Macie's Chili

This recipe was given to me by my friend Macie. I'm not a chili purist so I don't judge a chili on ingredients. I judge it on taste and whether I'd dress a hot dog with it. :-) This, in my opinion, is the best chili I've ever tasted. It tastes great by itself with a little cheese and onion, and goes great with anything you'd put chili on. It is especially tasty over steamed rice. This is a mild chili. If you like it a little hotter, you know what to do. I hope you enjoy. -- posted by graftonr

Kielbasa Cabbage Skillet

Don't know the name or origin of this meal but my granny made it and then my momma made it and now I do, Probably not a very healthy meal but I consider it comfort food and what comfort food is healthy really? I use green cabbage but I don't see why you couldn't use the purple kind if it is your preference. Sometimes my granny would add some cubed potatoes but I usually forget and don't really care for the addition. Actually I guess there are a lot of things you could add to this to make it your own. Happy cooking! -- posted by Chef #938586

Super Sneaky Sausage Rolls

A great treat you can pack it with vegies and anything goes. Just adapt to suit what you have in the house. They freeze well and you can use any combo of vegies and herbs you like even a handful of grated cheese. Add some seeded mustard or worcestershire sauce or any other flavourings to your/the kids taste. If your kids are extra fussy puree onion , garlic and herbs in with vegies. Otherwise you may wish to soften onion slightly before using in recipe so the taste is not as strong. -- posted by LBella

Jimmy Dean Warm Potato and Sage Sausage Salad

I found this recipe on Jimmy Dean's website, and it's a different variation on your traditional potato salad. I was hesitant to make a potato salad without mayonnaise and just mustard, but it's quite good. I used Jimmy Dean's all-natural spicy sausage because I didn't have the sage sausage, and I added sage to the dressing. I also used basil, oregano, marjoram, and thyme but maybe I'm a little excessive. I didn't have red bell peppers, but I did put in yellow and green. I used 2 kinds of potatoes (red and yukon) and a spicy brown mustard because I didn't have whole grain mustard. My bell peppers and parsley were frozen, so I tossed it in with the potato mixture toward the end of cooking. Very fun! -- posted by AmyZoe

Becky's Jambalaya

I found this recipe in The Best of The Best of Idaho Cookbook/Caldera Kitchens. This is different from any jambalaya I've ever tried because of the roux (which has a nice gravy texture) and the spicy rice, but it's comfort food at it's finest. Although a little labor intensive, it's well worth the end result. I used chicken, crab, and spicy smoked sausage, but use what you have on hand or what your tastebuds prefer. The original recipe calls for 1/2 teaspoon file' (optional), but I left it out of the recipe because it wasn't recognized as a food when I tried posting it. I left out the MSG and file' when I made it and used fresh parsley. -- posted by AmyZoe

Easy Spaghetti Bake

A co-worker gave me the basic recipe and I made a few changes to make it super easy. It has been a pot luck favorite. I prefer Angel Hair pasta but regular spaghetti noodles can be used. Also, using Italian Sausage instead of hamburger or Mexican blend cheese instead of cheddar may make this recipe more to your tastes.
As my grand kids say, "This is yummy grandma". Thanks Henry and Janet for a winner! -- posted by barb-j

Black Bean Soup With Sausage

This is from All You magazine. I haven't tried it yet, but it looks delicious. Instead of black beans you can try navy beans, red kidney beans, or black-eyed peas (or a mix). You can add a cup of yellow corn, a can of diced chiles or chopped jarred pimientos just before the end of cooking time for a shot of color and flavor, or sprinkle in a few drops of hot sauce. Also, instead of sausage, you could stir in cut-up leftover ham, chicken or beef. Or try chicken or turkey sausage.
Sausage Stuffing Casserole

At our house, you can never have too much stuffing. We used sausages from a little local grocery. They had a little bit of spice which really added great flavor. Feel free to use any cream soup ( celery, mushroom, potato would be good too.) If desired, combine half of stuffing mix and combine with 2 tbs. of melted butter and use as a crust on top of the casserole. This will yield a little creamier casserole. -- posted by sbera007

Baked Sausage-Stuffed Jumbo Pasta Shells

A Canadian Living hit with the Ontario ZAARians, at our Annual Appy-fest. While this recipe actually calls for mild Italian sausge I used Bajan-seasoning called Delish-Dish in a meatball stuffing. I doubt that many ZAARians have "Bajan Delish-Dish" in their pantry. To stay true to the original recipe, therefore, I shall post the recipe as it appears in Canadian Living..
Baked Sweet Potato "hash"

