			<description>This is a very traditional dish from Yemen and is made with Oxtail - hence it's name 'Akwa (this is the Yemeni word for Oxtail or literally &amp;quot;the thickest part of the tail&amp;quot;. It has one of the lengthiest cooking times I've encountered, but really is worth the wait (&amp;amp; you can get on with your chores whilst it's cooking as it needs little attention). I have a feeling that this could also be tweaked a little to accommodate crock pot cooking! I think the reduction of the bottle of red at the start is the secret to its rich, full flavour.  I've adapted Sandra's recipe to one for a slow cooker, so it uses a little more stock. 			<description>Jersey is the largest of the Channel Islands.The island is usually the hottest place in the British Isles during the summer months, with the temperature averaging a few degrees higher than the mainland. 

As the island is neither part of the EU or the UK, it is a popular 'duty-free' destination.
 Jersey has a rich and varied history, with several wars and invasion attempts over many centuries.The island was part of the Duchy of Normandy in the 10th century and became part of the Anglo-Norman realm in 1066.

The island's history is reflected in the French road names and typical Jersey surnames, as well as in the many historical French artefacts and monuments that can be found around the island.
This is a traditional recipe, and no self-respecting Jersey woman would be without her earthenware bean crock, or casserole, in which to cook one of the most filling and tasty of all the island's recipes. So popular was this bean dish that every farmhouse had its bundles of drying French beans hanging from the rafters waiting to be shelled in the long winter evenings. Town folk used to hang their beans in the garage. For some Islanders this was a traditional supper dish; others had it for Sunday breakfast. Mr. Heinz is supposed to have taken the idea for his famous baked beans from the bean crock of Jersey emigrants in Canada. Prep time includes the overnight soaking for the beans. 			<description>Cobanac is kind of goulash sheep and cow-boys used to eat while watching their herds. You eat it with a spoon, so the pieces inside has to be bite-size. It is traditional meal  from Slavonia (eastern part of Croatia)and people from there are very proud of it. They have annual Cobanac festival where there is competition in making cobanac. They cook cobanac in large bronze pots on tripod over open fire. Of course, everyone will tell you that their stew is the best one. This is how I do it. 			<title>A Grape Picker's Lunch! Sausages and Lentils With Thyme and Wine</title>

			<description>I am lucky enough to live in the Cognac and Pineau grape growing area of South West France - we also grow grapes for the excellent local (Charente-Maritime) wine in this area. Our woodman, Monsieur Jacquot, has a small chateau with several vineyards, and every year we are invited to join in on the first or last day of the &amp;quot;Vendange&amp;quot; - the grape harvest. And, every year, Madame Jacquot prepares and cooks the most delicious food for all of the grape pickers, family and invited friends. This year (2009) the harvest started on the 1st October, and this is the dish she made for us, served simply with fresh salads, assorted local breads, local butter, cheese and of course local wine, pineau and cognac. I asked her for the recipe and she rattled out the ingredients at a rapid pace, whilst I scribbled them down on the back of an envelope!  I have recreated this recipe at home twice now, and this is ALMOST as good as hers is! (Mind you, she set hers out on long tables with white linen and beautiful old vintage crockery.......I found out that the white linen were bed sheets! NEVER used on a bed she stressed, kept for large gatherings.) The key to this recipe is SIMPLICITY and GOOD sausages and wine. I used local Toulouse sausages, meaty and with a high 85% meat content. But you can use ANY good, meaty sausages that you have available locally - I bet high quality venison or Angus beef sausages would be brilliant in this dish. Also, DO try to source Lentilles Vert de Puy  green Puy lentils; they make all the difference to this wonderful harvest dish. I hope you enjoy this recipe as much as we did, sitting at the long table in the old barn, under ancient beams and with beaming faces and loud laughter. 			<description>I know there are hundreds of recipes for Traditional Beef stew out there, but this is how my grandma used to make it, and I continue to make it the same way. Slow cooked on the stove in my large cast iron pot for about 2 hours, maybe a bit more if needed in a red wine and beef base with lots of herbs and fresh vegetables. Now having a garden we even used fresh peas. But always fresh vegetables and vegetable stock not broth seemed to make all the difference.  Even the mushrooms we got from a local mushroom grower, but now a days you can get some great mushrooms from any of the local farmers market or the grocery store.  I have 4 or 5 variations of stew that I make, but come back to this recipe every time. Up in MI, during the winter months we would have a big pot of stew and play Euchre (yuker) till all hours of the night. Since moving to FL, the first cold night of the year, we continued the stew and card tradition. Even after I got married, the tradition continued. I save my version for special occasions when I want a really hearty shared meal and I love the way the beans melt into the sauce lending their luxurious almost creamy texture to the finished dish.  Originally this was made by African slaves using fatty offal scraps and as tasty as it was (I've tried this version and it is pretty good!) many people nowadays, including myself, make it lighter and use better quality meats.  The Orange and Coriander salad is not compulsory but comes very highly recommended. I came up with this on one of those 'there's nothing in the house to eat' nights and the kids loved it! They named it Winter Stew because it was in the winter and it's been a winter staple on our menu ever since. We've also made this with Steak-Umm and it's great with that too! This is a lovely stew that I make all the time, as it happens I'm posting this as I cook it - a great winter warmer. Originally it was just my basic recipe, how mama used to make it, but after seeing various combinations over the years, I've changed it slightly and now I don't think it get's any better.
I use &amp;quot;casserole steak&amp;quot; for this and it's beautiful, and reasonably priced. You can use more expensive steak or cheaper cuts of beef, but this is already a lovely dish that is made at a very low cost.
I add homemade cheese &amp;amp; chive dumplings (I'll post my recipe after I have posted this one) and put them into the stew 30 minutes before the meal is ready.

			<title>Easy Beef Stew Baked in a Cast Iron Dutch Oven</title>

			<description>This is in the oven right now and it smells so good, we can hardly wait for it to be done!  No browning necessary.  Company coming?  Toss in another potato and carrot - this recipe is forgiving!  Serve with Recipe #348286, hot and buttered.  My youngest brother would find out I was making this stew and biscuits and he would invite himself over and eat me out of house and home.  His favorite way to eat this stew was on top of buttered biscuits.  I think with a salad and dessert this would serve about 6 but around here I would say it serves 4.    ***UPDATE***  This recipe is for a cast iron dutch oven with a heavy tight-fitting lid.  I've made this a million times and have had left-over gravy for noodles, rice, etc.  Make sure you don't bake at any higher temperature than 300* and you don't use corningware or any other casserole. It has great, easy to find and healthy ingredients.  Made in the crockpot.  Can be ready for you to come home to (and smells incredible).  Just pay attention to the canned/stewed tomatoes you pick up to make sure they are vinegar free.  Also if you are concerned make sure there isn't any high fructose corn syrup in those canned tomatoes also.  The more natural the better.  This is great even with gluten free cornbread. Stew beef would be traditional and may be substituted, but the short ribs give it an additional unctuousness from their gelatin. 			<description>This is a delicious rich-tasting stew that can also be made with beef, venison or a combination of meats.  The juniper berries really enhance the flavour so it is worth trying to find them.  I found my dried juniper berries at a health food store.  They are very strong so it's best to discard them (along with the bay leaf) as you find them in the finished dish. This tastes even better cooked a day or two in advance and re-heated.  It also freezes well. I adapted this from a recipe on a pamphlet I picked up from an elk farmer near Ottawa. Elk is very lean and also very tender when cooked slowly on low heat (or quickly on high heat).  It is very low in calories, fat and cholesterol and high in protein. Hints: I cook a batch of bacon in advance and keep in the freezer to add at the end.
