Malaysian Laksa

Laksa is a Malaysian soup made from laksa flavour spicy curry, coconut cream, noodles, prawns/shrimp, chicken and lots of fresh toppings. This recipe is considered to be a cheat version because it uses laksa paste, however the results are still very yummy. You can vary the ingredients in the soup to your own taste. I had trouble finding fish balls and fried tofu puffs in my region so I replace the balls with extra green prawns/shrimp and fried my own tofu (I cut them into 1 cm by 1 cm cubes). This recipe is from SBS's Food Safari and is made by Aryan Mansor -- posted by Chef floWer

Sara's Shepherds Pie

I love making this. It's such a nice winter meal, and it's so easy and quick, and best of all..so economical!! Growing up, Mum made shepherds pie almost weekly. Over the years I have altered it, and this is the way my family enjoys it now. We don't serve this with anything, except maybe a nice bread roll. -- posted by Sara 76

Chicken & Spinach Fettuccine Bake

This fettucine dish is baked with garlic bread on top. For quicker preparation, use a packet of garlic bread. But if you've a little more time, then you'll probably want to make your own, which gives you so much more choice of what bread you use, how much garlic you add to it and if you want to add other herbs as well. The recipe also has instructions for heating and re-serving. I've included the instructions for a single 10-cup capacity dish, but if you are wanting to freeze smaller quantities in several smaller dishes, remember to adjust the cooking times appropriately. I've adapted this recipe substantially from one I found in a recent issue of the Australian magazine 'New Idea'. I've also recently posted recipes for a Greek Lamb & Yoghurt Pasta Bake and a Lentil & Sausage Lasagne (also a baked dish), both adapted from the same source, and with the same detailed instructions for freezing the recipe. -- posted by bluemoon downunder

Pea Soup With Crisp Prosciutto

A quick to prepare, low-fat and delicious soup adapted from a recipe in the July 2008 issue of the 'Australian Table' magazine. Not as green as its recipe sibling - Recipe #135165 - this is basically a pea-ified version (if I can be allowed to coin that word) of a classic potato and leek soup, which is what drew me to the recipe. Potato and leek soups have always been a favourite of mine, one of those really safe, classic, always delicious combinations, and always SO much better if a home-made stock is used. The original version of this recipe specified 5 minutes preparation time. Such times are clearly determined on the assumption that all the ingredients are magically ready to go. My guess is that it would take me 5 minutes just to wash and chop the leeks, so I've increased the preparation time to 10 minutes. That still makes this a quick to prepare recipe. For a vegetarian version use a vegetable stock, such as my Recipe #135453 which makes productive use of all your vegetable peelings, and omit the prosciutto. -- posted by bluemoon downunder

Chicken Thighs With Lemon Garlic

Don't be put off with large amount of garlic, this recipe is really full of flavour and has excellent sauce. I used on the bone chicken thigh cutlets because I think the chicken has much more flavour if it's kept on the bone and it is much tender. The original recipe comes from ‘Taste of the Sun’ by Jacqueline Clark & Joanna Farrow but I twinkled with it to suit our family. If you don't like a lot of salt in your diet you could use salt reduce liquid chicken stock but this will alter the flavour. -- posted by Chef floWer

Squid Salad or Octopus Salad - Japanese Style

You could either use squid or octopus for this salad, I have trouble finding octopus most times so I used squid. I normally buy my squid/octopus already cleaned and gutted. If your squid/octopus needs to be clean then remove the guts (discard) and legs from the body and rinse. Cut off the tips on the legs and discard, then chop the remaining leg pieces and body into bite-size chunks. Original recipe comes from ‘Harumi’s Japanese Home Cooking’ by Harumi Kurihara but I have twinkled with it -- posted by Chef floWer

This quick pasta meal (perfect for Summer) comes from Notebook magazine - January 2008 along with the following notes & tips:
* This recipe can be easily adjusted to suit any taste. Substitute basil with oregano and thyme, or use all three for a richer flavour. For colour variation, use yellow and red cherry tomatoes. If cooking for children, use penne, which is easier to pick up with a fork. -- posted by Rhiannon&Matt.gauci

Chicken Rissoles With Lentil Salad

This is based on a recipe from the January 2009 issue of "recipes +" magazine. The original recipe called for ground pork, but we changed it to chicken. This makes a perfect mid-week meal, and is quick and easy to make. You can add sices such as cumin or coriander to the ground chicken, to spice it up a bit. Also, try serving it with flour tortillas or flatbread!
With the salad, you can save money by using 1 medium tomato instead of the cherry tomatoes. Also, if you can't get a can of lentils, use 1 cup of dried lentils, soaked and prepared. -- posted by Sara 76

Melon Trio With Lime & Yogurt (21 Day Wonder Diet : Day 1 )

This is the Day 1 breakfast for the 21 Day Wonder Diet. I was unable to buy cantaloupe on my first day, so I used 300g each of the honeydew and watermelon. You can choose any flavoured yogurt you like, as long as it is low-fat. Passionfruit is especially well suited to the other flavours in this dish, but i used raspberry (my Hubby doesn't like passionfruit) and that worked well too! This breakfast is to be followed up by a mid-morning snack of 1 small red capsicum & 1 tablespoon low-fat cottage cheese.
Chorizo and Halloumi Skewers

