			<description>This taco salad is perfect for a potluck or a lovely summer meal!  I constantly get requests to make this salad.  Easily prepared ahead of time and tossed together at the last minute. I am not sure where the original idea came from for this recipe but it has truly 'morphed' into one of our family favorites.  Absolutely versatile and forgiving should you be missing an ingredient or two...just use your imagination and substitute.  The key ingredient is the sauce!!!   It is crazy easy to make and tastes fantastic!!  Way less costly than 'Catalina' dressing and a hundred times tastier. Sadly though I have not figured out how to make it diet friendly.. For a vegetarian version I use a variety of beans and omit the ground beef... equally as delicious.  Prep time includes cooking the beef. 			<title>Marmie's Ever Changing Multi Bean Salad</title>

			<description>This is the perfect blend of Tangy/Sweetness, it is remarkably mild,  not oily and is hugely versatile!  Wonderful for picnics, lunches to go or just an added side at dinner. I do NOT like apple cider vinegar but in this recipe it is fabulous, especially for bean salad skeptics like me.  I make it in a one gallon ice cream pail and store it in the fridge, when it begins to run out I add a can of what ever bean I have on hand and a few more red onions.  I can do this until the 'brine' runs out.  Then I just start all over again and always have it on hand.  Fresh cooked beans have a nicer texture and are more cost efficient than canned but canned is yummy too, though do contain lots of sodium.  So if you are on a sodium restricted diet, I would suggest cooking dry beans and fresh green and yellow beans for this recipe. I love this steak recipe. Even though the marinade is basic it is the combination with the balsamic vinaigrette and the creamy peas and beans and the fresh greens which brings it all together.  I now a mix of peas and beans sound odd, but this is a great creamy flavor. Fresh off the cob is perhaps the best way to eat summer corn, but corn tossed with beans and tomatoes is a close second. The sweetness of the beans and the acidity of the tomatoes bring out the flavor of the corn. We wanted to find the best way to combine and flavor this trio. Heres what we discovered:
Boil the ears of corn until just tender, then cool them quickly under running water so that they dont overcook.
Canned black beans taste fine, as long as you rinse and drain them thoroughly to remove any of the liquid in which they come packed.

Perfect in a warmed flour tortillas wrap with some shrimp,  or a lettuce wrap with a bit of Avacado.  It can be used with seafood, chicken, beef or pork as a relish. 			<description>As the Summer of Death and Bizarre Weather comes to a close, so does Healthy and Delicious' occasional series on mayo-less salads. Our fourth and final recipe is Greek-Style Chickpea Salad from Cooks Illustrated Best Light Recipe.
A chickpea-based concoction, it relies on cucumber for freshness, onion for zest, and a smattering of feta cheese for tang (or, as some are wont to call it, feta-ey-ness). Everything balances perfectly with the dressing. Too often, grain and bean salads are over-dressed, leaving the contents to stew in a pool of flavored grease. Its not good for healthy eating or the texture of the food.
This dish bucks that trend by using just the right ratio of lemon juice, Dijon mustard, olives, and olive oil. It clings lightly to the chickpeas instead of drenching them. And whether youre concerned about weight or leaky Tupperware at your Labor Day picnic, this is undoubtedly a good thing.
Oh, and its delicious, too, as Cooks Illustrated recipes tend to be. The Best Light Recipe tome is quickly becoming an all-star of my cookbook collection, joining the ranks of their Best 30-Minute Recipe book and Christopher Kimball's The Cook's Bible. All are highly suggested reading.

This is a hit on New Year's day, the legend being that you eat black eyed peas on New Years day to insure health, wealth and happiness.  Not so sure about the wealth, but health an happiness are great.  You can use either fresh or frozen peas, but not canned and can substitue finely diced ham for the bacon.
