A Unique & Yummy Salsa!

I am a a stickler for using fresh ingredients so when my boyfriend from 5 years ago made this up for the first time I cringed! Pardon me for saying so, but if I hadn't have been living with him I never would have eaten it! Hahahaha!!!! The boyfriend is long gone but this is the only salsa I'll eat! If you aren't used to cilantro it may take a few minutes to grow on you - it did me. Give it a chance though. It is seriously yummy!! -- posted by Lottidawe

Mango-Avocado Salsa

This is an easy tropical dish that is full of flavor! I like to serve it with chips, or as a side dish. It would be easy to try slightly different versions by adding lime juice, ginger, pineapple, or jalapenos, depending on your personal taste. If you have any other suggestions, I would love to hear them! Thanks! -- posted by Calla Lily

Hibiscus tea

A tart drink and very colorful. Add some to regular tea instead of lemon juice. You can make this overnight by placing a handful of blossoms into a pitcher of spring water. They expand a lot, so be sure to squeeze then out if you remove them. -- posted by Kath in CA

You can use any fresh or frozen fruit that you enjoy most, and on a hot summer day, try a little coconut rum or spiced rum to add a little kick! I always chill my glasses in the freezer before i start to make this recipe and dip the rims in colored sugar to add color to the glasses. -- posted by Chef #241096

Tecate Potato Chowder

This recipe is a favorite at the Nepenthe restaurant in Big Sur, California. I lived there years ago spent much time at Nepenthe. A beautiful place! Tecate is a municipality in the Mexican state of Baja California.
And now a little history:
Perched on the edge of the continent, high above the Pacific, watched over by the majestic Santa Lucia Mountains sits Nepenthe Restaurant. This Mecca of poets, artists, travelers and vagabonds has served guests for fifty years, opening for business on April 24, 1949.

Sitting on the terrace, enjoying an Ambrosia Burger, Tecate Potato Chowder, or an exceptional homemade desserts is a quintessential California experience. The first time visitor to the Central Coast will not want to miss it. Once you have visited, you are destined to return. -- posted by Sharon123

Enchilasana!

A great-tasting, family-friendly mexican lazagna! This dish started in 1988, my Junior year of high school when I was asked to prepare a dish for a potluck in Spanish class. It's evolved over the years into this very-yummy, quite spicy, everybody's-gotta-have-seconds casserole... ENJOY! -- posted by FoodPoet

Baja Blue Jello Shots

SO good. The beautiful color of blue for the sea, tropical in taste and sure to please. Made these up for my neice's Bachelorette party. Number of servings depends on the size of your cups; I used 2 oz cups, so mine made about 20. Sugar free versions of jello work just fine as well! -- posted by JanuaryBride
