This was a staple in our house, always made in an enormous pot and simmering most of the day. It seemed like forever before we were allowed to taste test it! The measurements are mine, as Mom only gave vague instructions. There is something really special about this recipe ... everyone asks me what the secret ingredient is, but I think its the process of cooking the sausages in the sauce that makes it sooooo wonderful. 			<description>This is a very nice spaghetti sauce that gives a yummy Italian smell to your whole house.  I like to up the amount of each meat a little just because I'm a meat lover.  This is popular with my husband because it does not contain any tomato paste as so many versions do.  Thus it is less acidic, and easy on the taste buds.  Serve this over hot cooked spaghetti accompanied by a tossed salad and garlic bread. 			<description>This sauce can be divided into single servings, frozen for future use. When reheating go ahead and add some VODKA and cream for a great vodka meat sauce (here's the Polish part)! I made this with only 1 tablespoon Olive oil and lean meats trying to keep the fat down and didn't lose anything in taste!
Delicious in a meat lasagne or a baked ziti dish. Top a pizza or go a whole different way and place in a pie dish and top with mashed potatoes for a Italian shepherds pie! 			<description>This sauce turned out so good that I dedicated it to my good friend and fellow Appalachian chef, Charlie Haskins. If you peruse my recipe page, you'll note that I have posted a number of coney sauces -- this one (in my humble opinion) rates right there at the top of anything that I've created in that line so far. It takes a while to prepare but it's quite simple to make and the end product is certainly worth the effort. FREQUENT stirring is imerative! Take this one as a covered dish (with dogs and buns) to a school event, to the family reunion, or, freeze some in zip-lock bags and take it camping. It's very simple, tasty and freezes well. We like to add garlic, mushrooms, green bell peppers, basil and Italian sausage to this whenever I have them on hand. 			<description>This is my mother-in-law's recipe, which was adapted and passed down through at least 3 generations.  It's so good I could eat it by itself!  Everyone who walks through the kitchen while it's simmering is supposed to stir the sauce.  This makes a big pot, so freeze some for another great meal some other time!  Also makes fantastic lasagne by simply layering the sauce with mozzarella and lasagne noodles, then baking at 350F until done. 			<description>Sick of Serving Sour Spaghetti Sauce?  If so here is a sauce that is mild yet tasty.  If I hadn't eaten this sauce before requesting the recipe, I doubt I would have tried it since the ingredients seem unlikely.  This is an accomodating sauce; add your favorite sauteed veggies or use Italian sausage and they will work well since the base is so nice.  Add more or less tomato juice to obtain desired consistency.  If putting this into a crockpot, add more juice for cooking down. I serve this with angelhair pasta and shredded mozarella cheese as my friend, Virginia, did when we first ate this. So here's my version of the perfect topping for those hot dogs. I think I got it Just Right. 			<description>This recipe came about after 6 years of making my family suffer through a thin, watery, homemade Weight Watcher's spaghetti meat sauce; hence, the words &amp;quot;cheater&amp;quot; and &amp;quot;thick&amp;quot; in the recipe title.  Maybe my husband and son just don't have much to compare it against, but they really enjoyed this sauce.  It made me actually enjoy the whole wheat pasta that I usually just endure!  This recipe appears to be high in fat, but you will drain off the oil after browning the ground beef, if that's any consolation. 			<title>Pat's Lasagna Meat Sauce</title>

			<description>A lot of folks have their own good thoughts about lasagna ingredients, (Have you EVER had any BAD lasagna? I haven't!), but they don't always have a standard recipe for the sauce. Here, I've taken a canned spaghetti sauce, (I use Hunt's Garlic and Herb brand -- it tastes good and it's cheap!), and converted it to a nice mellow and hearty meat sauce for lasagna or for any other Italian dish requiring a tomato-based meat sauce. I have used this basic recipe for many years, making slight adjustments to the flavor as I made it each time. For about the past two years, I've decided that now, it's exactly the flavor I want for my large-pan lasagna. The end product does NOT have the tangy, tart flavor of basic spaghetti sauce, in fact, it's almost semi-sweet. I don't usually use the minced garlic in this one but if you like garlic, add all you want. I recommend adding any minced garlic AFTER the sauce has been blended -- saut&amp;eacute;ing the garlic along with the onions can make the sauce a little bitter. Many times I have used this sauce to make a huge pan of lasagna that I was taking to the homes of loved ones after a funeral. In every instance, it was always well-received by the families and the crowd went for the lasagna before anything else. I never see leftovers. This recipe makes a LOT of sauce but you'll be glad to have the extra in the freezer (I use sturdy, quart zip-lock bags) for spaghetti later at the end of a hectic  day when you don't feel much like cooking -- it goes really well with store-bought meatballs too -- I get the Italian ones at Sam's Club. 			<title>Marchand De Vin (Mushroom Wine Sauce) from Scratch</title>

			<description>I only make this sauce once a year as it is time intensive (although not difficult), but the results are worth it for special occasions.  I make it in steps over several days.   It is a combination of several different recipes, so I am posting it here so I don't have to flip through books and pieces of paper next time I make it.    It is fantastic with Beef Wellington, which is what I usually make it for, but would be great with other roasted meat such as prime rib, etc.    Make sure to use a high quality dry red wine (cabernet, burgundy, zinfandel) or Madeira with this.  You don't want to go through all the trouble and not use a fine wine. :)



IMPORTANT TIPS:
1.  Resist any urge to season the sauces between steps.  If you are tasting the sauces as you go, you may think it needs salt. But keep in mind this is reduced in each step and adding any salt, etc. in between steps can result in disaster.  Wait until the final sauce to salt and pepper.

2.  Use a wooden spoon for stirring sauces as the simmer, not a whisk.  A whisk incorporates air and lightens the sauce.  You want a dark smooth silky sauce.

Experiment with sherry, port or a luxury rum in place of bourbon.  (With rum, it needs to be a luxury sipping rum with complex flavors like Zacapa or Zaya, not the cheap stuff).
Also, add some cracked peppercorn over the sauce-covered steaks (not regular black pepper) or season your steak heavily with black pepper to create a strong mix of spice and sweet.

For a richer recipe, use half-and-half or cream for milk.

For a healthier version, I substituted Splenda and it turned out just fine.

Just grill up some good hamburger patties and as they cook add them to the sauce until ready to serve. 			<description>Slightly sweet sauce that my mom has been making for as long as I can remember.  The story goes that one of my uncle's got the recipe from a fireman he worked with at the fire house.  It yields a large amount (she used to double this!) - enough to freeze and serve for later.
