			<title>Low Fat Breakfast Sandwich</title>

			<description>I love my breakfast, for me it truly is the most important meal of the day.  However, like most people I have very little time for cooking in the morning.  After some trial and error, I started making this sandwich which has many positive qualities.  Firstly it is easy and cheap to make.  Second it is low fat.  Third, due to the combination of protein and fiber, it will actually keep you satisfied until lunchtime unlike many cold cereals or breakfast bars. 			<description>Quick to prepare with ingredients that are readily available and most probably on hand, this recipe certainly qualifies as being traditional Aussie 'tucker'.  Unlike most C21st Australian recipes which reflect the diversity of modern Australia's multi-cultural society, this recipe is clearly British in its ancestry.  Adapted from a recipe from the Simply Great Recipes website.  If you want to give this recipe a more C21st multi-cultural touch (I've already aimed to do this by adding garlic and capers), I'd suggest adding some feta.  Probably far too radical a suggestion for those who love traditional Egg and Bacon Pie just like grandma used to make! 			<description>Try this for breakfast: creamy mashed potato, with tangy Sauerkraut and smoky bacon in a pattie!  Adapted from a recipe on the Simply Great Recipes website.  The original recipe is obviously an Edgell recipe and listed in the ingredients 1 cup (100g) Edgell Instant Mash.  Zaar would not accept this as an ingredient, so I have replaced it with 2 cups of mashed potato.  If you do track down - or regularly use - Edgell Instant Mash, the step now removed from the instructions is &amp;quot;In a medium bowl combine the Edgell Instant Mash and 1 1/4 cups of boiling water&amp;quot;.  To use canned instant mash would obviously be a time-saver! 			<description>I'm proud of my Scottish heritage, as well as my love of food (heck- I'm a Midwesterner!) This named for the Seven Rivers Highland Society here in St. Louis, MO, and for Hogmanay- a truly Scottish celebration!

Scotch Eggs were invented in London by Fortnum &amp;amp; Mason, a food shop, in 1851- apparently in a &amp;quot;Let's pretend to be Scottish&amp;quot; craze. Silly sasenachs! But the name stuck, as did their portability. Some call these &amp;quot;picnic eggs&amp;quot;, some call them &amp;quot;savory eggs&amp;quot; (using chopped eggs) but these are a great item to bring to the office pot-luck, that will leave your co-workers raving!

I first tried Scotch Eggs at the Missouri Tartan Day Festivities a few years ago. I was hooked and when I finally saw how easy they were to make I mastered them!  And searched the world over for variations! And the one I liked was the one from The HandMade Scotch Egg Company in the UK. Alas, we can't get them here- but here is my version of one of theirs. If you go there, avoid the pre-packaged ones at Tesco's, Sainsbury's and the ilk as those are horrid!  And when you can get them here, some are poorly made, and served with a lack-luster approach as an &amp;quot;appetizer&amp;quot;. Yet, these are an easy and unique way to take a quick breakfast out the door to work and can eat this in the car with one hand and no mess! Yep- Portability! 

The key I learned to making any type of Scotch Egg is the quality of the sausage! If you use the low-priced, &amp;quot;discount&amp;quot; stuff, you will end up with holes and gaps in the outer sausage shell. Go for Jimmy Dean, R.B.Rice, Johnsonville, or your favourite one. My daughter loves making these, and everytime we have taken them to a pot-luck lunch, or just something different.

			<description>Bacon,mushrooms, red pepper and onions bring excitement to the scrambled egg.  If using leftover bacon drippings isn't your thing, you might try olive oil.  This has become DH's favorite breakfast. Sometimes I eat one of the pieces of bacon (while DH isn't looking), so if you're like me, plan on cooking more. Adding the cheese and bacon right before serving insures the bacon is crisp and the cheese is barely melted.
revision: 7/17/09 per kate's review: at step 5 be ready and prepared to add back in the sauted veggies when eggs are not quite done, certainly not set, but not completely runny, if you let the eggs cook too much, you'll end up with over cooked eggs, no fun!!!! Then right before serving toss/fold in the fried bacon. 			<description>Wonderful for a weekend brunch. My whole family absolutely loves it. Lots of flavor from the onions, chives, and bell pepper. There are lots of variations of this recipe but I like that this one uses milk instead of sour cream or cream cheese which are high in fat and this one still has just as much flavor. It came from Debbie Macomber's Cedar Cove Cookbook that a friend got me for Christmas. I only switch the whole milk to 1 % and keep the skillet at medium-low instead of low when making the sauce. Can easily be doubled to serve more people. When I do, I use a 12 oz package of bacon and a 1 lb 14 oz bag of hash browns since that's what they usually come in anyways. Also, the easiest way to snip the chives is with kitchen scissors. So much faster than with a knife!
