Adding the squash makes the whole thing rich and smooth, with a color and consistency similar to Kraft Mac'N'Cheese!  Delicious!  Even my daughters loved it! (3 yrs &amp;amp; 7 mos) I just took the chicken out for my baby girl, mashed it up, and she couldn't have enough!

			<title>OAMC Basic Chicken or Turkey Taco Filling</title>

			<description>This is a basic filling using cooked chicken or turkey and a chili seasoning packet for tacos, chili, or enchilada filling. I came up with this recipe on the fly after a busy day of work, school, and basketball practice using what I had in the refrigerator and pantry. I didn't have any taco seasoning, but had a lonely packet of chili seasoning from Aldi and used that instead. My picky kids, who were never keen on tacos before, loved it. This can be made ahead for tacos, chili, or enchiladas. Note: My kids do not like hot and spicy, so this is very mild. Add jalapenos or chipotle chilies to turn up the heat. Also my kids are small eaters, so I cut the tortillas in half and make mini wraps for them which works better for little kids than unwieldy tacos. 			<description>This is an easy put together dish which has lots of flavor.  I am especially fond of it because of the wine and tomato base vs. soup based. A key to this dish is to pan sear the chicken first, the flavor is just so much better to me. The shrimp is added 30 minutes before serving which will give you time to make a side of polenta with added parmesan cheese, or you could use rice; and a small side salad. Destined to become a family favorite because kids love it and parents love the simplicity of this oven-to-table meal.    I had a great result making this with bone in chicken leg thigh quarters.  I had one piece that was skinless, and we discovered that using skinless does allow the flavor of the glaze to permeate the chicken better.  This was a hit with my whole family - including my hard to please 3 year old.  
I used ketchup, reduced sodium soy, and lite maple syrup.  Ingredients I happened to have on hand.  This could NOT be easier.  Adjust cooking times as needed for bone in cuts.  Great with white rice and steamed broccoli.

			<description>This chicken was my most requested dinner when I was living at home.  Now I make it quite often.  It's perfect for a worknight because it's super simple.  I'm not usually a fan of swiss cheese but it definitely gives this recipe it's unique taste. The bundles will stay together quite well if you place them crease side down but toothpicks may be used if needed.  I love serving this with rice and mixed veggies. 			<description>I got this fabulous recipe when I vacationed at Disney's Animal Kingdom Lodge. The soup was on the Boma - Flavors of Africa Buffet. When I inquired about a cookbook with the recipe, the waitress went &amp;amp; got the recipe from the kitchen. This is posted in the same manner I got it, but I'll tell you that finding 1 gallon containers of broth is difficult. So I use 10  14oz cans, it's a little more, but just as good. I also usually use 2 poblanos. Using ready to go chicken tenders is a big time saver. I just sautee them in a little sesame oil &amp;amp; garlic before I dice them.  This soup is very tasty and borderline addicitive. I've made several times since I got back. It is absolutley delicious the next day and freezes well. Fritos or tortilla strips and cheddar cheese are optional topping's as well as the sour cream. I like it the best with only sour cream which make it HEALTHY which is alway a major plus! You do not need to pre cook the chicken, just put it in raw OR frozen, which makes it super easy. For spicer soup, get the spicy RoTel tomatoes and/or Medium or Hot Tostitos Salsa but you will find that it has a lot of flavor and is quite spicy for not having to add any extra spices -- SO easy!!
