Green Beans With Sherried Mushrooms

This is a great side dish. I got it from a 'Canadian Living' magazine. The recipe calls for you to blanch the beans but I steamed them. It still tasted great, just be sure not overcook the beans. I used fresh beans, I don't know how well frozen beans would work. -- posted by Honeyofachef

From Rachel Ray 30 minute meals. This is a wonderful cool weather main dish or side dish. Very flavorful and very good for you. It may sound odd but the flavors are spectacular! I found I had to salt fairly liberally, and because we like heat I added some fresh jalapeno to the saute mixture. Really fabulous give it a try! -- posted by Peacefulone

Rosemary Rice Roll-Ups

Tofu sheets (also known as yuba or bean-curd/tofu skin) can be easily found in most Asian markets, in the refrigerated section - usually next to the tofu. They could probably be replaced by won-ton wrappers or other similar sheet. I recommend cooking the rice in advance, so you don't have to wait for it to cool. Very nice with a yogourt or sour cream based dip (ex. tzatziki). -- posted by Génial Génie

Lambs Quarter (Quelites) and Beans

"Quelites" is a Spanish word for "wild greens." We like to cook with edible weeds, and lambs quarters fall into this category. You can look online for more information about how to identify this plant, which you can use much like you use spinach. If you live in the midwestern United States, you probably have these growing in your yard. I'm not sure where my husband got this recipe, but I like it. -- posted by MarieL

Guinness and Jameson Baked Beans

I like using Guinness in savory dishes, particularly those that are slow-cooked. This summer, I came up with this recipe for baked beans and they were a big hit. Given that this year is the 250th anniversary of Guinness, I thought I'd share and make it slightly more Irish, if not in tradition (these are much sweeter than Irish/British beans), then in ingredients, by making the whiskey Jameson. Feel free to use any whiskey you like (same with the beer actually) and they're still great. For those looking for a non-alcoholic beer substitution, try O'Doul's Amber, which is a really useful cooking beer that happens to be non-alcoholic. I buy my onions pre-diced and frozen and my garlic pre-diced in a jar.

Note that this recipe is made to fill my large oval crock pot and will NOT fit in the standard round ones. Split in half for that. -- posted by JWynia

Vegetable Relish/Ceviche

I wanted something that was cool, crunchy, tangy, spicy and a little sweet that would meet my diet requirements and was not your typical diet food.

This is my version of a fresh veggie relish/salad that is great alone or when paired with seafood, beef, pork etc...

Perfect in a warmed flour tortillas wrap with some shrimp, or a lettuce wrap with a bit of Avacado. It can be used with seafood, chicken, beef or pork as a relish. Or as I like it, alone for lunch. High fiber, low fat and awesome taste. I hope you enjoy it.
Easy Punjabi-Style Chickpea and Potatoes

I came up with this when I was in the mood for spicy potatoes, and immediately thought of my favorite side dish at the Jackson Diner buffet. This is a great sidedish but I also like it as a main meal too, with some rice or naan. Green peas would work in this recipe too, either as a third main ingredient or to replace the chickpeas, but I love the richness of the chickpeas and couldn't get over not only how close it was to Indian restaurant quality, but also how simple and quick it was to make! By accident better yet! You'll find it hard to believe it's homemade and from canned food better yet. The taste is very hot and spicy, and what I love the most is the way the kick sneaks up on you after a minute! :) Important note-- I created this dish by accident so I just ballparked the spices before tweaking measurements. This yields about 4 cups (I'd have about a 2-cup serving with one more leftover for the next day), so if you're planning on a potluck, larger amount to cook for your family, OAWC/OAMC, etc. you might want to use the multiplier on here to figure out the correct proportions for the ingredients. -- posted by the80srule

Easy One Pot Lentils and Rice

I made this for dinner tonight, and the whole family loved it. I make lentils and rice quite often in a million and one different ways, and never with a recipe, but decided to post this one for safe keeping so that I can make it this way again. I served this as a rice ring (with easy glazed carrots and raisins in the middle). I had no onions on hand, but this would be excellent with carmelized onions on top. You may need to use a little more or less water depending on the age of your lentils. I used 6 1/2 cups, and it was perfect. I hope you enjoy this as much as we did! -- posted by Chef #1082457

Cuban Black Bean Vegetarian Feast

After carefully perusing the other Cuban black bean dishes here, I decided this one is different enough to offer. Served over brown rice, with all the toppings, it's a power-packed veggie plate! For guests or family members who do eat meat, a good roast pork loin, grilled chicken, or lime-barbecued shrimp would round out the meal.
Black Eyed Pea Balsamic Salad

I got this at a farmer's market in Texas. A chef from one of the local resturants was demonstrating how to use the veggies of the season. This is a hit on New Year's day, the legend being that you eat black eyed peas on New Years day to insure health, wealth and happiness. Not so sure about the wealth, but health an happiness are great. You can use either fresh or frozen peas, but not canned and can substitue finely diced ham for the bacon. Good eating. -- posted by liral

