Traditional Egg and Bacon Pie - or What You Will!

Quick to prepare with ingredients that are readily available and most probably on hand, this recipe certainly qualifies as being traditional Aussie 'tucker'. Unlike most C21st Australian recipes which reflect the diversity of modern Australia's multi-cultural society, this recipe is clearly British in its ancestry. Adapted from a recipe from the Simply Great Recipes website. If you want to give this recipe a more C21st multi-cultural touch (I've already aimed to do this by adding garlic and capers), I'd suggest adding some feta. Probably far too radical a suggestion for those who love traditional Egg and Bacon Pie just like grandma used to make! Basically, do with this recipe What You Will! -- posted by bluemoon downunder

Potato, Bacon and Sauerkraut Patties

Try this for breakfast: creamy mashed potato, with tangy Sauerkraut and smoky bacon in a pattie! Adapted from a recipe on the Simply Great Recipes website. The original recipe is obviously an Edgell recipe and listed in the ingredients 1 cup (100g) Edgell Instant Mash. Zaar would not accept this as an ingredient, so I have replaced it with 2 cups of mashed potato. If you do track down - or regularly use - Edgell Instant Mash, the step now removed from the instructions is "In a medium bowl combine the Edgell Instant Mash and 1 1/4 cups of boiling water". To use canned instant mash would obviously be a time-saver! Depending on whether cream or milk has already been added to the mashed potato, you may like to add some in step 2. -- posted by bluemoon downunder

Maple Bacon Biscuits

Breakfast in a biscuit! My husband and I had these during a trip to LA and they were fabulous. I am not a fan of maple, but these biscuits are very good. I just happened across the original recipe while reading food related articles. This recipe makes 2 dozen, however, I freeze 1 1/2 dozen and take them out as needed. Give them a try; I am sure you will love them as well. Adapted from Zoe Nathan of Rustic Canyon -- posted by Humble Bee

Sausage and Cabbage Casserole

This is one of my personal recipes. Created it about 3 years ago, and perfected it until last winter, when I finally was satisfied with it ... It's a little bit of work in prep, and needs to cook for a while, but its well worth it. Very comforting, very filling, cheap and healthy. I do it a lot in the winter, its one of these dishes that warms you up. -- posted by Atheen

This is one of those recipes that tastes better the next day, but is darn good right off the stove.
Southern Crab Hash

Chunks of crisp potatoes, bits of bacon and tender morsels of crab are held together with melting cream cheese for a spectacular sort of Southern-Accented comfort food with a C. Pretty Fast and Very Filling! First published in F&W, 1997 and is just as tasty! Recipe by: Quick From Scratch Fish & Shellfish. This would be great if paired with poached eggs!
The sweetness of crab is often at its best paired with a full-bodied chardonnay, which will also be good with the bacon, potatoes and cream cheese. Try a bottle from California or Australia. -- posted by Manami

When I bring this parties, everyone LOVES them. They fly off the plate! It's a great finger food and can be made in advance (one or two days max) and refridgerated until it is time to serve.
Chili Bacon Breadsticks

Use long thin Italian breadsticks (Grissini). Because the grissini are so fragile, it may be necessary to have more available on hand than you plan to use. Regular chili powder (often contains chili powder, cumin, salt and other seasonings) found at supermarkets can be used in place of the pure chili powder.
Adapted from a recipe by Tara Matarazza at Serious Eats. Beemster is a Gouda-style cheese similar to aged Goudas; if you can't find it, a 5-year-aged Gouda is a reasonable substitute.
Kate's Quiche Lorraine Souffle Style Extreme Variations

I invented these extreme variations of Quiche Lorraine at the end of ZWT5 based on Karen Elizabeth's Recipe #299242 #299242, taking advantage of the unique ingredients I had bought over the tour. Each variation I tried and pictured was great in its own way. Next time, if I had piperade sauce on hand (Julie B's Hive's Recipe #233205 #233205), I might add that on a wedge. The measurements for toppings are for 1 choice of topping to cover the entire quiche. Choose 1,2,3,4, or 5 toppings, and make a decorative pattern, allowing small wedges to be cut of this rich quiche. If available, Pillsbury's refrigerated pie crust works well (do not prick or pre-bake) in a glass deep-dish pie plate. I recommend very small wedges (12 servings), this is very rich. Serve with a side salad with vinaigrette dressing. -- posted by KateL

I love the idea of this, and can see all sorts of possibilities for what to "raid" from the fridge at the end of the week. I like his suggestions for bacon and bangers, and especially when served with crisp, green cabbage. An excellent, hearty supper dish and one that would be great for the children too - the greens being "hidden" amongst all the spuds, bacon and sausages etc! (By Nigel Slater.
Reblochon Tarts With Bacon & Fingerling Potatoes

