Crock Pot Mexican Ragu and Grilled Polenta

This is a simple beef ragu which can be made in the crock pot or just slow cooked either in the oven or on the stove.

A few chilies and the polenta gives it a Mexican flavor. -- posted by SarasotaCook

Swiss Steak Supper (Crock Pot)

One of my favorite crock pot recipes. Great for cold winter nights when the days are short and the nights are long dark and cold! Warms you from the inside out! From bettycrocker.com This note is on the website with this recipe: Note: "This recipe was tested in slow cookers with heating elements in the side and bottom of the cooker, not in cookers that stand only on a heated base. For slow cookers with just a heated base, follow the manufacturer’s directions for layering ingredients and choosing a temperature." -- posted by SarahBeth131

Candi's Stuffed Pepper Crock Pot Casserole

My boyfriend's mom made a variation of this recipe in the oven, but it was missing something... I added some sausage and some Frank's Red Hot and that was just the ticket to add some kick to the recipe! Preparing it in the Crock Pot slowly, allowed the peppers to cook fully, and really allowed all the flavors to soak into one another. (Also allows those of us who work outside the home, to prepare the meal ahead of time and cook it all day on warm!) -- posted by Candi Anderson

Confetti Chili

This does look like confetti--before it cooks forever--but there is still color left at the end! (This also works well using 2 red peppers instead of 1 red and 1 green, depending on what you like!) This is just-right spicy for us with some sour cream and cheese and a little corn bread.
Hearty Dakota Chili (Crock Pot)

This is my own recipe i came up with for chili, combining what i thought was the best parts of several standard recipes. This has good flavor but is not for those who like a thin chili or one with lots of veggies. This is a thick hearty version that relies more on seasonings than chili peppers, though if you really like them you can certainly add them in, especially if you like your chili really spicy. I'd say this is more of a medium spiciness that suits my tastes. Don't let the long list throw you off, it's mostly things that are easy to keep on hand :)
Hope you enjoy it :) -- posted by PickleLover

Slow Cooker Beef Burgundy - Australian Style

Thanks to my work colleague Sandra Brown for this simple, yet still one of the best I've tasted, Beef Burgundy recipe. I think the reduction of the bottle of red at the start is the secret to its rich, full flavour. I've adapted Sandra's recipe to one for a slow cooker, so it uses a little more stock. It calls for pickling onions but if you can't get them, use the smallest French shallots you can find, (and maybe use only 8 to 10). -- posted by Baz

Slow-Cooker Steak Chili (Crock Pot)

At first glance there are a lot of ingredients, but they are mostly items that you would have on hand, such as herbs and spices. Another yummy and healthy recipe from Gooseberry Patch. They have an interesting way to thicken the chili before serving.
Italian Hamburger Veggie Soup Like Olive Garden Soup

This recipe was one I came up through trial and error after eating at olive garden last year on my birthday. We don't eat out much and we love homemade soups. I also don't personally care much for canned soup. I had been looking for a new soup to try and after I liked the soup at olive garden so much I decided to give this a try. I personally used a 50/50 mix of ground beef and venison burger for this but use what ever you like. I also like to make my own stocks but I found the Progresso Beef broth works very well for this when I am time crunched. I have done this on the stove top but it works great in the crock pot too. I grow and preserve my own veggies and freeze some soup ready mixed veggies but you can just as easily buy mixed veggies if you wish. Canned works ok for stove top but turns to mush in the crock pot, use frozen for that. Don't feel intimidated by the long list of ingredients, this throws together in about 15-20min and in the crock pot its almost no effort at all. We serve it with a fresh salad and breadsticks so its just like the resteraunt soup, salad, and breadsticks special. I buy frozen breadsticks that are just brown and serve. -- posted by victoriansweets_cakencandy

Sarasota's Crock Pot Brisket With Lots of "veggies"

I love this recipes because you add lots of sweet potatoes, parsnips, crimini mushrooms, onions, white potatoes, and some turnips which I love. But you have the option to use whatever you enjoy

This slow cooks and the sweetness of the brown sugar and maple syrup make this a perfect flavor for this brisket.

I like to rub the marinade over the brisket and let it work overnight, then in the morning, add the sauce and add the cut vegetables to the sides of the brisket and turn on low for 10-12 hours. If you need it done quicker 7-8 on high heat. Either way it cooks and will fall apart.

