Mango-Avocado Salsa

This is an easy tropical dish that is full of flavor! I like to serve it with chips, or as a side dish. It would be easy to try slightly different versions by adding lime juice, ginger, pineapple, or jalapenos, depending on your personal taste. If you have any other suggestions, I would love to hear them! Thanks! -- posted by Calla Lily

Tex-mex Rice

This is a version of rice that you find at a Tex-Mex restaurant. It is way easier than it looks and after you have made it once or twice - you can do it by heart. My kids love it and I love that I can sneak a few veggies in! Can be made vegan with veggie broth. -- posted by Cindy Rowden

Copycat Baja Fresh Salsa

Posted by request, this came from TSR. I haven't actually tried it myself, nor have I ever been to a Baja Fresh restaurant, but I've gotten pretty good results with many other TSR recipes. Note: prep and cook time are estimated, and the key points are the firm, chilled tomatoes and stem-side-down start to blackening them. -- posted by Muffin Goddess

Mango Guacamole

This is a fabulous option to a classic! I love mangoes and decided to substitute them for tomatoes after seeing how often mangoes are used in Latin American cooking. This is a very forgiving recipe in that almost all ingredients are to taste. For a hotter result, do not seed the chilies. I have done my best to give you the way my family likes it best. This is the result! -- posted by MacChef

Baja California Tofu Scramble

I've been trying to come up with a tofu breakfast that I really like. This uses the mexi-cali herbs and spices we often cooked with in LA. The veggies I used were the ones I had on hand, but diced sweet potato, carrots, nopales (if you have that on hand I envy you!), or a tablespoon or two of corn kernels or black beans would probably also be tasty. I tend to eyeball herbs and spices, so the measurements here are best guestimates-- add more or less to your own taste. -- posted by catwolf

Mexican Coleslaw (Sans Mayo)

"Tomatoes and oregano make it Italian; wine and tarragon make it French. Sour cream makes it Russian; lemon and cinnamon make it Greek. Soy sauce makes it Chinese; garlic makes it good."-Alice May Brock of Alices' Restaurant fame.

Albiet no garlic in this recipe, but this is a refreshing alternative to mayonnaise-based coleslaw in a taco or on the side. To Make Ahead: Cover and refrigerate for up to 1 day. Toss again to refresh just before serving. (Eating Well, June/July 2003) -- posted by Enduring Gastronomy

Baja Fried Fish Tacos With Spicy Cabbage Slaw

I love these fish tacos. You can find them in many California areas. You can either order the fish grilled or fried and because I love deep fried food, it's always fried fish for me when ordering or making them. Besides the spicy cabbage slaw I also like to top the whole thing with mounds of salsa and taco sauce. Goes great with Pacifico! -- posted by Rinshinomori
