Made with the canned vegetables, this can be made very quickly but it can, of course, also be made with fresh or frozen vegetables.  If you are using frozen vegetables, steam them briefly and make sure that all excess liquid has been drained off - or saved for making soup, such as my Recipe #135453. I've adapted this recipe from one I found on the Simply Great Meals website. It's similar to loaded baked potato soup, except that I don't care for sour cream or chives so I personally do not add them. However, if you would like to make it that way, I recommend a fourth cup of sour cream added in and about a fourth a cup of chives. You can tweak the amounts of those as well, based on how you liked your baked potatoes, but those amounts should give a good even flavor of everything. Please feel free to experiment with the amounts of seasonings if you'd like, but the ones provided should make it just right. 			<description>Delicious potato salad recipe that I made up.  I always make it for any BBQs or summer parties we have at home and there is never any left.  Also make it regularly to eat for lunches and it always goes down well with my friends who sometimes ask me to make extra portions so they can have it for lunch at work too :-)  A 1kg bag of potatoes makes enough for 4-8 portions depending on whether you are eating it as a full meal e.g. 4 portions if eating as a meal in itself, or 8 portions if serving as a side at a BBQ etc.

It can be eaten straight away but it tastes better the longer it's left for the flavours to mature.  I usually leave it at least overnight before eating but sometimes even longer, up to a few days and it tastes better the longer you leave it :-)

			<description>Delicious with everything but usually we eat it stirred through pasta as a pasta sauce.  Can also be drizzled over chicken or pork. It is really creamy and thick and the addition of the chopped onion, mushroom and pancetta makes it quite substantial and filling.
The amount of sherry is an estimation as we never really measure it out but it is approx 50g.  You can add more or less as you like.

The cooking time is really quick but spend a little extra time on preparation to make sure the onion and mushrooms are really really finely chopped and sliced.

I casually sprinkled the thick-cut Hemplers bacon with cayenne before frying to a nearly blackened crisp. Once the caramel had reached its perfect molten temperature I stirred in a handful of the bacon then reserved the rest to get sprinkled on top. The caramel set beautifully. Some were cut and served as is while a select few were covered in tempered dark chocolate. All of them were devoured.
