			<description>The Fasolatha (bean soup) Festival, originated in Florina, Macedonia, Greece, and is now a major cultural event in many Greek communities across the world.  
     
In the Northern hemisphere, the religious festival is traditionally observed near the start of winter - on St. Nicholas Day (during his lifetime he was known for giving sustenance to the poor).
     
Food is a major part of the festival. Apart from Fasolatha (bean soup), Olives, Renga (smoked herring) freshly baked Florinian Bread (Pogatsa) Gyros, Souvlaki, Kebabs, and Loukoumathes (honey cinnamon - soaked donuts) are also served. 
     
Fasolatha is one of the heartiest dishes on the Greek vegetarian table, and a Lenten mainstay.

I have made this for the second time today, 24th September 2005.
I used 2 large thick chicken breasts which I sliced through horizontally to make them thinner. The potatoes I cut into thin wedges.  I found the secret to this dish is to use a shallow baking dish (mine was about 1/2&amp;quot; deep). The first time I made this I used a dish which was too deep!!!
In the original recipe it said to use 1/2 cup olive oil......I have changed this to 1/4 cup and feel this is better.  The original recipe also said to serve with crusty bread or pita bread, however I served with steamed broccoli and carrots with a cheese sauce. 			<description>Traditionally escabeche is made by pickling fried fish. Susser's quick version features saut&amp;eacute;ed shrimp in a cilantro marinade with tangy grilled pineapple. Liberal use of local citrus and tropical fruits and juices makes it easy for Allen Susser to add bright flavor to both savory and sweet dishes without using lots of fat. His philosophy at Chef Allen's in Miami is simple: don't try to cut out oil and rich foods altogether; just use small amounts and make sure they're top quality. 
This low calorie (161 a serving) - low fat (4.6 gm) recipe was created by Allen Susser, the famed Caribbean-Latin-Euro fusionist of Miami's Chef Allen's. WINE: WINE Because ginger, lemons and spices can overwhelm dry, subtle wines, look for a simpler aromatic white, such as a West Coast Riesling. 			<description>I had coconut rice at The Rum Jungle in Las Vegas a few years ago and I've been trying to duplicate it ever since. I still haven't gotten it quite like theirs, but I've made it enough times to figure out what works best. Most recipes use coconut milk, but I felt like it made the rice too sticky and heavy, so I use coconut water. You can usually find this with other exotic fruit juices such as guava and mango and it comes in a can with a pop top like soda. 			<description>This is a fast and easy dessert to finish off a spicy meal or add an exotic twist on a classic dessert.  It's made from a mix, but no one will ever know!  I use Dr. Oetker brand dessert mix, but any brand will do, so long as the box yields 3-4 individual servings.  When I have dinenr guests, I like to make this ahead of time so I I can enjoy dinner without having to run back to the kitchen to prepare dessert.  Use whole spices so you can skim the spices out of the custard and keep the smooth creamy texture and color of the individual flans. 			<description>My daughter made this last night and had a taste and was pleasantly surprised! This is a great example of how bold Asian and Latin flavors can work well together. The orange and lime juice are in place of the rice vinegar = the acidic ingredient used in a Japanese ponzu dipping sauce. The hot, smoky chipotle chiles give it that extra kick!
