P.E.I. Potato Pudding

Prince Edward Island, Canada's tiniest province, is famous for its potatoes. This is an old fashioned dish; the recipe is from a Mme. Benoit cookbook, and she gives credit to "Dolly", her hostess in Summerside, PEI. -- posted by Lennie

Perfect Butter Tarts

Butter tarts are one of the things that gives Canada the reputation of the world's best country to live in. Their sweetness explodes in the mouth and dribbles down the chin. Butter tart eaters are divided on whether the filling should be runny or not. They are the quintessential after-school treat. Canadians can buy good ones ready made but for the rest of the world, here is the genuine recipe. -- posted by Janice Gill

Basic Poutine Recipe

This recipe has been posted from a request. I've had this several times and it is extremely good! Measurements are strictly up to you! Cook time is estimated for french fry cooking time. And # of servings is also up to you! Do you want to share or have it all for yourself? I suspect once you taste it, you won't want to share! If you are having trouble finding the cheese curds, I found this info online: To make your own: Wrap cottage cheese in cheesecloth and place in a colander or strainer nested inside a bowl. Place in the refrigerator until much of the liquid has drained into the bowl. Substitutes: jack OR Muenster -- posted by ciao

Nova Scotia Maple Chicken

Caution: Recipe calls for almonds; persons with nuts intolerance should exclude this ingredient entirely from the recipe. Chicken is tender; sauce can be poured over Sweet potato, rice, or orzo accompaniment. Serve with salad and/or other vegetables. Sauce is excellent over sweet potatoe or carrots; however this creates a very high sugar content; not suitable for diabetic diets.
Cake Doughnuts

These are light and moist. This is a very old Nova Scotia recipe. Try these and you'll never be happy with store-bought doughnuts again. The key to making good doughnuts is to only add enough flour so you can roll them out and cut them. Too much flour can make them rather dry. Use plenty of flour on the cutter or the doughnuts will stick in it.Prep time does not include chilling time. -- posted by MaeEast

Blackberry Jelly

Poutine Rapee

This is a recipe for New Brunswick Acadian Poutines Rapees. This is not a recipe for fried with curds and gravy. Poutines rapees are a mixture of raw grated potatoes, combined with cooked and mashed potatoes, which are then formed into a ball, stuffed with seasoned salted pork and simmered in salt water. I am fortunate enough to live in NB, but you still don't see these around that often. I don't know why because they are so yummy. Another fine example of Canadian cooking! -- posted by BirdyBaker

Mrs. Hopper's Fudge

A recipe published some time ago in the Moncton Times and Transcript. The columnist writes: "The recipe, contributed by Mrs. Grover (Erma) Hopper of Little River, Albert County, remains undoubtedly the most popular one published in 1980. Both Mrs. Hopper and myself have received hundreds of letters praising it and requests for copies from people who missed it. I am happy to reprint it today. It remains far and above the best fudge I have ever had and my family requests it regularly ever since I first tested it for this column." -- posted by Sackville

Rose's World Famous Pancakes

These are truly world famous. I have made them for guests from England and the Netherlands as well as from Nova Scotia. I remember the first time I ever made them. I was a fairly newly wed when my husband asked me for pancakes. I very sweetly replied, " I can't make pancakes, I don't have any pancake mix." To which my husband answered, "Don't you have a cook book?" Thus begun my obsession of cooking things from scratch. ( I was 14 when I learned you could make a cake from scratch). -- posted by breton cove dreamer

Build Your Own Canadian Cranberry and Herb Turkey Burgers!

Build your own burger - the recipe here is for a low-fat cranberry and herb turkey burger, with LOTS of options! Plump semi-dried Canadian cranberries and fresh chopped herbs are added to lean, low-fat turkey mince for a moist and flavourful burger, and without the guilt! I have offered the bacon, cheese, assorted condiments and the burger bun as an option; if you are REALLY watching your calories and fat intake, just go with the plain burger and a lovely crispy mixed salad on the side. Turkey mince can be a little bland, so the addition of the herbs and cranberries adds a real flavour injection. Try to use freshly chopped herbs for the best flavour, if you do use dried herbs, reduce the quantities by half, as dried herbs are more pungent than fresh. If you prefer a slightly sweeter taste, use Craisins, the sweetened dried cranberries that are available in North America and Canada; this recipe has been posted as a thank you to a Canadian friend on Recipezaar, who kindly sent me some Craisins, along with lots of other Canadian goodies! Merci beaucoup! -- posted by French Tart

Blue Ribbon Wild Blueberry Pie

This is an awesome recipe we made up. It is tried and true. I got this recipe from piemaking in Canada, where we went out blueberry picking.
Maritime Gingersnaps

From "The Anne of Green Gables Cookbook":

"'No, indeed! The rosebud tea set! Well, what next? You know I never use that except for the minister or the Aids. You'll put down the old brown tea set. But you can open the little yellow crock of cherry preserves. It's time it was being used anyhow--I believe it's beginning to work. And you can cut some fruit cake and have some of the cookies and snaps.'" (From "Anne of Green Gables by L.M. Montgomery).

Times are estimates; cooking time includes chilling time, but cooling time for both molasses mixture and cookies (beyond the first 5 minutes) is not included. -- posted by Halcyon Eve

Tantalizing Raspberry Tarts

Another recipe from "The Anne of Green Gables Cookbook":

"The little girls of Avonlea school always pooled their lunches, and to eat three raspberry tarts all alone or even to share them only with one's best chum would have forever and ever branded as "awful mean" the girl who did it. And yet, when the tarts were divided among ten girls you just got enough to tantalize you. " (from "Anne of Green Gables" by L.M. Montgomery).

Times are estimated and do not include cooling time beyond the initial 15 minutes (included in cooking time). The original recipe did not specify the size of package of frozen berries, so I guessed a 10 oz package based on the fresh raspberry substitution. -- posted by Halcyon Eve

My Dad's Ultimate Macaroni and Tomatoes

I am originally from the Canadian east coast, and like most people from that area, I grew up with classic macaroni and tomatoes. Sound plain? Well, it can be, but not the way my Dad makes it! Even if you think this doesn't sound that exciting, give it a try- I know you will love it! Kids love this too...

*** Edit for the person who mentioned they left out the summer savory because they don't like mint flavouring in their food- it is NOT minty, it is another herb similar to sage and thyme actually. Hope that helps! However, since I know it is hard to find in some areas, it isn't necessary, it's just that I love it, hehe. -- posted by Lady Clare
