First Birthday Banana Cupcakes

I wanted to make a low-sugar cupcake with no artificial sweeteners for my son's first birthday. This is what I came up with after testing out a few different ideas. It was a hit with the baby and even the adults asked for seconds! I made a coconut cream cheese frosting to top it with and decorated with banana chips. -- posted by 1015092

Banana-Rum Sauce

This is another dessert sauce I've had for awhile. It's wonderful over vanilla ice cream or pound cake. I like it because it's ready in about 10 minutes. You can substitute another liquer or juice for a change of flavour ( I like pineapple). Also try one of the flavoured rums (love that coconut rum). -- posted by Sweet PQ?

Yummy Banana & Dijon Mustard Sandwich -- Really!

This is not a joke recipe, honestly I make it all the time - have done for over 10 years & find it really yummy. When you think about it, it's not all that different from the old classic PB & J..... I love to eat this in thickly sliced soft white bread, it's also tasty in fresh brioche too. You have to use a regular (smooth) Dijon though, it doesn't work with any other mustard. I have made this sandwich for friends & most have really enjoyed it & asked for it again later! -- posted by Um Safia

Banana Almond Date Soy Smoothie

This vegan smoothie is amazingly rich, creamy, filling, and healthy. It has a nice texture to it from the almonds and a natural sweetness from the banana and dates. I like that there is no refined sugar added or any animal products, all good for us and the planet. I like using a frozen banana to make the drink cold, but room temperature works well too. If you want to freeze bananas, peel them before freezing. Peeling frozen bananas doesn't work! And place them separated in the freezer so they don't freeze together. -- posted by Chef #1363287

Banana Muffins, Diabetic and Delicious

I met this muffin on the Christine Cushing Live show and had to try it. For my money this is the ultimate banana muffin when it comes to the health aspect and just plain good taste. This can be made with some chopped nuts in place of the blueberries (or a small amount in addition to the berries). The nuts will add fat but nuts are heart healthy fat, you know the good kind. -- posted by Annacia

Part of my Nasoya Madness series since I got tons of coupons for Nasoya Creations so I could get the tofu packs for almost nothing; and did lots of experiments most of which went well!
Banana Chocolate Chip Muffins

This recipe is very versatile because it can be made in the form of muffins, bread or CAKE! If you like, you can add a bit less sugar and leave out the chocolate chips and make it more appropriate for breakfast/brunch. Walnut are are great addition, but are by no means necessary. I think these are amazing just as they are. From: Joy of Vegan Baking! Please note: Cook time for MUFFINS is stated below. If baking as a "bread" or cake it should probably bake for 40-45 minutes -- posted by Kozmic Blues

Healthier Sour Cream Banana Date Bread

This is my take on healthifying (is that a real word??) the super-popular Recipe #9351. I added dates and eliminated the sugar entirely, swapped out the white flour for whole wheat, and substituted grapeseed oil for half the butter. The result was a super moist loaf that was just sweet enough - the sweetness from the dates and bananas really shone through. It turned out so well I thought I would share. -- posted by Chilicat

Easy Delicious Banana Bread

I found this recipe in the Columbus Community Columbus Missouri Association cookbook. It was submitted by Christie Wilson of Warrensburg, MO. It's my family's favorite recipe for banana bread as it uses no vegetable oil. It's quick and easy to mix up, and comes out moist and delicious every time. Baking time is approximate as oven temperatures vary. -- posted by Laura_Ozz

A Winning Banana Nut Bread

This is my standard recipe for banana bread, been making it for years, it describes itself as so easy that your children can try their hand at it! It always turns out well for me, and I am not much of a baker. It comes from "The Best Of Winning Recipes", a compilation of recipes from a popular South African magazine, "Huisgenoot".
Maryland Chicken

Another Dixie meal that combines sweet and savoury elements, who would have thought that banana and chicken would work so well together. Everything originally would have been deep fried in batter but I prefer this slightly lighter version. The sweetcorn fritters are a must and can be made whilst the chicken is cooking in no time.