Chuck's Daddy-O Beans

In 1990, I was fortunate to get involved with a great family who gave me a home and a place to feel safe (thanks, George) and pretty quickly, I came to think of Chuck as "dad". I don't know where he got this recipe or how much trial-and-error was involved, but whenever the family gets together...these are always at the top of the request list. I recently got it from him as part of an online recipe exchange. The secret is the flavor of the teriyaki sauce cooking down and bringing the whole thing together; he prefers the brand sold at Costco but use the one you like the best. I also think the green chiles are just as essential to the finished dish as well. Add more or less of any of the ingredients to suit your taste and whatever brands you prefer--that is the beauty of this recipe. For extra pizzazz...throw in a pound or so of ground meat...pre-cooked or just broken up. -- posted by Hungry Hogareno

Lentil Skillet (With Cumin and Lemon)

Warm comfort food. Someone gave me this recipe years ago. To provide contrast, serve with something crunchy and/or something colorful. I tend to cut the recipe in half, and then use less olive oil and more cumin. Also I sometimes find the uncooked garlic a bit harsh; wilting it a bit in the bottom of the pan may be wise. -- posted by Michelle from Central Time

Lentils With Cumin and Asafetida

This is a wonderful Indian lentil side dish. Asafetida has a very strong, musky smell that many people find unappealing. Store it in an airtight container to prevent it from contaminating your other spices, and if you really don't like the smell, keep it in the freezer--I left it in my car for a little while and everything in the car smelled like it afterward. Despite the strange smell, I have not yet met anyone who dislikes the flavor once it's prepared! This recipe comes from a cookbook called Madhur Jaffrey's Spice Kitchen. All the ingredients should be available at any Indian grocery store. -- posted by Edana

Borracho Beans

Borracho is translated from Spanish to English as drunk. It specifically refers to the beer that is an added ingredient.

If you are unable to soak the beans overnight just account for additional cooking time. I generally use the Casserole brand of dry pinto beans because they seem to cook faster. I have found them at most Albertson's locations. However, any brand will work.

You can also substitute the Mexican dark beer for any beer you have on hand.

I took about 4 or 5 recipes and combined them with the way my Mom makes them also. You can make them as spicy as you want! I noted the variances for the Cumin, Chili powder, and jalapenos. I also always use fresh ingredients - no canned jalapenos or tomatoes.

The crock-pot liners are purely optional. I normally take two of them and line the crock pot just in case one breaks. They make it 100% easier and virtual no clean-up is required if you use them to line your crock-pot.

The recipe is very forgiving, so you can take away or add to it as you see fit. It's very hard to mess up. -- posted by Chef #1097715

Vietnamese-Style Tempeh With Lemongrass and Cilantro

This is from Robin Robertson's 'Rice & Spice'. Haven't tried this yet but it looks delish. Personally, I like to steam or boil tempeh for 10 minutes before using it in a recipe.
Southern Green Bean Casserole

Green bean casserole is one of my favorite foods and something I always look forward to as the holidays approach. Recently, I've discovered that I can cook it more than twice a year- just because it goes nicely with dinner! This Southern-style recipe is not your typical green bean casserole, but I promise it won't disappoint- mainly because of a lot of wiggle room to account for individual taste. (Note: this recipe makes 12 servings, so it's great for gatherings, but you can easily half all of the ingredients for your typical family dinner) -- posted by CrockpotLuvr

Mapled Boston Baked Beans

There are a lot of Boston Baked Bean recipes out there with slight variations. This is how my mom made them and how I make them and they are my personal favourite side with a nice ham and scalloped potatoes. I'll often add a few table spoons of molasses as they bake to make them darker and richer, it is something my mom and I argue over EVERY time we make them together. -- posted by Nymphadora Tonks

Southwest Four Bean Salad Supreme

Tim and I came up with this recipe after having a deli salad that we thought we could make on our own...and better. This is a very versatile recipe. I have served it on a bed of greens and have added chopped grilled chicken on occasion. You can also add a can of quartered artichoke hearts and a jar of chopped roasted red bell peppers. ( Be sure to drain both.) It's a great day before shopping recipe as most ingredients are canned, bottled or frozen. Be prepared...this makes enough to take to a potluck. It makes approx. 18 cups. -- posted by Laura911RN

The Best Boston Baked Beans

This is a great recipe I found for baked beans. It was originally posted from The Sacramento Bee, 1998. This recipe is used by the Durgin-Park Restaurant in Boston, MA. This restaurant dates back to the American Revolution and is famous for its Boston baked beans. The Durgin-Park cook, Tommy Ryan, has prepared this recipe at the restaurant for the past 37 years. The restaurant serves 1,000 diners on an average Saturday evening.
