			<description>Amazingly enough, there was a little bit of beef tenderloin left after Christmas dinner last year. Looking for a way to stretch less than a pound to make a full meal for 4, I found this recipe from the Feb., 1990, issue of Gourmet Magazine. Everyone just lapped it up! Whenever I really get home-sick (even though I was raised in MI, NOLA feels more like home)- I like to make these. The bread is KEY tho, you just can't get the same texture as down there anywhere else- but I try to get as close as possible. You want the bread to be crusty on the outside but soft with just a little tiny bit of chewiness when you bite down into it. The lettuce, pickle, mayo and tomato is what is called &amp;quot;dressed&amp;quot;. You may add cheese or hot sauce. It's messy, but SO good!! 			<description>This is great way to beat the heat and use up leftovers!  My family (both sides) have made this staple for generations.  I can still see my Grandma using the crank meat grinder to make hers.  Mom always made hers with the grinding attachment on her mixer and I've done the same (have also made it with the food processor).  While we used to make this when we had left over roast beef, I have used lesser cuts of roasts to make this spread which is a great inexpensive way to extend the food budget. I prefer to use Hot Giardiniera Relish instead of hot peppers, but this wasn't recognized in RecipeZaar. It's great served over mashed potatoes, but my favourite way to serve it is in kaiser buns, with the yummy shredded beef piled high on top.  I put out toppings like arugula or lettuce, horseradish, mayonnaise, and sliced dill pickles, and let people fix their own bun the way they like it.  Make sure to drizzle some of the wonderful sauce on each bun too, and also some of the onions too.
