			<description>From the AllRecipes site. I guess this was traditionally an English dish made with leftovers from Xmas dinner. Not sure this resembles the traditional dish much, but my family all like it. Pretty quick to make. I usually don't have leftover baked potatoes, so I mae the potatoes in the afternoon and let them cool. Then I halve them lengthwise, and the slice them about 1/4 inch thick, or maybe less. I've also occasionally tossed in other leftover vegetables, such as peas or carrots. I suppose you could serve with catsup or salsa or something, but we like it just as-is. Authentic Carbonara using the simplest of ingredients, including black pepper (thus the carbon in carbonara!), egg yolks, and parmesan cheese for the sauce  no cream! So fast to make, and so good to eat!! The actual recipe uses diced guanciale (cured smoked pork cheek) in place of pancetta, but pancetta or thick-sliced bacon would work just as well. 			<title>Dublin Coddle - Irish Sausage, Bacon, Onion and Potato Hotpot</title>

			<description>This traditional supper dish of sausages, bacon, onions and potatoes dates back at least as far as the early eighteenth century. It seems to be more of a city dish than a rural one: it was a favourite of Jonathan Swift, author of Gulliver's Travels and dean of Christ Church Cathedral in Dublin. In Dublin itself, coddle retains its reputation as a dish that can be prepared ahead of time and left in a very slow oven while the people who're going to eat it have to be out of the house for a while - making it an excellent dish for very busy people! The name of the dish is probably descended from the older word caudle, derived from a French word meaning &amp;quot;to boil gently, parboil, or stew&amp;quot;. The more recent version of the verb, &amp;quot;coddle,&amp;quot; is still applied to gently cooked eggs, &amp;quot;Coddled Eggs&amp;quot;. Please note, the sausages used should be the best quality 100% pork sausages you can get your hands on! This recipe would also work VERY well if cooked in a crock-pot, reduce the liquid by about half if cooking the coddle this way. Serve with Guinness and Irish soda bread. Although this is an easy to prepare one pot meal and its simplicity belies its amazing taste and flavour - comfort food at its best! 			<description>Fast becoming a classic, Tartiflette is the perfect palliative supper dish for chilly autumn and winter evenings. This delicious, rich and hearty dish hails from the Alpine Haute Savoie region of France. For authenticity's sake, try to get hold of a whole Reblochon cheese. Reminiscent of Camembert or Brie in flavour, texture and shape, Reblochon has the perfect melting quality for Tartiflette. In addition, as this dish can be prepared a day or so ahead, it could make the ultimate Bonfire Night or Halloween centrepiece! This is a truly indulgent dish, which is best appreciated after a strenuous morning on the ski-slopes  or at least a brisk winters morning walk. It is important to use a ripe Reblochon, preferably bought a few days in advance and left to reach maturity out of the fridge. For this to happen, it should be uncategorised. Of course, if you have a good cheese monger you will be able to buy one ripe and ready to eat. Serve the Tartiflette hot and straight from the gratin dish with fresh salad, crusty bread and assorted pickles. Edited to add: One reviewer made a comment that you should fry the bacon and discard the fat - it IS stated in the main instructions to do just that! Also, if your potatoes are not cooked after 15 minutes plus 25 minutes in the oven, you have not cut them thin enough - try to cut them quite thinly, as shown in all the photos. Reblochon cheese is a very STRONG cheese - do not try this recipe if you are not a lover of strong cheese! Scotch Eggs were invented in London by Fortnum &amp;amp; Mason, a food shop, in 1851- apparently in a &amp;quot;Let's pretend to be Scottish&amp;quot; craze. Silly sasenachs! But the name stuck, as did their portability. Some call these &amp;quot;picnic eggs&amp;quot;, some call them &amp;quot;savory eggs&amp;quot; (using chopped eggs) but these are a great item to bring to the office pot-luck, that will leave your co-workers raving!

I first tried Scotch Eggs at the Missouri Tartan Day Festivities a few years ago. I was hooked and when I finally saw how easy they were to make I mastered them!  And searched the world over for variations! And the one I liked was the one from The HandMade Scotch Egg Company in the UK. Alas, we can't get them here- but here is my version of one of theirs. If you go there, avoid the pre-packaged ones at Tesco's, Sainsbury's and the ilk as those are horrid!  And when you can get them here, some are poorly made, and served with a lack-luster approach as an &amp;quot;appetizer&amp;quot;. Yet, these are an easy and unique way to take a quick breakfast out the door to work and can eat this in the car with one hand and no mess! Yep- Portability! 

The key I learned to making any type of Scotch Egg is the quality of the sausage! If you use the low-priced, &amp;quot;discount&amp;quot; stuff, you will end up with holes and gaps in the outer sausage shell. Go for Jimmy Dean, R.B.Rice, Johnsonville, or your favourite one. My daughter loves making these, and everytime we have taken them to a pot-luck lunch, or just something different.

			<description>This recipe is adapted from Rick Bayless's Mexican Kitchen.   I purchased some peruano beans (also called mayocoba beans) and wasn't sure what to do with them and found this recipe online.  Peruano beans can be used any time navy beans are used and are from Mexico.  This is a nice and spicy pot of beans that you can throw inside of a burrito or just eat plain.  I added extra jalapenos and used red onion instead of yellow (I did not change the recipe--only how I made it).  I also used rum in place of tequila because it's what I had.  Very tasty! I made this with left over Christmas turkey this year, and it was so delicious and went down a bomb with my family and friends! A new Jamie Oliver recipe that he showed on his Family Christmas show this year and one that is so clever, as this pie makes its own gravy! I have left out adding the chestnuts and sage to the pastry as he suggests, I will try it sometime in the future though, as it sounds a brilliant idea; I have added this option at the end of the recipe however, for those who want to try it that way.