F&W Magazine, October 2008 edition. Terrence Brenan s the author of this recipe as it originally appeared in this edition. From Pairing of the Day: October 2008, Strategies for Cooking with Cheese. With a golden layer of puff pastry topped by caramelized onions, soft potatoes, bacon and tangy Reblochon cheese, this tart is lighter than the sum of its parts, making for a satisfying fall dish that’s great any time of day. The Reblochon, a washed-rind cheese from France, can be replaced with a robust Taleggio from northern Italy or the smooth French soft-ripened cow’s-milk cheese Saint-Andre. Wine suggestions: the earthy, berry-rich flavors of Pinot Noirs from California’s Santa Lucia Highlands work well as partners for washed-rind cheeses like the Reblochon in this tart. Jason Miller likes to pour the silky 2005 Logan Pinot Noir. The floral 2006 Morgan Twelve Clones is an equally good option Now that I have finished with the preliminaries I have to say these were delicious - with cheese being melted over the caramelized onions was a real treat - to say the least. ;) -- posted by Manami

Basic Garlic and Oil Sauce for Perfect Pasta (Rachael Ray)

If you like pasta, you're going to LOVE this recipe from Everyday With Rachael Ray's magazine (Oct '09). She has a "secret ingredient" that adds an unexpected zest to the ordinary ingredients: anchovies. She notes in her recipe that " even if you think you don't like anchovies, you should try this recipe--it'll change your mind." Further, she points out that "once you heat anchovies, they stop tasting like fish and start tasting more like salted nuts." So: try it, you'll like it! If you must, don't say anything to the diners--and ask them if they like it, before you reveal the "secret ingredient." -- posted by Debber

Simple but Tasty Potato and Pancetta Salad

Delicious potato salad recipe that I made up. I always make it for any BBQs or summer parties we have at home and there is never any left. Also make it regularly to eat for lunches and it always goes down well with my friends who sometimes ask me to make extra portions so they can have it for lunch at work too :-) A 1kg bag of potatoes makes enough for 4-8 portions depending on whether you are eating it as a full meal e.g. 4 portions if eating as a meal in itself, or 8 portions if serving as a side at a BBQ etc.

It can be eaten straight away but it tastes better the longer it's left for the flavours to mature. I usually leave it at least overnight before eating but sometimes even longer, up to a few days and it tastes better the longer you leave it :-)

Please not prep time does not include allowing to cool before adding the mayo. -- posted by .x. Lauren .x.

Creamy Sherry and Cheese Sauce

Delicious with everything but usually we eat it stirred through pasta as a pasta sauce. Can also be drizzled over chicken or pork. It is really creamy and thick and the addition of the chopped onion, mushroom and pancetta makes it quite substantial and filling.
The amount of sherry is an estimation as we never really measure it out but it is approx 50g. You can add more or less as you like.

The cooking time is really quick but spend a little extra time on preparation to make sure the onion and mushrooms are really really finely chopped and sliced.

This will serve 2 as a pasta sauce but many more as just a sauce to drizzle over meat, up to 5-6 people. The serving sizes here are based on two portions only. -- posted by .x. Lauren .x.

Bacon Caramels

“Where would we be without salt?” – James Beard
I casually sprinkled the thick-cut Hempler’s bacon with cayenne before frying to a nearly blackened crisp. Once the caramel had reached its perfect molten temperature I stirred in a handful of the bacon then reserved the rest to get sprinkled on top. The caramel set beautifully. Some were cut and served as is while a select few were covered in tempered dark chocolate. All of them were devoured.

Barbecued Shrimp BLT Sandwich With Lemon Butter Sauce

This is a Wolfgang Puck recipe and it is delicious! I found it again when I was surfing the net - as always, looking for something else, and voila I found it! I had eaten this a long time ago when a friend prepared it for us, my friend left for somewhere in Cuba -- never to be heard of again, more than likely she is very busy trying to build a house for her folks wheeling and dealing, so as to get what she needs -- she doesn't have time to write and then find someone that she trusts to deliver the letter to me! Anyway -- the recipe is truly wonderful! :) Wine pairing: If you're feeling adventurous try a full and oakey Chardonnay from Australia like Rosemount, Petaluma or Lindemans.
Recipe by Hung Huynh, a student at the Culinary Institute of America in Hyde Park, New York was a Top Chef winner. Hung Huynh learned to cook with the Chinese trinity - GGS = ginger, garlic and scallions. He uses all three here to flavor this earthy, mushroom-and-bacon-studded clay pot (without the clay pot) rice.;) It was fun trying this type of rice in the dining room and seeing the people's reactions - they either loved it or weren't convinced by it.From: Top Chef Winner's Tips, Hung Huynh - publlished 02/2008 edition of F&W Magazine. There is an hour soaking time for the raw rice.It makes a nice side for chicken or fish - we tried it with chicken tenders (lightly seasoned and done on the grill) and sweet peas.:) -- posted by Manami
