			<title>Easy Spaghetti Bake</title>

			<description>A co-worker gave me the basic recipe and I made a few changes to make it super easy. It has been a pot luck favorite.  I prefer Angel Hair pasta but regular spaghetti noodles can be used. Also, using Italian Sausage instead of hamburger or Mexican blend cheese instead of cheddar may make this recipe more to your tastes.

			<description>This is a combination of several recipes I've experimented with from different sources.  I think I've finally perfected it.  I think the fennel seed is critical, giving the sauce a unique flavor.  Slowly cooking the sauce is key in my book.  Take your time, and you won't regret it.  I like my lasagna rich and a little more dense than typical so I skip any sort of egg mixture and I go light on the ricotta.  I think spinach is a must for lasagna, and makes you feel less bad about eating it.  There is really no need for a side dish here. 			<description>This recipe is from my Italian grandmother.  The one change she made to get with the times was to use Ragu sauce instead of homemade, and she declared that it still tasted just as good.  It's never failed to impress the people I make it for.  My husband says these meatballs have forever ruined him to other people's, or even restaurant meatballs.  The real secret is in the time you take to slowly cook the meatballs in the sauce.  Don't skimp and just toss the sauce on and eat it. It will still taste good, but not anything like it should be.  The raisins are meant to absorb the acidity and impart a little sweetness to the sauce. FYI - the infused olive oil can be stored in the refrigerator in a sealed container to be used later in the week in any pasta or italian dish.
