Samber Cinnamon Fruit Salad

This recipe came about when son Sam and daughter Amber conspired to "help" make breakfast one Saturday morning. We always figure one piece of fruit for each person eating (5 people = 5 fruits). Cooking time is figured for letting fruit sit for a few minutes make make its own syrup--you can skip this step if someone is "starving!" -- posted by Debber

Creamy Peanut Butter Whip

I whipped this up after my husband decided to try peanut butter and sour cream together on a spoon. He liked it so much he came to me and asked, "Are there any recipes that use peanut butter and sour cream together?" This is similar to some refrigerated pie fillings but I made it sugar free. I also didn't find any recipes that used cream cheese/neufchatel, cool whip AND sour cream together. It turned out great. This was actually in the book as a carrot cake with the bananas listed as a variation, they said: "...the combination of bananas and nutmeg are said to encourage restful sleep" I don't know about that but it was delicious.
Peanut Butter, Banana and Sultanas Sandwiches or Pinwheel Style

Yummy little snack for little kids or big kids. Alternatively, you can use either two slices of the same bread (either two white bread or two wholemeal bread) it's just to make it look pretty and healthy for kids. The pinwheel style is difficult to do without making a mess so if you don't like a mess or a challenge. You can use two more slice of bread and place them on the top, this will then be a serving size for two. Please be careful with nuts, we don't give Little Miss (DD) nuts because her cousin has a severe nut allergy. -- posted by Chef floWer

Typsy Laird - Scottish Drambuie Trifle for a Burns Night Supper

This Scottish trifle is traditionally served at Burns Night Suppers or at New Year. Typsy Laird got its name because the alcoholic ingredients would make the diners slightly drunk!! Though in reality there is little alcohol in the trifle and the typsy or tipsy effect is due to the "wee drams" of whisky drunk during toasts or throughout the evenings entertainment!
Some Scottish trifle recipes will substitute the toasted almonds with crushed amaretti biscuits, and the bananas are also a less traditional but optional ingredient. -- posted by French Tart

The Diabetic's Nightmare Parfait

Note: This is probably a horrible thing for a diabetic to have. In fact, it's probably not good for ANYONE to have. But boy does it please the sweet tooth.

Another note: We have big glasses over here, hopefully it will fit in yours!

Yet another note: Any diabetic symptoms acquired after its consumption are not my fault. You have been warned. However, I have this once a week and am fine. -- posted by Kitchen Witch Myrkr

Banana Honey Blueberry Smoothie With Added Fibre

This smoothie is full of goodness....no; greatness! It has the super high anti-oxidant value of blueberries, the sweetness of honey, added fibre of Benefibe and the classic flavour of bananas. Great for a morning snack, or anytime when you need that little something to keep you going between meals.
I came up with this particular combination of ingredients while looking through the fruit bowl and the fridge for a snack, threw it together and it turned out beautifully! I'm sure it's been thought of before...this is my own recipe thought up at the spur of the moment in my kitchen. -- posted by bananapan_cake

The All-Banana Shake by Deborah Madison

Entered for safe-keeping. From Deborah Madison's "This Can't Be Tofu!". She claims the taste is similar to a Mexican liquados (bananas, vanilla and Mexican cream). Orange flower water is used in Middle Eastern and Indian cooking; if you can't find it, you might try Recipe #110957 #110957. She suggests the following variations (which would no longer qualify as "all-banana" ) : 1/4 cup peanut butter or almond butter (an "Elvis"! evoking Elvis Presley's love of bananas with peanut butter); 2 tablespoons or more of chocolate syrup; both peanut butter and chocolate syrup; or 1/2 cup coconut milk plus a squeeze of lime juice.
Pavlova With Whipped Cream and Fresh Fruit

Pavlova is a traditional to Australians and New Zealanders that was apparently created in honour of the ballerina Anna Pavlova, when she toured in those parts. It is basically a delicate mountain of whipped meringue. After being baked under low heat, the outside shell gets crunchy, the top gets browned, but the inside stays chewy and soft - like creamy fresh marshmallow. It then gets piled high with softly whipped cream and fresh fruit. The result is dreamy, with the consistency of a cream-smothered cloud. -- posted by Chef #1008075

Banana Coconut Ice Cream (No Eggs)

We received an ice cream maker attachment for our KitchenAid mixer last Christmas. We also had a spare can of coconut milk left over from a curry recipe. After a few ice cream batches, I began wondering how to use the coconut milk in an ice cream recipe. This is the result. My favorite thing about homemade ice cream is the delicious taste from only a handful of ingredients, so this one is a simple, Philadelphia-style ice cream (no eggs).

It has a rich coconut flavor that isn't over-powering. The banana and (optional) rum complement the tropical theme. -- posted by calamari

Chocolate Banana Cake from Canadian Living

The name "Chocolate Banana Cake" does not do this dessert justice. Not even remotely. Banana-chocolate chip cake is layered with white chocolate whipped cream and banana slices, while the entire thing is covered in white chocolate whipped cream and topped with chocolate ganache.
Peachy Fresh Fruit Salad With a Flourish of Angelica and Mint!

This was the first thing I was taught to make at secondary school in Domestic Science! We were all taught to make basic lemon syrup for the fruit salad, a great classic and a standard recipe that I have never forgotten! However, here I have deviated a little and have taken advantage of some excellent local peach syrup instead of the homemade lemon syrup I usually make; and I have garnished the salad with mint and angelica from my herb garden. I have suggested certain fruits to use, but the beauty of a fresh fruit salad is that you can always rustle one up with whatever you have locally and to hand. Serve with fresh pouring cream for a real treat! -- posted by French Tart