I made this up when I had leftover jimmy dean sausage to use. It's good for any meal of the day! Really you could use any type of sausage- Italian or Chorizo ( Spanish sausage) might add a different flavor! The seasonings/ herbs: you can add as much or as little as you want- depending on your taste. The baking/ cooking time is approximate- I did this in a dorm kitchen so the oven cooks a little faster. -- posted by Chef #1149117

Hawaii Da Kine Burgers W/ Sweet-Chili Glaze & Goat Cheese

Sutter Home's 2008 Build a Better Burger ® Winner!!!!
"Da kine" is a key phrase in Hawaiian Pidgin, the language of the "locals." It can mean almost anything, but commonly refers to something good or genuine, or as in this case, "the best."

This burger is as local as it gets, both in taste and ingredients. The patties are tender and juicy, thanks to fresh papaya and sweet onion, and are spiced with Hawaiian Portuguese sausage, which is so popular in Hawaii that it is on every breakfast menu (including McDonald’s). The accompanying salad employs heating oil to its smoking point, a local cooking method, resulting in a dynamite burger accompaniment. To complete the Hawaiian flavoring, I added a sweet glaze (Hawaiians love sweet and savory) and was inspired by our award-winning goat dairy to create a mouth-watering ginger-infused cheese spread. Ho, dat's da kine!

Italian Vegetable Soup

This is a great way to use up fresh garden zucchini if you've eaten enough of it fresh and need to mix it up a bit. I found this recipe from Taste of Home 30 Minute Cookbook, and I love it because a delicious lunch or dinner is done quickly.
Haloumi, Sausage and Pesto Skewers

A simple budget-conscious and yummy everyday recipe with no pretensions to sophistication, which I've adapted from an online recipe from the Australian magazine 'New Idea'. The recipe uses beef sausages, but obviously you could use your favourite sausages. You could also vary the capsicums (or peppers) and use more than one coloured pepper; and you could add a slice of onion onto the skewer. My personal preference is red peppers, but just go with your preference! Love the pesto and haloumi in this recipe! :) -- posted by bluemoon downunder

A Grape Picker's Lunch! Sausages and Lentils With Thyme and Wine

I am lucky enough to live in the Cognac and Pineau grape growing area of South West France - we also grow grapes for the excellent local (Charente-Maritime) wine in this area. Our woodman, Monsieur Jacquot, has a small chateau with several vineyards, and every year we are invited to join in on the first or last day of the "Vendange" - the grape harvest. And, every year, Madame Jacquot prepares and cooks the most delicious food for all of the grape pickers, family and invited friends. This year (2009) the harvest started on the 1st October, and this is the dish she made for us, served simply with fresh salads, assorted local breads, local butter, cheese and of course local wine, pineau and cognac. I asked her for the recipe and she rattled out the ingredients at a rapid pace, whilst I scribbled them down on the back of an envelope! I have recreated this recipe at home twice now, and this is ALMOST as good as hers is! (Mind you, she set hers out on long tables with white linen and beautiful old vintage crockery.......I found out that the white linen were bed sheets! NEVER used on a bed she stressed, kept for large gatherings.) The key to this recipe is SIMPLICITY and GOOD sausages and wine. I used local Toulouse sausages, meaty and with a high 85% meat content. But you can use ANY good, meaty sausages that you have available locally - I bet high quality venison or Angus beef sausages would be brilliant in this dish. Also, DO try to source “Lentilles Vert de Puy” – green Puy lentils; they make all the difference to this wonderful harvest dish. I hope you enjoy this recipe as much as we did, sitting at the long table in the old barn, under ancient beams and with beaming faces and loud laughter. ( PS: I cut this recipe RIGHT back from 30 people to just 4! Please adjust the amounts to suit.) -- posted by French Tart

Classic italian sausage sandwich that reminds me of the ones that I would get when I grew up in Chicago. -- posted by emma1222

Bean and Smoked Sausage Chowder

A simple and easy to make hearty soup recipe I tossed together one rainy day with just a few things I happened to have on hand. It rivals many soups made from scratch in both flavor and satisfaction...yet, even a young child can combine these ingredients and follow the simple directions and perhaps amaze their Mom or Dad at mealtime. Ready in just 20 to 25 minutes...easy clean-up too! ...just one pot!
Hearty enough to be a main dish too. -- posted by Chef #408832

Traditional Clambake

I picked up this recipe at a Ralphs grocery store. I'm not a big fan of clams so I haven't actually made it yet but I don't want to lose it. -- posted by kimemeki
