			<description>Pineapple, mango, banana and coconut....why shouldn't breakfast remind you of a caribbean vacation?!?!  I've been playing mad scientist with the blender lately and this is my favorite concoction yet.  The most important thing I've learned about smoothies:  FROZEN FRUIT IS THE WAY TO GO!  If you allow it to partially thaw so that the fruit is still quite icey, but softened enough to blend easily, you do not have to add as much ice and thus get more intense flavor.

			<description>I used to work in the kitchen of a summer camp back in the day and we would always make this recipe for the kids at snack time and set some out for breakfast. During the breakfast hours I would see some kids pour milk over it and have it as a kind of makeshift cereal. Of course we would make this in tremendous quantities so I've had to do some math and lessen the ingredient amounts needed. So just a quick tip: if you decide to double this recipe, please use 3 large eggs instead of 4 small eggs. I had leftover potato &amp;quot;meat&amp;quot; from making potato skins so I made home fries with them, from 8 small potatoes without skins so that probably equals about 4 regular potatoes and 6 small ones. If you plan ahead on making home fries for breakfast, then you can pre-bake potatoes for this. Please note that cooking time does not account for baking the potatoes! This assumes that you have leftover baked potatoes and are using them this way. Raw or boiled potatoes will not work. This makes 1 large serving, if you plan on making enough for your family pre-bake more potatoes.
