A Unique & Yummy Salsa!

I am a a stickler for using fresh ingredients so when my boyfriend from 5 years ago made this up for the first time I cringed! Pardon me for saying so, but if I hadn't have been living with him I never would have eaten it! Hahahaha!!!! The boyfriend is long gone but this is the only salsa I'll eat! If you aren't used to cilantro it may take a few minutes to grow on you - it did me. Give it a chance though. It is seriously yummy!! -- posted by Lottidawe

Mango-Avocado Salsa

This is an easy tropical dish that is full of flavor! I like to serve it with chips, or as a side dish. It would be easy to try slightly different versions by adding lime juice, ginger, pineapple, or jalapenos, depending on your personal taste. If you have any other suggestions, I would love to hear them! Thanks! -- posted by Calla Lily

Dan's Baja Chicken

In my many years in the kitchen, I stumbled upon this recipe in my experimentations with cooking for clients who wanted something "different." The most important part of this recipe is the marinade. Once marinated, the chicken can be broiled, grilled, fried, or cooked any other way, depending on your dietary wishes/requirements. Best served with "Party Rice" (which I will post a recipe for later ;-)), this dish also goes well with baked potatoes or Penne tossed in garlic and olive oil. -- posted by T3 Foxen

Authentic Chile Rellenos

This recipe is for those that have access to a store that sells Mexican groceries. Often it is hard to distinguish the fresh cheeses, such as queso blanco or panela from the melting cheeses like queso oaxaca. Either will work in this recipe. Just don't use a hard cheese like cotiga which is a hard cheese sililar to parmesan.

I have been searching for the chile rellenos that I loved as a child that came from the Sawtelle Deli in West Los Angeles in the 60's. It's really not as hard as it looks and the taste is far superior to the chile relleno casseroles that are popular, IMHO. -- posted by ditsyquoin

Impossibly Easy Sweet Pulled Pork

This has become a staple in our home. We absolutely LOVE this pork. There is a restaurant chain here in Utah called Costa Vida and this is as close as we have come to replicating the sweet pork they make there for the burritos/salads/etc. -- posted by Lord Bezoar

Terrific Tomatillo Salsa!

Sometimes limes in Michigan are bitter and dry so in most recipes I usually use half lemon half lime. -- posted by Talal

Mike's Salsa

A positively delightful salsa recipe for any occasion. Do not allow the idea of using habanero peppers to scare you off! They really blend well and will not make the dish as spicy as you may think with the seeds and veins removed. If you are brave (or crazy?) like me, leave them in on one or two of the peppers and enjoy the added heat. -- posted by MrTink
