			<description>I adapted this recipe from one I found in a magazine.  I lived in Thailand for 5 years and it uses all the ingredients I think of when I think of Thai food.  I use a lot of chili flakes, so it ends up very spicy, so cut it down by at least half if you prefer it milder.  It serves 2 hungry people or 4 if you like smaller portions. 			<description>This dish balances salty, sweet, tangy and spicy ingredients. It is truly wonderful! :) Recipe is from Barbara Lauterbach, Cooking Light Magazine, April 2009 edition. She suggests that it be served alongside a quick rice pilaf. Cook a 10 oz package frozen white rice (such as Birds Eye SteamFresh) according to package directions. We had rice already made since there is white rice always around!! Combine cooked rice, 2 Tablespoons drained chopped water chestnuts, 1/2 teaspoon crushed red pepper flakes, 1/4 teaspoon salt (or perhaps one of Mrs Dash's 13 choices) and 1/4 teaspoon freshly ground black pepper and a sprinkling of chopped green onions. I altered the recipe because many of the authentic ingredients (lemongrass, galangal, tamarind, palm sugar, etc.) are not available in my area. You should be able to find all the ingredients in this recipe at Super Wal-Mart or a well-stocked supermarket.

			<title>Lamb and Okra (Bamyeh) over Rice</title>

			<description>I learned to cook from Palestinians, but I have altered methods.  I learned to cook the meat in this recipe by searing/browning it on all sides in a pan.  I changed that method to make the meat more tender and to create a meat stock to add to the stew for depth of flavor.  You can make this with lamb or beef.  Middle Eastern cultural preference is lamb but beef can be easily substituted (and using my method to cook it, nobody will know the difference).  Time saving tip: if you plan to use lamb, most commercial butchers are happy to remove the meat from the bone, remove the fat, and sometimes even cube the meat for you. But you have to ask for it!  Smaller/shorter okra are strongly preferred.  Bud-like okra can be found frozen in most Middle Eastern or Indian grocery stores. 			<title>Sticky Rice Wrapped in Bamboo Leaves (Joong or Zhongzi)</title>

			<description>A soy-free version of the Chinese Sticky Rice dumplings wrapped in bamboo leaves, known as Joong, or Zhongzi that are traditionally eaten in late Spring for the Dragonboat Festival.  You can buy them at Asian supermarkets (like T&amp;amp;T here), and my husband's family makes them, but they all have ingredients my son can't have.  Usually these have dried shrimp or scallop, mushrooms, nuts, soy sauce, 5-spice powder, chinese sausage and egg, but yummy as they are, these all make my son itchy, so I improvised! If you don't need to avoid all those ingredients, you'll probably want to follow his recipe, as this one is a little bland (shhh, don't tell my son...)

Wrapping the dumplings is tricky - I had to watch a few different videos, and even then, my first one took about 20 minutes!  Eventually I figured it out.  My best ones ended up as somewhat rectangular pyramids, rather than the tetrahedrons I usually see.  

This is a fairly time-consuming project, most families make it a group activity! Definitely use a low-sodium soy sauce unless you love salt! (If fresh rice is used it will stick together in a mushy mess instead of separating out into individual dry pieces.)  Well, as luck would have it I spaced when making rice a few nights ago &amp;amp; instead of loading the rice cooker with 2 cups rice &amp;amp; 4 cups water I put in 4 cups of both!  So I added another 4 cups of water &amp;amp; wow... that was a lot of leftover rice!  So, last night I combined what I could remember of mom's fried rice with what I had on hand &amp;amp; my family loved it.  We ate this for a main meal but usually it's served as a side. 			<description>This is a hurried entry to my own event. Funnily enough, I was so enamoured by the beautiful entries that people have sent in, I nearly forgot about sending my own entry. 
Upma Kozhakattai-now what kind of confusion is this? Upma is a mainstay breakfast in most Indian homes and Kozhakattai is something that Tamilians offer to our beloved Lord Ganesha to keep him happy. Upma Kozhakattai is none of these. This is a fine example of 'saatvic' food. Check out what 'saatvic' means here. As I write this, a doubt arises in my mind as to does food cease to be saatvic if it has chillies, even though the end result is not at all spicy.

My grandma used to make this one, once in 3 months or so- making it one of my favourite tiffins. (You get the drift? The rarer it's made, the more it's liked- or as goes the saying-familiarity breeds contempt) The common fellows like Idli, Dosai, Upma used to fall in the second category. I guess grandma would soak, dry and then grind the rice to obtain the base for making this dish. In today's times, the above three steps are replaced by these three steps-a visit to the supermarket, pick up a packet of idli-rava, pay for it!

Upma-Kozhakatti is steamed rice flour balls with a bit of seasoning and coconut. This is served with a lentil-coconut spicy and sour chutney. I make lentils and rice quite often in a million and one different ways, and never with a recipe, but decided to post this one for safe keeping so that I can make it this way again. I served this as a rice ring (with easy glazed carrots and raisins in the middle). I had no onions on hand, but this would be excellent with carmelized onions on top. You may need to use a little more or less water depending on the age of your lentils. I used 6 1/2 cups, and it was perfect. You can use green cabbage or Bok Choy instead of the Napa cabbage if you can't find it. Use your imagination, I have added diced red pepper, bean sprouts (at the end for some crunch.) If snap peas or snow peas are in season, I use them instead of the peas. I think some chopped cashews on top instead of the peanuts would be good as well. This is from Food Network, Tyler Florence. My grandmother would have lots of dark chicken meat in it and huge chunks of ginger that I would end up biting into (not fun when you're 7 years old). Since then my own kids have developed a love for the traditional Chinese-style congee (also called rice soup) they serve in restaurants, especially during cold Autumn and Winter days. Some people may be uneasy about using the 'century duck egg' (or 'thousand year old egg' is really just as egg that is preserved in salt, ash and lime) but don't judge it in it's unpeeled, chopped up state - added to the congee, it really adds a yummy complexity to this dish, even my 2yo daughter loves it. This recipe is for you if you want a warm, hearty, simple and economical meal. Enjoy! You can make this vegan by using oil instead of butter, but I like the richer flavor the butter gives in this dish. 			<description>My Grandmother (Teta) made this dish as an accompaniment to Chicken, Pork, or Lamb dishes.  My son will make a meal out of it on its own.  The yogurt and pine nuts really enhance the flavour, but are optional. To truly enjoy this I would not recommend using ground beef.
