Chicken Tortas (Mexican sandwiches)

This is an easy and delicious Mexican sandwich that is served all over here in San Diego. You start with the famous soft oblong Mexican sandwich bread roll called "Bolillos" but any soft sandwich roll will do. It's sort of a burrito on a bun. You can also make them with seasoned ground or shredded beef (leftover taco meat perhaps?). I hope you like them! -- posted by SaraFish

Yellow Rice Salad W/ Roasted Peppers & Black Beans

I like the freshness of the limejuice dressing on the rice. The vibrant yellow color against the dark brown of the black beans and the red from the peppers also makes for a great presentation. This can be a nice vegetarian meal, or as a side dish. This is from July 2001 Gourmet... an oldie but a goodie! It was worth keeping the whole issue just for this recipe. (servings are for a main course, this would stretch much further if used as a side dish) -- posted by CHRISSYG

Addictive Mexican Stew

My mother gave me this recipe. She found it while clipping coupons. It is from S&W. This is the best stew I have ever eaten and my family requests me to make it quite frequently. It has become a "comfort food" for us. Perfect to make if you have leftovers after baking a large turkey or chicken. Can be made vegetarian or vegan if desired. -- posted by Rose's Granddaughter

Baja California Tofu Scramble

I've been trying to come up with a tofu breakfast that I really like. This uses the mexi-cali herbs and spices we often cooked with in LA. The veggies I used were the ones I had on hand, but diced sweet potato, carrots, nopales (if you have that on hand I envy you!), or a tablespoon or two of corn kernels or black beans would probably also be tasty. I tend to eyeball herbs and spices, so the measurements here are best guestimates-- add more or less to your own taste. -- posted by catwolf

Chili Cheese Burritos

I like to make a big pot of chili up and freeze it in meal-sized portions for later. We don't always like to eat chili plain, so I doctored up some chili and made burritos for a quick dinner. It's easy and doesn't require all the fresh ingredients that tacos would. If your chili is pretty soupy, you might have to cook it down a little longer than called for in the recipe. You can heat your tortillas in the oven if you wrap them in tinfoil, but the microwave is just so much easier, in my opinion. -- posted by Mommy2two
