Potato and Chorizo Empanadas

These are tasty meat pies filled with a spicy sausage and potato filling. The empanada is a staple in Hispanic homes and restaurants. I love them and make a lightened version I found in a magazine. -- posted by Dawn

Sausage & pepperoni added in gives this pasta dish a scrumptious change of pace. Fantastic for pot luck. Throw some shredded mozzarella cheese in, give it a stir and viòla!
Baked Manicotti

Found this one on Allrecipes.com and tweaked the ingredients just a bit to fit the picky Italian DH. Ground sausage as opposed to ground beef gives the dish much more flavor. Do ahead tip would be to stuff the shells the night before, place in red sauce, refrigerate, and then make the white sauce just prior to cooking. Watch the amount of chicken bouillon as it can make the white sauce way too salty. Serve with some garlic stuffed/sauteed artichokes (Recipe #61210) and a small garden salad. -- posted by Chippie

Fresh Country Breakfast Patties

Try fresh homemade sausage for breakfast for a change! It's fast and easy, and much better than the processed store varieties with all of their chemicals and fillers. You can easily mix it up, freeze it, and thaw as needed. The fennel can be left out if you don't really like it, and it's best to use meat that has a little fat to it.
Sausages, Pepper & Mushroom Scramble

I had some hot Italian sausage and wanted something satisfying but easy & fast - I saw my recipe#37781 played with it and came up wi th this recipe. Bratwurst will work if you don't want it too spicy or any other of your favorite sausages. Add or take away some of the heat - A recipe is only a starting point to satisfy your taste buds. I simmer the sausages in water or beer first to remove any fat - it is not essential to do this. Hope you enjoy it. -- posted by Bergy

BBQ Beans

This easy to prepare dish turned up, of all places, at my grandfather's wake 30 years ago. After a good deal of pressuring the cook, the recipe was obtained and has been a family favorite ever since. No major family function goes by without this being on the menu! This can be tossed together in the morning or the night before and then put in the oven at your convenience. -- posted by EQJunkie

Traditional British Toad-In-The-Hole and Mini Toads Too!

Comfort food at its best! A traditional recipe handed down to me by my Mum and her Mum before her......it was my favourite after school tea time meal & is still a firm family favourite even now! I serve mine with lashings of onion gravy and piles of fluffy & buttery mashed potatoes. I used to make mini versions of this recipe for my daughter when she was little - they make great appetizers before a Halloween/Bonfire night supper or a children's Party! For the mini version, just use a small cake/pie tins or a small muffin tray and split your sausages into quarters OR use cocktail sausages. The following recipe is for 4 people served with potatoes & gravy - the recipe can easily be doubled for more people or if served by itself. -- posted by French Tart

Karen's Lasagna

A lasagna fashioned after my own recipe #139956. As with that recipe, I usually just dump everything in the pot without measuring it, but decided that if I wanted to post it, I had better measure so that others can at least have a starting point. Tweek it to your own tastes by adding either spicy or sweet Italian sausage. I like the bite of spicy. The spices listed here are approximate. Taste often and add more as needed. Just remember, that although you can add spices all day long, you can never remove them once they are in the sauce so add a little at a time, simmer a short time, taste and add more if desired. Make the recipe your own in the comfort of your kitchen by taking liberties with it. I won't mind in the least. It is what I would do if this recipe was posted by you. -- posted by Karen From Colorado

Baked Sausage-Stuffed Jumbo Pasta Shells

A Canadian Living hit with the Ontario ZAARians, at our Annual Appy-fest. While this recipe actually calls for mild Italian sausge I used Bajan-seasoning called Delish-Dish in a meatball stuffing. I doubt that many ZAARians have "Bajan Delish-Dish" in their pantry. To stay true to the original recipe, therefore, I shall post the recipe as it appears in Canadian Living.. I like the recipe because of the ease with which ingredients combine to produce an interestingly flavourful filling. Can be used as a main course, or appetiser. -- posted by TOOLBELT DIVA

Baked Sweet Potato "hash"

I made this up when I had leftover jimmy dean sausage to use. It's good for any meal of the day! Really you could use any type of sausage- Italian or Chorizo ( Spanish sausage) might add a different flavor! The seasonings/ herbs: you can add as much or as little as you want- depending on your taste. The baking/ cooking time is approximate- I did this in a dorm kitchen so the oven cooks a little faster. -- posted by Chef #1149117