A yummy-sounding recipe from the current issue of the Australian magazine 'super food ideas'. You'll need 8 pre-soaked wooden bamboo skewers. Feel free to vary the olives in this recipe. I haven't made these yet but I'd be inclined to use unpitted kalamata olives or perhaps half and half unpitted kalamata olives and the suggested pimento-stuffed green olives. I've suggested that these could be served at a picnic, if you were picnicking where there were BBQs. They could be made up to the end of step 1. For serving at a home BBQ, they could of course also be prepared to that stage and BBQd just before you are ready to serve them. -- posted by bluemoon downunder

Chilled Cucumber Soup With Champagne Poached Prawns - or Shrimps

Adapted from a 'Better Homes and Gardens' recipe that I found online. There are just so many Chilled Cucumber Soups on Zaar but - from my searches - none that seemed quite like this one which I'm posting for safe-keeping as well as for others who might like to try it. I love the fact that this is basically a potato and leek soup - with cucumbers and prawns poached in champage! YUM! :) The only additions I've made are garlic (I just cannot contemplate prawns without garlic!) and the dill or parsley for garnish. The photograph accompanying the original recipe suggested that small shrimps had been used and rather more than the 12 specified in the ingredients list which explains why in the directions there is mention in step 3 of dividing "most of the prawns" between 4 bowls, then adding "the remaining" prawns once the soup had been ladled into the bowls! 12 prawns between 4 bowls hardly allows for "most of..." and "remaining..." Obviously, this recipe could be made with small shrimps and with a larger number than 12. Several shrimps on top of each soup bowl would certainly make for more attractive presentation. -- posted by bluemoon downunder

Spiced Lamb Kebabs

Adapted from a recipe in Michelle Trute's 'cooking with conscience'. All the recipes in this book are low fat, low-moderate GI and easily prepared. This recipe is moderate GI and low in fat. She includes no salt in this recipe but I have included sea salt below as optional as I know for many this is an essential ingredient. If rosemary branches are unavailable, use wooden skewers soaked in water and add rosemary to the lamb just before threading it onto the skewers. I have also included sage as I love rosemary and sage together. Michelle Trute recommends marjoram, mint, rosemary and sage with lamb and recommends using herbs rather than salt. I have also posted Michelle Trute's Recipe #349024. 800g = just under 26 ounces. -- posted by bluemoon downunder

Bridies

My adaptation of another of Huey's recipes. He describes a Bridie as "a South African pasty filled with spiced minced lamb... well, kind of..." Minced lamb is what Americans call "ground lamb". As I don't like my foods hot and spicy, when I make these I shall be omitting the sambel oelek (or any other chilli paste) and increasing the garlic. They looked so delicious that I'm really looking forward to making these. I'm also interested to learn from South Africans how well-known this dish is in South Africa and the degree to which this version has varied from the standard Bridie. If you are planning to make this recipe, please check the NOTE below the directions about a problem I had in posting one ingredient. For yield, I also tried to write, again unsuccessfully, "2 large or 4 small Bridies". Whether you consider this recipe appropriate to serving 2 or 4 will, of course, depend on the appetites of the eaters, and whether the Bridies are being served with other side dishes or on their own! -- posted by bluemoon downunder

Australian Style Potato Salad

This is a recipe that I found on the inmamaskitchen website, posted by Margaret Walker, which I am posting here for the Zaar World Tour event. It appealed to me because it is very similar to the potato salad recipe that my mom made for our summertime picnics and potluck gatherings. There is a note at the berginning of the instructions that states there are many varieties of deli-style mustards, and it is best that you not use a smooth mustard for this recipe, but rather you should use a mustard that has a trace of seed still in it. -- posted by NorthwestGal

Creamy Potato and Bacon Soup.

Quite simple, not alot of work involved. Produces a wonderful soup full of flavour! I made this recipe a few weeks ago on a very cold day. As for preperation of the bacon, you can choose to cook it in the stock pot, leaving behind as much fat as possible for flavour, and add back after cooking of the rest of the soup, or do as I've suggested with the microwave. I suggested the microwave because making the bacon cripsy is much easier this way. -- posted by Ambien.

Healthy Greek Style Chicken Tacos

Idea I came up with for something quick and healthy that can be mostly prepared in advance. I used a large cooked chicken breast cut-up but would also be a good use for leftover roast chicken. Makes 4 large tacos so I think would be a complete meal for two or a light snack / lunch for four, if using the smaller shells you'll probably be able to fill six of them. I listed a gherkin because that's what I used but you could also use a small handful of diced cucumber. Because it's served slightly chilled I think this would make a nice and quick summer meal at the end of a hot day. You could also use a low-fat Greek yoghurt and/or omit the feta. There is not a lot of sweetness in the recipe so I couldn't really say it was a kid pleaser, more of a slightly sharp taste from the salty and sour ingredients. -- posted by Peter J

Dark "n" Stormy

This is for those that enjoy ginger. Using ginger beer a non alcoholic carbonated soft drink. Not the same as ginger ale.
And dark rum is a must. -- posted by ~Rita~