Serve this with a fall salad with walnuts, bleu cheese, and a nice honey vinaigrette. Very traditional, but I love it with fall roasts and of course some good crusty bread. -- posted by SarasotaCook

Prize Winning 3 Bean Chili

Well, this is the result of being "volunteered" to represent my husband's motorcycle club in an annual chili cookoff. I truely think the quality of your spices will determine the quality of the finished product so buy the best spices you can afford. I've found that the local health food stores often sell really good spices in bulk. This is not a terribly spicy chili but does pack a bit of a kick - adjust the spices to your taste. I did end up winning 1st place - over 42 other teams - not bad for less than a week's notice! I like to preassemble everything I'm going to need the night before - makes it easy to throw together the day of and just let it cook. -- posted by HSingARMYmom

Crock Pot Marinated Pot Roast

Found this in a Slow Cooker Classic's magazine. The marinade really brings out a great flavor in the meat. It comes out so tender that you won't even need a knife! You can also add potatoes and carrots in the last hour of cooking if you like. Is also great over noodles. -- posted by dragonpawz

Looking for a easy mexican dinner. look no further! My husband and I love this stuff since I work till after 10pm most nights. Smack it in the crockpot at night and my lunch is waiting for me when I wake up the next morning. I leave the seasoning open because everyone has a different taste for heat I don't do a lot of chili powder with the ancho chili's but I love cumin and the other seasoning. Another good suggestion is mixing green onions into the gorn muffin mix, I top with shedded smoked cheddar cheese and a little sour cream. Hope you enjoy. -- posted by Mrs Spencer

I love throwing this in the crock pot before I leave for work. It is so easy to prepare but taste even better. You can substitute 2 pounds of beef stew meat cut into smaller sections if you like instead and double the onion soup mix and mushroom soup if more gravy is desired. -- posted by Chef #709115 BECCA BOO

Stifado - Ish

A mixed meat stew that started out as a sweet and sour way to use some leftover cranberries and ended up tasting like a Stifado - so I was told by the eaters!.

Appreciated by the fans of the local Greek Restaurant (my family)!

A bit of an experiment (with the cranberries) but a happy accidental result.

Cowgirl Stew

This gluten free, dairy free, vinegar free recipe is one of my favorite to fix for any company and to have around during the work week. It has great, easy to find and healthy ingredients. Made in the crockpot. Can be ready for you to come home to (and smells incredible). Just pay attention to the canned/stewed tomatoes you pick up to make sure they are vinegar free. Also if you are concerned make sure there isn't any high fructose corn syrup in those canned tomatoes also. The more natural the better. This is great even with gluten free cornbread. Also, if you want to use frozen green beans get the steamer bag and steam them for a bit before you put them in the crock pot....they keep their flavor and color very well. -- posted by CookinWorkinMama

Beef and Beer Chili, Easy Crockpot Recipe

Recipe from the WebMD Weight Loss Clinic. They say "chili is one of America's favorite lunch or dinner entrees -- especially during the winter months. Served with cornbread, it really hits the spot.
This is one of our "winter" recipes. It's almost a chili, but not quite. Tastes great over white rice, or serve with cornbread or crackers. Very filling. Recipe does not call for water, but I add some just to give it a little more of a "soupy" quality.
Vinyl Lager Crock Roast

I bought a six pack of Magic Hat's spring seasonal (Vinyl), and loved it so much I wanted to cook with it. Since I normally use deep, dark beers (like Guinness) to cook, and usually only for beef or vegetable stew, this was a bit of an experiment. All day, my apartment smelled AMAZING. Since I had to buy a three pound roast (the grocery store seems to only have VERY large roasts), and I'm only cooking for two people, this made a LOT of leftovers.
I don't usually measure anything, so I'm guessing on a lot of this. Adjust everything to your taste. As for the veggies, I used two small white potatoes, 1/4 of a large vidalia onion, and about 1/2 cup of sliced carrots. Use what you like! The blend of spices is my usual go-to blend, again... use what you like.
Slow Cooker Beef Stew With Guinness

The meat in this stew is the most tender I have ever had. This recipe is a combination of two that I put together, one which I liked the cooking technique and the other that I liked the flavor of. I would suggest testing your slow cooker to see if it cooks hot. Ours does, so 8 hours does it for optimal tenderness. My husband likes it served over plain egg noodles, but I prefer it by itself. -- posted by Chef #1249089
