			<description>This is a variation of a bunch of recipes I have tried but mostly from one I have lying around on a bit of paper - I have no idea where it came from! If you are after a 'bread' then omit the baking powder, if you want more of a cake, baking powder makes it light and fluffy! If you can, don't make this recipe until the banana skins have gone completely brown - the bananas are much more sweet, moist and flavoursome taking this recipe into a different league. 			<description>This year I finally figured out the secret to converting a regular cake recipe to a Passover cake recipe!  The secret is that when you replace the flour in the recipe with matzo meal, you sub 40% of it with something else, like shredded coconut or ground nuts.  This way you avoid baking a brick (like the ones our ancestors made during the slavery in Egypt!).

			<description>I came up with this recipe to use up some extra bananas and yogurt, but since I live alone, eating a whole banana bread to myself is... well... pure gluttony. So, to my great pleasure, there is no willpower needed here! I am very proud of how it came out. It is very moist and the buckwheat gives it a nice flavour. 			<description>This is a fun, eye-pleasing cake that incorporates the classic flavors of a banana split.  It can be served on its own but is best served &amp;quot;a la mode&amp;quot; with vanilla, chocolate or strawberry ice cream.  It has layers of banana cake with a center layer of chocolate fudge frosting, sliced bananas and sliced strawberries.  Then the top of the cake is finished with strawberry frosting and arranged, sliced strawberries.  I think the embellishment of fresh fruit gives the cake a homemade appearance.  No need to tell anyone you used a cake mix and prepared frosting!  (Note: If you can't find banana cake mix, substitute with yellow cake mix, reduce water to 1 cup and add one extra mashed banana). 			<description>This was the way my mom made banana pudding. You'll find no vanilla pudding mix in this! It's all homemade and with love. I used a saucepan on the stove to cook the custard, but you have to constantly stir it to keep it from scalding on the bottom because it needs to come to a boil (bubble) to thicken. If you're not comfortable doing that, try using a double-boiler. But it must bubble. For extra zip in the custard, add 1/4 tsp. of lemon oil or 1 tablespoon of lemon zest.
The meringue is simple and delicious. If you want a mile-high meringue, use 6 eggs whites (any leftovers in the freezer? Take 'em out!) and 1/2 cup sugar with 1/2 teaspoon cream of tartar and a pinch of salt. 

Eggs are easier to separate when they're cold. So do so, and let them come to room temp before using.

Bananas are best if they're ripe and sweet. Don't get any that are green. If yours are green, wait for them to ripen (putting them in a brown paper bag will speed the process). Don't worry about having too many bananas....it's great piled high with all the ingredients!
