mingling the flavours and reducing the tomatoes into their own paste. Although excellent the 1st day, it is even better the second so plan ahead to make more! And please, RESIST the urge to cover this with cheese!
